[Recipe + Video] Winnie The Pooh Breakfast Set - 小熊维尼煎饼早餐

Hello everyone! How's your weekend? Today I would like to wish all mothers and mothers-to-be a Happy Mother's Day filled with loves, happiness and good health. With the opening of Pompompurin and Hello Kitty Cafe in Singapore, I wish there is also a Winnie The Pooh Cafe too. So to make my dream come true, the boy helps to prepare the above Pooh Pancake Breakfast as a Mother's Day treat to show his love for me.

Above are some of my Winnie The Pooh collection which I bought over the years since my boy was a toddler. As we both are great fans of pooh we had items ranging from clothing, toys, kitchen utensils and etc. Even now when he is 12 years old sometime he still brings his pooh lunchbox to school too.

WINNIE THE POOH BREAKFAST SET
(with pancake, scrambled egg & ham)

[Mother's Day Treat] Winnie The Pooh Breakfast Set

(Yield: 10-12 pieces | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
150g (1 sachet) Morinaga Pancake Premix
1 medium egg (55g)
130ml fresh milk
1/2 teaspoon vanilla extract
cooking oil or spray to grease

Method:
1. Whisk egg and milk together in a mixing bowl or jug till combined. Stir in 1 sachet of Morinaga pancake premix until mixture resemble a smooth cake batter. Set aside for 5 minutes.

2. Lightly grease and preheat pooh pancake pan for 30 seconds over low heat before pouring batter into the pan till half full.

3. Cook pancake over low heat for about 2 minutes or until bubbles appear on the surface and batter almost dry up (refer to the photo above).

4. Using a toothpick, slowly loosen the sides of the pancake (if using the pooh pancake pan) and flip it over to cook the other side for another 1 minute.

*Note: I transferred mine over to cook on another non-stick pan so that I could continue working on the remaining batter on the pooh pan.

5. You can make about 12 pancakes depending on the thickness with the above recipe. Serve them warm with butter and maple syrup or you can plate them into cafe-style breakfast set with scrambled egg, ham and etc.

Scrambled egg is one of my favourite egg dish because it is easy to prepare and you can also add in other ingredients such as sliced mushroom, diced capsicum, ham and etc instead of the usual one.

(Yield: 1 | Preparation: 1 minutes | Cooking: 2 minutes)

Ingredients:
1 Large Egg
1 Tablespoon Fresh Milk / Cooking Cream
10g Unsalted Butter

Method:
1. Whisk egg together with milk till combined.

2. Add butter into a small frying pan over low heat, when it starts to melt swirl in beaten egg and cook for 10 seconds.

3. Using a spoon or spatula, giving the egg mixture a few stirs and cook till it almost set.

4. Remove from heat (as it will continue to cook) to serving plate and top it with some freshly ground pepper and serve immediately.

To go with the breakfast set, we also prepared some fresh fruit cutouts using yellow watermelon which resemble the colour of Pooh. The boy also suggested to add on facial feature using melon seeds and skin to make it looks more interesting.

A clip on how to prepare Winnie The Pooh Pancakes.

[Mother's Day Treat] Winnie The Pooh Breakfast Set
No worry if you cannot find the pancake mix which we used above because you can always replace it with any other basic pancake recipes or take reference to the one shown below. The trick to obtain a fluffy pancake depend on the batter so do not over mix it. Some might even like to separate egg yolk and white for a fluffy batter, replace milk with buttermilk so it all goes on your preference and availability of ingredients in the pantry.

(Yield: 12 pieces | Preparation: 10 minutes | Cooking: 20 minutes)

Basic Pancake Batter
Ingredients:
200g cake flour
65g caster sugar
2 teaspoons baking powder
140ml fresh milk
1 egg (55g)
1 teaspoon vanilla extract
3 tablespoons melted butter or corn oil
pinch of salt

Method:
1. Whisk flour, sugar, baking powder and salt in a medium bowl till well mixed.

2. In another bowl, whisk egg and milk using a hand whisk till combined.

3. Next slowly stir liquid mixture into flour mixture until you no longer see clumps of flour (it is okay if the batter has small lumps).

4. Lastly add in melted butter or oil and give it a few stirs till combined. Stand aside for 5 minutes.

5. Using a grease large griddle or non-stick pan (or pooh pancake pan) over low heat, spoon batter into pan (gently spread the batter) and cook for 1-2 minutes (depend on the thickness) until bubbles appears.

6. Flip over to the other side and continue to cook for another minute. Remove and keep warm while working on the rest of the batter.

Enjoy this special day, take a good rest and pamper yourself with some good treat and family time.
