Oatmeal Coconut Pancake - 燕麦椰奶煎饼

A hearty breakfast makes it a perfect day to starts with and Pancake is definitely a classic breakfast option. Here we made Oatmeal Coconut Pancake using oatmeal flour and the new Ayam Brand Super Light Coconut Milk which contains only "5% Fat". On side I also prepared some berries fruit sauce with the leftover coconut milk and sweeten it honey to serve with the pancakes.



OATMEAL COCONUT PANCAKE
(燕麦椰奶煎饼)


To make your own oatmeal flour at home you can just process rolled oats in a blender or food processor until it resemble flour substance. But for a fluffier texture you can always substitute 1/2 to 2/3 of the oatmeal flour with all-purpose flour.

(Yield: 2 servings | Preparation: 20 minutes | Cooking: 10 minutes)

Ingredients:
150g oatmeal flour
120ml Super Light coconut milk
2 egg yolks
2 egg whites
1 tbsp chai seeds
1 tsp baking powder
pinch of salt

Fruit Sauce
1/2 cup of berries of your choice
150ml of coconut milk 1 tbsp of honey

Method:
1. In a mixing bowl mix in oatmeal flour, baking powder, salt & chai seeds.

2. Next whisk egg yolks for a few seconds then top with 120ml of coconut milk.

3. Stir egg liquid into the flour mixture and mix well.

4. Whisk egg whites till soft peak then fold into flour mixture in 2-3 batches. Lastly stir in some blueberries.

5. In a non-stick pan, grease with butter or coconut oil then ladder 1/4 cup batter into the pan and cook over Low heat till browned on both sides.

6. Repeat till the batter till it finished then serve pancakes with fruit sauce.

For Fruit Sauce:
1. Cook berries on Low heat for 30 seconds before adding coconut milk.

2. Simmer for a minute or two, remove pan from heat and stir in honey till dissolve

丰盛的早餐代表美好一天的开始,而松饼(Pancake)绝对是经典的早餐选择。这里我们用燕麦粉,椰奶和鸡蛋来调面糊,煎好之后搭配用椰奶做的水果酱。

(分量: 1000 毫升   | 准备: 20 分钟   |  烹煮时间: 10 分钟)

材料:
150 克燕麦粉
120 毫升椰奶
2 个蛋黄
2 个蛋清
1 汤匙奇亞籽
1 茶匙发粉
盐少许

水果酱
1/2 杯蓝莓+草莓
150毫升椰奶
1 汤匙蜂蜜

做法:
1. 把燕麦粉,发粉,盐和奇亞籽混合在一个大碗里。备用。

2. 蛋黄搅拌均已然后加入120毫升椰奶。

3. 将蛋液和椰奶拌入燕麦粉碗里。

4. 接着用手拌器把蛋清打至有光泽和软性发泡,然后分3次拌入面粉里最后才加一些蓝莓。

5. 在不粘锅中抹少许油加热后倒入1/4杯面糊,用小火煎至两边变成金黄色。

6. 重复直到面糊用完。煎饼摆盘后再淋上适量的水果酱。

水果酱:
1. 小锅里用小火把水果煮30秒才加入椰奶。

2. 之后再煮一两分钟,熄火把裹移开才拌入蜂蜜搅拌至溶解。
