Tagged!!!

I had being tagged with - Rockin' Girl Blogger award from Evan @ bosscacafez. Thank for tagging me and sorry for taking such a long time to do this write up :)



I am just going to pass this award Susan and Tona who is a blogger friend as well as friend whom we share our thoughts on family and kid issue.



1. Susan- my daily MSN friend, we can click very well, and we also chat via MSN on and off during our free time or break. She is a very kind hearted and strong lady that I can learn some tips on handling children from her. And she also lends a listen ear to me when I am trouble. Thanks pal!

2. Tona- i came to know her from a blog enquire via emails. And she had being there when I am having some bad times and she also helps to cheer me up and advise on me. She is now a mum to a very handsome and cute little baby which you can see more on her blog. She had spent more of her time taking great care of her baby and she also whipped up a lot of delicious and fabulous food for her little darling which i think it's good to share with those mum who runs out of ideas to cook for kids. Great work Tona... :)

Strawberry Vs Pumpkin Cupcakes

Made these mini fruits, nuts and vegetables cupcakes for my new colleagues and family. I had always wanted to try my bakes using fresh fruits and vegetables. So for these cupcakes I had used pumpkin, pistachio nut, strawberry and promangrante.

This is the Strawberry & Pistachio Cupcake that is topped with Rose Scented Cream Cheese and arranged with fresh Strawberry and Promangrante Seeds to enhance it's colour and taste.


Freshly chopped strawberry cubes, pistachio nuts and strawberry milk are added to the batter to enhance the texture and taste of the cake.


This is the inner cut out of the cupcake where you can see the added of fresh strawberry and nuts. It's great to serve this with English Tea for either Morning or Afternoon Tea-break.Posted by Picasa

These are my special Pumpkin & Chocolate Cupcake that are topped with Pumpkin Puree Cream Cheese and arranged with extra roasted Pumpkin Seeds.

Freshly grated Australia Pumpkin, with added chopped pistachio nuts and spices to the batter to enhance the texture and fragrance of the cake.

This is the inner cut out of the cupcake where you can see the shredded pumpkins and chopped pistachio nuts. For your surprised, I had added a cube of 70% Dark Chocolate at for each cupcakes to enhance the texture of the cake even more.Posted by Picasa

Lemon Grass & Honey Garlic Chicken

Made this simple dish and delicious chicken dish using instant LEE KUM KEE's Honey Garlic Sauce for today's dinner. I had marinated the chicken with some ginger juice, finely chopped lemon grass and sliced shallot.

Ingredients:
1 Chicken Drumstick
2 Stalk of Lemon Grass, finely chopped
3-4 Shallot, thinly sliced
1 Packet of Lee Kum Kee's Honey Garlic sauce

Methods:
1. Wash and pat dry the chicken drumstick then marinate it with some light soya sauce, sesame oil and corn flour for at least 1 hour in the fridge.
2. In a non stick pan or pot, add some oil and saute the lemon grass and shallot for a few minutes until fragrant then add in the chicken drumstick and pan-fry on low heat until almost done.
3. When the chicken is almost cooked or cooked, pour in the instant honey garlic sauce and add in some water to simmer it over low heat.
4. When the chicken is cooked through, remove it from pan and place it on serving plate and top with extra garnish like spring onion and chilies.

Note:
a) You can used chicken pieces or chicken wings for this dish.

Orange Marmalade Roasted Chicken

This Orange Marmalade Roasted Chicken is indeed a great and tasty finger food or main course dish if you will to serve it with some salad, rice or baked potatoes to make it more of a complete meal. I modify this recipe from one of my best friend Pamy's Website.


I served these baked chicken wings with a beaded of Homemade Potato Chips and Pork Ribs Watercress Soup for our dinner today. Reyon enjoys these chicken wings as it's really taste good which is like what Pamy mention, it's better than BBQ chicken. But instead of baking it for such a long hours, I do a short cut by simmer the chicken wings and marinate sauce under low heat for about 10 minutes until the chicken is cooked, then I put it in toaster oven and baked it for about 20 minutes or less until the sauce is caramelised and the chicken wings are crispy and nice.Posted by Picasa
Ingredients:
3 Medium Chicken Wings
1.5 Tablespoons Of Light Soy Sauce
1 Teaspoon Of Dark Soy Sauce
3 Tablespoons Of Orange Marmalade
1 Tablespoon Of Lemon Juice
1 Grated Lemon Rinds
3 Cloves Of Garlic

Methods:
1. Wash and pat dry the chicken wings, then mixed all the ingredients together except for the garlic cloves and marinate the chicken wings for about 15 minutes or more in the fridge.
2. Prepare a non-stick pan and put in the garlic cloves and saute on very low heat until a bit fragrant then pour in the marinated chicken wings and sauce.
3. Cover and simmer for about 7 - 10 minutes(turn occasionally to coat the sauce) until the chicken is almost done.
4. Transfer the chicken to a baking tray or aluminum foil parcel and baked in the oven toaster for about 15 - 20 minutes until brown and crispy.

Notes:
a) Before putting into the oven toaster, you can spread some extra Orange Marmalade on top the chicken and baked accordingly to enhance the flavour.
b) You can add more dark soy sauce if you prefer to have a darker colour for your chicken wings.
