Nested Easter

Today is exactly 1 more week to Easter Sunday. Christians celebrate Easter Sunday because they believed Jesus rose from death. The resurrection of Jesus Christ is one of the fundamental principles and beliefs of Christianity and they celebrate Easter Sunday because they believe, Jesus died for their sin on the Cross-on Good Friday, buried and rose from death on Sunday.

Bento #9 - Bearish Bread

This morning, I made this Bearish Bread School Tea-Break Bento for Reyon. As I was kind of in a rush, I just made a simple and quick one as he requested bear shape bread. Luckily I have pre-cut the bread shape bread on the night before, so in the morning, I just sandwich the bread with his favour Nutella and top the surface of the bread with cheese slices as the ears and nose. And lastly, I used my newly bought mini smiley craft punchers to form the features. After the bread is done, I arrange some cherry tomatoes and grapes between the spacing in order to secure the bread from moving around and also to add more colours to the meal.

Upon seeing this when getting ready for school, Reyon even gave names to the 4 bears like: papa bear, mummy bear, ah ma bear and baby bears.......according to the different features he choose.Posted by Picasa

Bento #6 - Ham & Cheese Bear Sandwiches

Today's Bento breakfast will be simple Ham and Cheese Bear serve with some fruits. My son loves this small tangerine which is sweet and juice compare to Strawberry which he finds it a bit sour.

I made these ham and cheese bear sandwiches using the new Pooh Cutter which I have bought a few months ago. This set of cutter come in two different ring mould which allows you to cut out the shape of the face as well as the tiny features. While I use the mini pooh vegetable cutter to cut the pooh head cheese that place on top of the tangerine. Posted by Picasa

Bento #5 - Buttermilk Cinnimon Pancakes

Recently, I am into Bento making especially designing for Kid's meals. After admiring some of the blogger mummy making those cute and fantastic bento for their kids, I also have the motivation to start my very own bento making series for my dear son.

Over the time, I have collected some varieties of assorted cookie cutters and bento accessories which can enable me to do simple bento. If you are interested in bento making you can actually grab some simple bento accessories from Daiso which they have 4 branches over in Singapore, or you can purchase other unique items online.

For this weekend snack bento, I use the animal shape cutter to cut out a few Teddy Bears and Hippo from the Buttermilk Pancakes slices then decorate the features with some cut-out cheese. I also made some Strawberries Honey Mint Sauce to serve with the pancake.Posted by Picasa

Peanut Butter French Toast

Since today our Sunday service had being change to a later timing, I decided to make a hearty Breakfast for the day. After eating Peanut Butter French Toast from one of the Hong Kong cafe, I decided to try out this dish using my own method. But I didn't really managed to get that puffy and crunch bread like what I had eaten in that cafe :(

So from what you seen here, it's just normal sandwich bread that I spread with Peanut Butter and pan-fry with beaten egg then serve with extra honey and butter. In order to cut that that grease effect, I serve it with some orange wedges and grapes to make it more healthy. Posted by Picasa

Danish Bread With Egg & Cheese

The texture of Danish Pastry is very similar to puff pastry's: flaky and buttery. Its main ingredients include yeast, flour, milk, and lots and lots of butter. To produce the trademark flaky texture, the dough is spread out thinly over a wide surface while generous amounts of butter is applied evenly on all areas, after which the dough is folded systematically and rolled. This tedious process is repeated several more times to achieve the flaky and buttery effect. Wow... these sounds tedious if making I am going to make this Bread at home but since I am not good at bread making, I decided to get a loaf of Danish Bread from the bakery instead :pPosted by Picasa


So for today's breakfast, we will have Danish Bread with Egg & Cheese. I just love the crispy and buttery fragrant of the bread when toasted..... it's so yummy no matter what you eat it with.... :)

Ingredients: (serves 2)
4 Slices of Danish Bread
2 Slices of Sandwich Cheese
2 Small/Medium Egg
2 Slices of Ham, optional

Methods:
1. Use a medium size cookie cutter to cut out a shape on two slices of bread and set aside.
2. Place 1 piece of bread on a square piece of foil which is slightly bigger than the bread so that you can wrap the 4 corners up when toasting.
3. Place the cheese and ham(if using) on the bread and top with another bread that is with a cut-out.
4. Crack the egg in a small bowl then slowly spoon it into the bread opening.
5. Next wrapped up the 4 corners of the bread and toast it in the oven toaster for about 5 - 8 minutes depend on how well you want the egg to be done.
6. When done, remove the toasted bread onto a serving plate and sprinkler some dried parsley and pepper then serve it with extra fruits or tomato if desire.

Notes:
a) You can use any kind of bread towards your liking or in your pantry.
b) Try to choose those thicker bread if not, you will need 3 slices so that the egg white will not overflow.

