[No Churn] Coffee Ice Cream

It has being more than two years since my last Eggless Dark Chocolate Ice Cream post till now. And recently I was motivated by some of my Instagram friends homemade ice cream posts which I decide to make this super easy "No-Churn Coffee Ice Cream" from Nigella Lawson site which you can easily whipped it up at home in less than 10 minutes.

In her website there are a few no-churn ice cream recipes and I have selected our favourite Coffee Ice Cream that used espresso powder and Kahlúa liqueur (instead of espresso liqueur mentioned in the original recipe) which satisfy the craving of coffee lovers like us.

I love this recipe mainly because it is eggless plus you don't even need an ice cream maker. What you need to do is whisk up everything in a mixing bowl using electric beater and freeze it in air tight container. For my case, I used my Bosch ErgoMixx Hand Blender where I pour all the ingredients into the tall beaker and blend it till smooth.

Sunday Brunch @ LIME, PARKROYAL on Pickering

Lime Restaurant is situated on the street level of the iconic PARKROYAL on Pickering Hotel which launched earlier this year. And with their long-awaited Sunday Buffet Brunch launching last month (June 2013), it's International buffet has a range of appealing dishes and desserts for guests to indulge with.

Every Sunday from 12.00pm to 3.00pm, Lime will be lining up array of international delights including Seafood on Ice, Wok Station, Mushroom Risotto and tempting treats such as a Foie Gras Terrine, European Cheeses (12 different varieties) Cakes and Pastries. 

Furthermore with a choice of Champagne Brunch Buffet (SG$128++), guest(s) would be able to enjoy free flow Piper Heidsieck Champagne and House Wine too.

To begin we start with the Salad Station which featured both Western and Asian delights such as Cold Cut Ham, Seared Tuna, Thai-style Salad and etc. We also tried both soup of the day and we preferred the Mushroom Soup more than Lobster Bisque because of it smoothing broth which is not too thick, salty nor creamy and it leaves the palate with a fragrant mushroom aftertaste.

If you are a fans of foie gras remember to head towards the Western Cook Station where the chef will take your order and prepare it right on the spot. We love the fruity taste of the passion fruit sauce and soft pear which blends well with the quick seared foie gras that has a crispy outer layer and yet moist and almost melt in your mouth texture combination.

I love risotto especially those cooked with seafood or mushroom. Overall the risotto from Lime taste quite decent with it's smooth and creamy texture that pairs with a slice of the Jamon Iberico Ham. But we felt the grains were a bit hard which affect the overall texture of the dish so if the grains would slightly softer, it would have definitely perfect this dish.

Quite disappointed with their Noreweigan Benedict as the poached egg yolk was way too overcooked rather than runny and I would preferred more Rosti at the base too.

Another highlight at Lime is from time to time, friendly waiters will move from table to table offering freshly baked pizza with assortment of toppings such as Hawaiian, Seafood and etc.

Lime’s carving station has a wide selection of roasted meats including US Prime Rib, Guinea Fowl and Rack of Lamb. Other than the mentioned we tried the Grilled Vegetables, Potato Gratin and Red Snapper with Shallot Sauce during our visit last Sunday. And I love their Grilled Asparagus which is a great side dish for my Herbal Crusted Lamb Rack.

There is a Seafood On Ice Station for seafood lovers featuring Tiger Prawns, Marine Lobster, Clams, Mussels, Pacific Oysters, Assorted Sushi and Sashimi. Since I am not in mood with sushi nor seafood except some Oysters, I did not venture much into the seafood station.

Lime's Aisan Cooked Food Station has captured the heart of both my mum and I with their Singapore Laska which has a fragrant gravy that is not too spicy or over power in taste. Their Stir-fried Chicken with Curry Leaves is also another delicious Asian dish as each chunk of the fried chicken is coated with a layer of their special sweet and sticky sauce, making it a great dish to go with rice .

Another highlight for the Asian Cooked Food Station is their mixed and matched Chef Wok Creation where you could pick up your choices of ingredients and the station chef will cook the dish base on your selection of sauce from Sambel Chilli, Kung Po Sauce or Ginger and Spring Onion. We simply love their spicy Sambel Chilli Sauce. It's Shiok! (meaning delicious)

It's our first time seeing Green Tea Chocolate Fountain as compared to the usual Dark/Milk Chocolate Fountain.

