I have 2 different sizes of HCP (red and brown) you can use either one to cook those recipes shared here as it doesn't really matter which pan to be used. You have to be patient when cooking this as you need to stir and wait for the fishes to turn golden brown and it will be crispy after sometimes. It takes 10 - 15 minutes depending on the size of the anchovies and the heat used.