Winnie The Pooh English Breakfast

How will you react if you are serve with this Set of Assorted Pooh Design Breakfast during Sunday Morning. I am sure no matter if you are an adult or kid, you will definitely be delighted to see this and it will bring smile on your face for the rest of the day. But out of this set, I am still not perfect in the Pooh Sunny Egg because I don't really know how to handle the mould well to make the egg in good shape....... :(


I made these for Reyon this morning and the 1st reaction he had when he sees this is "Wow!!!! So many Bear Bear!!!!" I used the Pooh Bread Cutter for the Toast, the Pooh Egg Ring Mould for the Sunny Egg, Pooh Cookie Cutter for the Ham and Pooh Vegetable Cutter for the Apple Slices...... too bad i can't mould the Tomato in either Pooh Slices or Shape... :)Posted by Picasa

Penang Banjoo Hotdog

I had never tested the actual version of the Banjoo Hotdog. The photo you see is from what I made based on the details that my Penang Blog Pal, Ai Yen describe as. And according to her, the actual Banjoo Hotday had a very strong and fragrant butter and onion taste and it's only wrap with cabbage rather than the extra sausage that I added in :)


This breakfast doesn't required much ingredients and you can do the cutting the night before and just get ready the omelette skin and vegetables before assemble them.

Ingredients:
100g Cabbage, thinly shredded
2 Medium Onion, thinly shredded
30 - 40g Butter
Pepper for seasoning, optional
4 Hotdog Buns

Methods:
1. Saute the Onion with butter until it's slightly soft and fragrant then add in the shredded cabbage and continue to stir-fry for a few minutes until it almost cook and dry up.
2. You can season it some black pepper to enhance the favour if you wish.
3. Dish up and set aside.

Next you can prepare the Omelette skin to wrap the filling. You can use about 3 eggs with about 50ml of chicken stock or 50ml fresh milk depend you want a sweet or savoury skin. Divide the mixture into 4 portions and fry thin layer of omelette skin to wrap the fillings, you can drizzle tomato and mayo sauce on the filling before wrapping. Sandwich the egg roll with each hotdog bun and drizzle extra tomato and mayo sauce to serve.Posted by Picasa

Note:
a) You can add even chicken strips to strip-fry with the cabbage and served as the filling or you can wrap it with extra hotdog and top with cheese. Just substitute it with whatever ingredients that you prefer.

Winnie The Pooh Breakfast Set

In order for me to make these cute little Pooh Breakfast for Reyon. I must sincerely give my Thanks for one of my dear friend Julia. I must thanks her and her husband for taking the effort to help us source for the Pooh Series Bakeware and sent them to us all the way from Japan. Reyon and I really appreciate it and your effort really bring Big and Warm smiles to this little fan of Pooh. Thank you so much, my dear friend.



If you still remember, I had a similar cutter for Hello Kitty which I used to make Kitty Breakfast as well. So this round, when I got hold of the Pooh Cutter, I also try to make something similar and it's really cute. I made both the Big Pooh Bread as well as the mini one. And Reyon love them so much, he can finished all the 4 mini pooh bread just in a few minutes...... :) Guess kids are always attracted those those cute and interesting food. Posted by Picasa

Kitty Breakfast

Found this interesting Kitty mould which I bought I without thinking twice. Because I knew I can used it for many different purpose like making cookies, bread or pancake that shapes and look like kitty which Reyon will loves it.

So after gather all the necessary ingredients for the Breakfast Sandwich, I decided to make these cute little kitty sandwiches for Breakfast. I guess no one will resists such a cute piece of bread as breakfast.



I used the cutter to cut out the bread, ham and cheese into the same shapes then assemble them together and used meat floss and nori sheet to make the details of the sandwich. When Reyon saw these for his breakfast he was really overwhelming and he even ask me to make more. I also brought some to my office for my colleagues to try and they were as delighted as Reyon. Rebecca even insists that she wanted to bring it home to show her daughters as she find it too cute to be eaten.......Posted by Picasa

Bread Fritter Stuffed With Banana & Chocolate

Saw this interesting recipe from one of the Food Magazine which I bought recently. It actually wrapped banana with chocolate with bread then deep-frying it.


To my surprised it doesn't really taste as sweet as I thought maybe because I used dark chocolate instead of milk chocolate. My son and I love the combination of banana with chocolate it's really another new way to serve bread as breakfast or afternoon tea snack. Posted by Picasa

Ingredients:
4 Slices Of White Bread
1 or 2 Banana
40g Chocolate Of Your Choice
2 Eggs, lightly beaten
1/2 Teaspoon Vanilla Essence, optional
Cornstarch for Dusting
Oil For Deep-frying

Methods:
1. Trim away sides of each sliced bread and flatten slightly with a rolling pin.
2. Peel and halve banana lengthwise to suit the size of the bread slice.
3. Roughly chop chocolate into fine pieces and set aside.
4. In a bowl, mix eggs with vanilla essence.
5. Dip each bread into egg mixture, ad place a slice of banana on one end then sprinkle some chopped chocolate on the banana.
6. Roll up the bread into a tight roll.
7. Dust with cornstarch and deep-fry till golden.
8. Drain on paper towel and cut it into half before serving.

