[3 recipes] Christmas Bakes

Christmas is just a few days away from now, although this year we cannot have large group gatherings due to the current situation but we still can prepared some homebake cakes or cookies to bless our friends and family members. This year we are sharing three different types of our favourite bakes and we hope there is one that suits your liking.


TIRAMISU BASQUE BURNT CHEESECAKE


Basque Cheesecake serves as a great after meal dessert and it is so easy to prepare; what you need is to whisk all the ingredients together, pour into tin and bake at high temperature. The texture of the cake is so creamy and you won't just stop at one slice. For this recipe I used some "Lotus" biscuit to make a base crust before pouring in the batter.

(Yield: 6" cake | Preparation: 10 minutes | Baking: 20-25 minutes)

Ingredients:
500g Philadelphia Cream Cheese
130g caster sugar
4 eggs, 55g each
*1 tbsp 𝐜𝐨𝐟𝐟𝐞𝐞 𝐦𝐢𝐱𝐭𝐮𝐫𝐞
1.5 tbsp Kahlua
150ml thickened cream
1 tbsp all-purpose plain or cake flour

Biscuit Base
70g unsalted butter, melted
100g lotus biscuits, finely crushed

Method:
1. Combined biscuits and melted butter together then press it tightly on top the 6” lined tin. Set aside to chill in the fridge while preparing the batter.
2. Cream soft cream cheese with sugar till smooth.
3. Beat in one egg at a time till combined.
4. Add in * 𝐜𝐨𝐟𝐟𝐞𝐞 𝐦𝐢𝐱𝐭𝐮𝐫𝐞 (dissolve 2 tsp granulated espresso coffee with 1 tbsp hot water), kahlua, flour and cream. Beat till combined.
5. Lastly sieve the batter into the prepared crust tin.
6. Bake in preheat 220 degree oven for about 20-25 minutes.



CHOCOLATE BROWNIES


Chocolate Brownies are our all-time favourite but I seldom bake them at home because it was quite sinful to enjoy with due to its ingredients. So whenever I made brownies I will try to use at least 70% dark chocolate and/or throw in couple of nuts to tone down the sweetness

(Yield: 7x7" | Preparation: 10 minutes | Baking: 30-40 minutes)

Ingredients:
100g chocolate, break into pieces
120g unsalted butter
100 caster sugar
80g dark brown sugar
2 eggs
1 tsp vanilla extract or kahlua
70g all-purpose plain flour
15g valrhona cocoa powder
50g mini chocolate chips, optional
1 tsp sea salt flakes, optional

Method:
1. Preheat oven to 180 degree. Grease and dust baking pan with cocoa powder.
2. Melt butter (diced) and chocolate (break into pieces) in a heat proof bowl using double-boiled method or microwave.
3. Whisk in combined sugars till smooth then stir in eggs & vanilla extra (or kahlua) till combined.
4. Gently fold in flour + cocoa powder + 1/2 chocolate chips.
5. Spoon batter into prepared tin, scatter remaining chocolate chips, sea salt flakes and/or lotus biscuit.
6. Bake for about 30-40 mins depend on the size and thickness or till a skewer inserted and comes out clean.

Notes:
- I used 50g each of dark and milk chocolate - you can use 100g 70% dark chocolate to cut down the sweetness
- walnut or hazelnut can be used instead of chocolate chips
- should stop baking at 35 mins for a more fudgy texture .


CHRISTMAS MIXED FRUIT CAKE


Mixed Fruit Cake is a "must-have" in our Christmas bake list. But instead of the baking the traditional type we often goes for the quick and easier version which some sort resemble pound cake texture. This year we tried another hassle free recipe and yet hassle free using #onebowl method by whisking everything together (in less than 5 minutes), mixed in soaked mixed fruits and bake.

(Yield: 8x8" | Preparation: 10 minutes | Baking: 50 minutes)

Ingredients:
200g self-raising flour
50g ground almond
150g dark brown sugar
50g caster sugar
225g unsalted butter
4 eggs, 55g each
3 tbsps soaked mixed fruit liquor
2 tbsp of candied citrus peel, optional
zest of 1 lemon

150-180g dried mixed fruits
100ml of Rum

Method:
1. Soak dried mixed fruits with your choice of liquor for at least a day, stirring a few times in between.
2. In a large mixing bowl add in all the dry ingredients then make a well in the center.
3. Add soft butter, eggs, lemon zest and liquor then whisk them together for 2-3 minutes till combined.
4. Stir in mixed fruits (drained well) then transfer batter to a greased and lined 8” square tin.
5. Bake in preheated 160 degree oven for 40-50 minutes or until a skewer inserted in the center and comes out clean.
6. Remove from oven and generously brush the top with extra mixed fruits liquor.

Notes:
- self-raising flour can be replaced with all-purposes plain flour for a more compact texture
- you can get dried mixed fruits in supermarkets or baking store or mix and match your own with choice of nuts
- I added some dried yuzu peel into the cake too
- liquor choice can be RUM or Cointreau
- liquor can be replaced with orange juice