Cheese loves would be able to savor 12 different types of cheese such as Brie, Comte and etc together with a choice of some dried fruits like apricot and assorted nuts. These go well with a glass of sparkling champagne for a relaxing Sunday afternoon.

Instead of having champagne with cheese or nuts, I choose to pair it with my beloved macarons.

After all the savory dishes, it's time to indulge in some sweet treats. The dessert station at Lime has quite a wide range of cakes, tartlets, tarts and pastries to satisfy ones craving. Moreover you could also get a cup of coffee (latte, cappuccino and etc) or premium tea to go with the dessert.

Personally from their dessert range, we preferred the Fig Tart, Cream Brulee, Passion Mango Mousse, Opera and Macarons. On top of these, they also have Pandan Kueh Lips, Raspberry and Mango pate de fruit, Triple Chocolate Ice Cream and Assorted Fruit Sorbets which we did not try (too full for those).

Parents World Junior Chef Workshop And Competition

Time flies, about two years back in 2011 I was engaged by Parents World Magazine for their Great Kids Cookout event to in-charge the Pizza and Bento workshop which you could read about it here. And this year, we are back with them at ARC (Alexandra) with more exciting workshop for your kids from 22 - 30 June 2013.

There are two work stations each handle by Chef Catherina Hosoi and Ellena Guan (me) for this Junior Chef Workshop such as:- Soup and Dessert (by Chef Catherina Hosoi), Bento and Pizza Toast (by Ellena Guan). To register for the workshop, simple just spent a minimum of S$30.00 at ARC or VivoCity from 31 May to 30 June. Below are some samples of the pizza toast and bento which will be taught during the workshop.

Creative Pizza Toast that will brighten up your kid's day as well as boost up their appetite for fussy eater with bits and pieces of the colourful ingredients in it.

Instead of the usual "rice" Onigiri, in this workshop we replace rice with another daily staple food like bread for a change and it's also easier for kids to handle too. I am sure the kids will be thrilled to receive a colourful breakfast/lunch bento set like this.

So do drop by ARC this school holiday from 22 - 30th June and pick up your kid's desire workshop to hands-on as well as bring back some yummy food to feast on. See you there!

On top of the Junior Chef Workshop mentioned above, VivoCity will be collaborating with Parents World Magazine to organise the ‘Junior Chef’ Competition 2013' for children aged 5 to 12 years old. This competition is categorised into two age-groups such as:-

5 -  8 Years Old
Cake Decoration Competition where younger kids get to demonstrate their budding creativity through designing their own Cake.

9 - 12 Years Old
Whereas for the older kids, they will need to whip up a mouth-watering sweet delight for the Dessert Making category.

Winners for both categories will walk away with a range of attractive prizes! So do sign up your kid of this Junior Chef Competition to showcase their interest in cake designing and cooking.

2013 Chinese New Year Family Gatherings

Time flies, the 15 days of Chinese Lunar New Year(CNY) celebration had already ended last Sunday. During those two weeks, we had quite a few house visiting and food gatherings among relatives and friends. As usual every household would either cook or cater food for the gathering where everyone enjoys the food and bonding time.

Our 2013 Lunar New Year Reunion Dinners

Today is the 4th day of Chinese Lunar New Year and it seems like just last Wednesday we were all busy preparing to welcome new year and yet now it's already 3 days (out of the 15 days) past the new year celebrations. I find this year seems to be quieter as compared to previous years also you don't really find crowds around doing house visiting and etc. Perhaps due to the long weekends or raining weathers, most of the people rather choose to stay dry in doors or go for a short holiday trip too.

The Boxing Crab Seafood Restaurant At Sentosa, Underwater World

A week ago, together with couple of friends we visited The Boxing Crab Seafood Restaurant which is launched by Food Junction.  Nestled in the beautifully quaint stretch of Sentosa, the 250 seater (with both indoor and alfresco) restaurant overlooks the panoramic sea where patrons would be exhilarated by the sights of traversing cruise liners and ferries while dinning. On top of it, there are two VIP rooms which can accommodate up to 20 persons per room for Birthday or office functions too.

