[Guest Post] Roasted Salmon with Dill

Let's welcome December!!! I am sure every year during this period of time everyone would be busy with Christmas Gifts, Bakes and most important the Christmas Feast. This year we are fortunate to celebrate early Christmas in the cold snowing weather. And during my absent from the Holidays, I would still scheduled some posts and updates through facebook fan page (HERE) whenever I could grab hold of some access. But here I have and excited news to share with you, this month I would have some “Guest Posts” from a few bloggers whom would share with us some of their delicious Christmas bakes/dishes.

This week we would have Lobster, the owner of LOBSTERPAINTS website at "http://lobsterpaints.blogspot.com/" to share with us one of her Pre-Christmas trial dish that used my favourite ingredient, "Salmon" as the main item. In the post she would also shares some tips on how to bake to "3D' presentation salmon dish together with creamy herb sauce. 



But before we head over to her blog and read more about this post, let's take a look at the ingredients for this dish which you might want to try it out during this coming festive season.

Ingredients: (Serves 4)

4x 8oz (255g) Salmon fillets
3 tbsp (45ml) fresh lemon juice
1/4 cup (50ml) fresh dill, minced
1 tsp (5ml) salt
1 tsp (5ml) fresh ground black pepper
4 tbsp (60ml) extra virgin olive oil.

Baked Prawn With Lemon & Cheese

These baked Lemon & Cheese Prawns are from the Fresh Live Prawn that we caught during our Prawning Trip last weekend at Bottle Tree Park. It is indeed an enjoyable experience on the prawning trip and most of thrilling part is I get to use these prawns for my new dish.

This is a very simple dish that most of you will be able to grab the ingredients right from your fridge at any moment. All you need are some butter, 1 lemon, 2 slices of sandwich cheese if you are run out of shredded cheese. Don't worry if you don't have Fresh live prawn, you can always get any type of prawns from the supermarket or you can even replace it with fish fillet like salmon or any white fish.

Ingredients: (serves 2)
8 Medium Size Prawn
2 Slices of Sandwich Cheese, cut into thin strips
1 Lemon, cut into thin slices
10g of Butter
2 Tablespoon of RUM or Brandy, optional

Method:
1. Wash, trim and slit the back of the prawn into half, becareful not to cut too deep or else the prawn will break into halves.
2. Cut the butter into small cubes and stuff it into cuts of the prawn.
3. Arrange some lemon slices in a baking dish (or you can use disposal foil baking tray), place the stuffs prawn on top of the lemon.
4. Top the shredded cheese on top of the prawns, drizzle the liquor evenly on top of the prawn.
5. If you want that extra citric fragrance on the baked prawn, you can top with some extra strips of lemon rind.
6. Bake in the toaster oven for about 10 - 15 minutes or until the prawn is cook through.
6. You can serve this dish directly from the baking tray or you can re-arrange them in serving plate and serve as finger food for party.


Note:
~ Above is the sample photo of the toaster oven which you might have it in kitchen, it is usually used to reheat bread, pizza or small items.

The gravy of this dish is so fragrance and sweet due to the sweetness that comes from the fresh prawn. Look at the prawns, some of it still comes with prawn roes. The combination of Lemon, Cheese, Prawn and Liquor will definitely stimulate your tastebuds to another level of food tasting. Posted by Picasa

Baked Salmon With Lemon Butter Sauce


Get the inspiration of this dish from one of my friend's blog where she often prepares salmon dishes for her kids. This simple and yet delicious dish is super easy to prepare; you just need to rinse and pat dry the fillet then lightly season it with some olive oil, salt and black pepper. After which sent it into the oven or toaster and bake till done then drizzle with some lemon butter sauce or wasabe.

Baked Seabass Fillet With Hazelnuts

I always wanted to try some Italian Cuisine but as the price was rather steep when compared to our Asian dishes due to its ingredients. Recently I try out this dish from an Italian Cookbooks which I loan from the regional library. It is the most simplest recipe which requires a few command ingredients that are ready in most pantry. The whole preparation plus cooking takes about 30 minutes and we we gets to enjoy yummy Italian style seafood dish at home.

Grill Mushroom With Mixed Vegetables & Tuna Mayo Tomatoes

Always wanted to try grilling some veggie so I decided to test out with the beautiful tomato and mushroom which I bought earlier. To begin with dinner, I turned the veggie into two starter dishes; Grill Portobello With Mixed Vegetables and Stuffed Tomato With Tuna Mayonnaise.
