Today I will be sharing one of our family favourite recipe which often known as ABC Soup. I have being boiling this soup at least one a week for more than 10 years since my boy was two because he often request to have it with Alphabet pasta or porridge.
This soup consists a number of root vegetables and the name ABC might be the nutrition values of the vegetable such as; Vitamin A for Carrot, Vitamin B for Potato and Vitamin C for Onion.
Watch how we prepared this ABC Soup and serve it with Macaroni.
Other than using ABC Soup for macaroni or noodle, I also often use it to cook with porridge/congee. My method below might be different from yours since everyone has their own style plus the type of grains used might sometime affect the amount of liquid and texture too.
Feel free to try out different combination of ingredients to make your own ABC soup or porridge for your family. Remember cooking is all about your "love" for the ones who care for.
ABC SOUP WITH MACARONI

(Yield: 4 | Preparation: 10 minutes | Cooking: 25 minutes)
Ingredients:
500g spare ribs
2 medium brown onion
1 or 2 pearl sweet corn
5 medium potato
2 tomato, seeds removed
1 carrot
150g pumpkin
couple of red dates, option
2-Litres of hot water
macaroni or noodle of your choice
1 chicken stock cube or salt, optional
Method:
1. Wash and trim spareribs then blanch in boiling water for about 2 minutes. Remove and rinse with water then set aside
2. Peel and cut potato, carrot, sweetcorn and pumpkin into chunks.
3. Peel onion and remove seeds from tomato then cut them into halved.
4. In a big stock pot add about 1 teaspoon of oil, saute onion and spareribs for a minute before adding carrot and potato. Give it a quick stir, cover and cook for another minute then add in the rest of the ingredients (except pumpkin).
5. Next add in hot water and bring it to boil then lower the heat and simmer for 15 minutes. Add pumpkin and continue to cook for another 5 minutes.
6. Lastly season to taste with salt. Turn off the heat and stand for 10 minutes while preparing the macaroni or noodle and serve them together.
7. Bring a pot of salted water to boil then cook macaroni according to packet instructions. Rinse and drain well then add into ABC soup and serve.

ABC蔬菜汤
(分量: 4人份 | 准备: 10分钟 | 烹调时间: 25分钟)
材料:
500克排骨
2粒洋葱
1条玉米
5粒马鈴薯
2粒番茄
1条红箩卜
150克金瓜
一些红枣
2公升热水
通心粉或面食物
鸡精块或盐
做法:
1. 排骨洗净以滚水煮两三分钟,捞起再过冷水,备用。
2. 马鈴薯, 红箩卜,玉米和金瓜洗净然后削皮,切块,备用。
3. 洋葱剥皮切块,番茄取出种子切块。
3. 预热一个大汤锅,倒入一小茶匙的油然后加入洋葱和排骨爆香再放马鈴薯和红箩卜用小火翻抄一分钟再加入其余的材料(除了金瓜)。
4. 接着倒入烧水搅拌均匀。当水再度滚起就转为小火煲大约15分钟才放金瓜煮5分钟。
5. 最后下盐调味,关火焖5-10分钟即可享用或加入准备好的面里。 。
Note:
~ 你也可以用鸡腿来代替排骨。
~ 如果你喜欢浓稠的汤就把水份减少用小火慢慢煲30-40分钟。
ABC SOUP WITH PORRIDGE
Other than using ABC Soup for macaroni or noodle, I also often use it to cook with porridge/congee. My method below might be different from yours since everyone has their own style plus the type of grains used might sometime affect the amount of liquid and texture too.
(Yield: 4 | Preparation: 10 minutes | Cooking: 20 minutes)
Ingredients:
1 cup of short/long grain rice
150g pumpkin, skin removed and cut into 1" cube
1 bunch of spring onion
ABC Soup Stock (refer to the above)
Method:
1. Rinse and soak the grains for at least 30 minutes before cooking.
2. Transfer prepared soup stock, spare ribs and rinsed rice into a large pot then bring it to boil. When water starts boiling add spring onion, low the heat then cover and simmer for 20 minutes (stir the rice twice to prevent it from sticking to the bottom).
3. Next add pumpkin cubes and continue to cook for another 10 minutes until the grains are fluffy and mixture looks creamy (you can add in more stock if the porridge starts to dry up).
4. Turn off the flame, remove the spring onion then add in the potato, sweetcorn and carrot from the stock if your want.
5. Season the porridge with salt and serve with chopped scallions or coriander and some sides like luncheon meat, vegetables, omelette and etc (optional).
ALTERNATIVELY
(Yield: 4 | Preparation: 10 mins | Cooking: 30 mins)
Ingredients:
1 cup of short/long grain rice, soak for 30 minutes
300g spareribs
2 potato
1 sweetcorn
1 medium carrot
1 large dried scallop or oyster
1 bunch of spring onion
2-Litres hot water
Method:
1. Wash and trim spareribs then blanch in boiling water for about 2 minutes. Remove and rinse with water, set aside
2. Peel and cut potato, carrot, sweetcorn and onion into chunks.
3. In a large pot, bring water to boil then add in all the ingredients. When water starts boiling add spring onion, low the heat then cover and simmer for 30 minutes until the grains are fluffy and mixture looks creamy.
- stir the rice twice to prevent it from sticking to the bottom;
- add in more stock/hot water if the porridge starts to dry up
4. Turn off the flame, remove the spring onion and season with salt.
5. Serve porridge on its own with chopped scallions or you can prepared extra sides like luncheon meat, vegetables, omelette and etc (optional).