If you are looking for dining experience which is away from the hustle and bustle city life, perhaps the eclectic menu  (comes with mud crabs, swimmer crabs, flower crabs, prawns, garoupa, scallop and etc) from Boxing Crab plus affordable prices and variety of culinary styles (Chinese, Balinese or Western) would be a great consideration.

Other than serving seafood or ala carte dishes, The Boxing Crab also cater Quick Lunch Set features dishes such as Roasted Sirloin, Lamb Korma, Grilled Portobello Mushrooms, Scramble Egg Croissant and etc.

During teatime, the restaurant also offers Afternoon Tea Menu such as: Waffles, Pancakes and Crepes with toppings of fresh fruits and single scoop of ice cream of your choice. Or you could make your choice from the Ala Carte afternoon snacks like pies, tarts, sandwiches, cakes and etc to go with a cup of premium coffee or tea.

The restaurant also has a FULL page of Beverage choices ranging from Smoothie, Fruit Juice, Soft Drinks, Coffee/Tea to Beer, Champagne, Wine and etc. For something different, we tried some of their smoothies which are:-

~ Energy Enhancer : Consists of juices from Orange, Pineapple, Lemon, Kiwifruit, Passionfruit together with Yogurt, Ginseng and Honey

~ Stimulator : Consists of juices from Orange, Pineapple, Lemon, Kiwifruit, together with Ginger and Honey

~ Detox : Consists of juices from Apple, Celery, Beetroot and Ginseng.

My choice was Stimulator which blends well with the choice of fruits used leaving you with a cross between sweet and sour after taste. And when sipping the you could also taste bits of ginger which spicy up the taste too. All smoothies are at S$7.00 per serving.

For appetizer, we had Otah Otah Cigar (S$12.00) which was crispy on the outside and piping hot with otah filling inside. The otah within is not too spicy or dry and overall the "spring-roll" like finger food was also not too oily to taste.

{Must Try}The Steamed Bamboo Clam with Minced Garlic (market price) was steamed to perfection with the flavor of the meat being locked in with a small serving of vermicelli in dark soy sauce. Furthermore the bamboo clam meat is well-cooked and tender with some amount of fragrant minced garlic on it leaving you asking for more.

For the main courses we started with the Charcoal Grilled Snapper (S$28.00) which accompany with 3 different types of dipping chilli sauce .  The fish used is very fresh and it is slightly charred on the outer skin with chunks of white meats underneath but the only setback was certain parts of it tends to be a bit dry and tough. Other than fish, you could also choose from their seafood range such as Prawn, Squid or Clam. 

{Must Try} I have tried Salted Egg Crab With Pumpkin from other seafood restaurants before but this Braised Claypot Crab with Superior Broth and Pumpkin (market price) from Boxing Crab was indeed a hit and something special that you should try.  The unique flavor of mixing superior broth with pumpkin gives it a rich flavour with thick golden sauce that compliments well with the fresh steamed crab. Almost all of us love the pumpkin sauce which we can't stop sipping on it.

{Must Try} We also tried Caramelized Spicy Crab (market price) which is a good choice for those who prefer something non-spicy as compared to the usual Black Pepper Crab but yet filled with similar wok-hei flavour and flavourable caramelized taste.  The first taste of the dish reminds me of another hawker food that is the "Black Fried Carrot Cake" because both of these two dishes have similar after taste.

For tables with "Crab" orders, there would be a set of "surgery tools" (shown above) which consists of Gloves and Utensils to make picking the crab meat easier. If you want to keep clean while eating those crabs, there are also Aprons available for your used.

Overall their crabs are indeed very fresh with firm, thick  and juicy flesh which is naturally sweet and flavoursome with the choices of cooking methods.

Seafood Mee Goreng (S$25.00, medium) was delicious with the right amount of spiciness and flavour together with the combination of fresh seafood which is heavenly enough to whet everyone's appetites.



DESSERT


After the meal, if you still have room for dessert you could pick a choice from their dessert column where they served both Asian and Western desserts such as cakes, waffles, ice-cream, yam paste with gingko nuts, warm almond cream and even pan-fried water chestnut cakes and etc.

Below are a few dessert items that we have tried and most of us prefer the Tropic Pineapple Sorbet which is an interesting dessert that combined both sight and taste satisfaction. Whereas if you have sweet tooth, go for either Meringue with Chantilly Cream or Catalana Cream with Caramelized Sugar.