Notes:
a) You can used any choice of bread that you prefer.
b) I used Dark Chocolate with almond.
c) You can serve the bread fritter with cut fruit or dust with some icing sugar.

Assorted Ricotta Crepes

Crepe is a thin pancake, a meal made of wheat popular throughout Europe and elsewhere. The common ingredients include flour, eggs, milk, butter and a pinch of salt. Crepes are usually of two types: sweet crepe made with wheat flour, and savory galettes made with buckwheat flour.

So for dinner, I decided to make both savory and Sweet Crepe using the Ricotta Cheese that I made. For the savory type, I wrapped honey ham with some ricotta and serve with some cherry tomato and avocado slices over some Caesar Dressing. While for the sweet dessert crepes, I used the filling with the mixture of some lemon juice, lemon rind, icing sugar, blueberries and some ricotta. Then I serve it with some melted dark chocolate and icing sugar.



Ingredients For Crepe: (make 8)
1 Cup Plain Flour
2 Medium Eggs
Pinch Of Salt
1 1/2 Cup Buttermilk/Fresh Milk
1 Tablespoon Cooking Oil/Olive Oil

Methods:
1. Lightly whisk the egg in a mixing bowl, then slowly whisk in the buttermilk till combine.
2. Add the salt and slowly add in the flour and whisk till all the flour had used all and the mixture is smooth without any dry ingredients.
3. Add in the oil and stir well.
4. Or you can blend all the ingredients in a food processor till combined.
5. Chill for at least 1 hour or you can prepare up to 1 day ahead.
6. Preheat and grease the pan, then stir the batter a while and scoop about 1/3 cup each time and swirl to fry into a thin crepe. Posted by Picasa

Stuffed Creamy Chicken & Vegetables Soup In Loaf

This is a very easy and quick to prepare meal. You can either use the it to stuff into a loaf or as a sauce for spaghetti or baked rice and it can be served in anytime of the day like breakfast or dinner.

The ingredients used can be varies from individual preference. Like you can choose any type of mushrooms like button mushroom, shiitaka mushroom or even can mushroom. You can add in celery if you prefer or change the soup base to corn, mushroom or pumpkin etc.....

For this meal, I stuffed all the cook ingredients into a pre-baked medium French loaf and serve with some extra fruits to make it more colourful and appetizing.

Ingredients:
3-4 Medium French Loaf
1/2 Chicken Breast
1/4 Broccoli
10-15 Baby Potato, cut into halves
1 Small Carrot, cut into cubes
1/2 Brown Onion, cut into small wedges
8-10 Mushroom, cut into quarter
500ml Instant Creamy Soup(2 packets or 1/2 can)
300ml Water

Methods:
1. Wash, trim and cut the chicken breast into small cubes. Marinate it with some white pepper, soy sauce and cornstarch and set aside in the fridge for at least 30 minutes.
2. Wash, peel and cut the potato, carrot, mushroom and onion into small bite size.
3. Cut the broccoli into small florets and soaked in water for about 15 minutes, rinse and blanch in hot water, rinse and set aside.
4. Prepare the instant soup(I used Campbell instant cream of mushroom and chicken) according to the cooking instruction stated.
5. Preheat a small saucepan with 1 tablespoon of olive oil, saute the chicken pieces(coat with some extra cornstarch first) until golden brown then add in the brown onion and mushroom.
6. Keep on stirring until fragrant then add in the carrot and potato and saute for 1 - 2 minutes then add in the prepared soup and bring to boil.
7. When boiled, lower the heat and simmer for 15 - 20 minutes on low heat until the potatoes and carrots are tender. (stir the soup on and off to prevent it from sticking to the pot)
8. Lastly add in the blanch broccoli florets and stir till combined. Remove the pot from the stove and sprinkle some extra pepper on top.

Assemble The Loaf:
1. Put the loaf either in the oven or toast for 1 minutes to make it abit crisp and hard.
2. Use a sharp knife to cut the top 3/4 off so that it resemble like a box with opening, then dig out all the fresh to make it hollow. Repeat for the rest of the loaf.
3. Put hollow loaves into the toaster or oven again to bake for another 3-5 minutes until crispy and harden.
4. Remove, spread a thin layer of margarine on it then scoop the chicken & vegetables soup into it and serve immediately. Posted by Picasa
