Homecook Dinner To Support Food Revolution Day, 19 May 2012


Today, 19 May 2012 marks Food Revolution Day where the main objective of Jamie Oliver’s Food Revolution is to connect with as many people and businesses as possible around the world to educate them about food habits, sources and a healthier lifestyle. So as food lover and mother of one I hope to do my part to support this event by preparing some homecook dishes that are made with "real food" (which means no boxed or processed foods are allowed).

Although not everyone can be a chef but it is always possible to cook up something easy and yet healthy for the family as long as you are willing to spend some extra time in the kitchen. Below are two simple recipes of our homecook dishes shown above which you might be interested to try it out.


STEAMED RED GROUPER


We love steamed fish and it is always one of the repeated dishes in our weekly menu planning list. Fish contains protein with fewer calories than other meat sources and with different species of fish, you can either steam, bake, fry or poach fish accordingly to your preference.


(Serves: 2-3 |          Preparation: 5 minutes |     Cooking: 12 - 15 minutes)

Ingredients:
1 Piece Fresh Red Grouper, tail portion(about 350 - 400g)
4 - 5 Slices of Ginger, julienned
2 Stall Spring Onion, cut into sections
1 Small Tomato, cut into wedges
2 - 3 Salted Plum(咸水梅粒)
1 Teaspoon of Cooking Wine(花雕酒)
1 Teaspoon Sesame Oil
Shallot Oil, optional

Method:-
1. Rinse and pat dry the fish fillet, season it with 1 teaspoon of cooking wine and cornflour. Set aside.

2. Arrange half of the julienned ginger and spring onion on the base of the steaming plate, place the seasoned fish on top.

3. Arrange the rest of the rest of the ingredients around the fish, drizzle some sesame oil and place it in the steamer rack when the water boils.

4. Steam the fish for about 12 - 15 minutes depend on the thickness. Remove drizzle some shallot oil and served hot with steamed rice.



SAMBAL LALA
(Clams or Seashells)


Friendly speaking I am not a fan of shellfish but recently I have eaten some really good "Stir-fried Bamboo Clam and Lala" from the Seafood Galore buffet at Plaza Brasserie which makes crave for some. So today I decided to adapt a recipe from Wokkingmum website which is known as "Grilled Sambal Squid" and instead of using Squid I have recipe is with Lala(clams).


Recipe adapted from Wokkingmum's Grilled Sambal Squid.

(Serves: 2 |         Preparation: 30 minutes |              Cooking: 10 minutes)

Ingredients:
300g Clams, cleaned
2 - 3 Tablespoons of Sambal Chilli
2 Stalks Lemon Grass, lightly pound
4 Clove Garlic, chopped
1 Small Brown Onion, sliced
1 Tablespoon Oil

Method:-
1. Soak clams in salted water for about 20 minutes to let it spit out the dirt/sands. Rinse, drain and set aside.

2. Remove the outer layer of the lemongrass, cut into about 8cm sections. Lightly pound it and set aside.

3. Heat oil in Happy Call Pan(HCP) or frying pan, saute garlic, onion and lemon grass for about 1 minute till fragrant.

4. Add in the sambal chilli according to your preference and give the mixture a quick stir to evenly coat it with the chilli.

5. Add in clams, cover pan for 30 seconds and give the pan a good shake pan.

6. Open the pan, check the clams and give it a stir before cover the pan and continue to cook till all the clams are opened.

7. Discard those that did not open. Dish up and served hot with steamed rice.

Rainbow Omelette using Happy Call Pan


Thinking of what to cook for this week or even tonight? What about this quick and easy "Rainbow Omelette" which consists of Eggs, Tomato, Enoki Mushroom, Carrot and Onion. Eggs are one of the nutritional ingredient which has 11 different vitamins and minerals, high quality protein, healthy fats (including omega-3) and important antioxidants. Other than their nutritional value, eggs are tasty, convenient and versatile to be use in creating a balance and healthy dish for the family.


RAINBOW OMELETTE
(using Happy Call Pan)


My little boy loves egg and in order to create more egg dishes and add in extra ingredients to make it more nutritious, I often cook this "rainbow omelette" with similar ingredients to make it a tasty and colourful dish. For us, we simply loves this dish which is vibrant in colours as well as the layers of texture and from the soft and silky egg to chewy enoki mushrooms.

This dish is done perfectly in less than 10 minutes using my beloved Happy Call Pan which cooks my daily dishes in a hassle free and efficient way. And I specially delicate this dish to Joyce, my best friend as she is a "super" fan of Egg and Mushrooms!


(Serves: 4 | Preparation: 5 minutes | Cooking: 5 minutes)

Ingredients:
3 Eggs, 55g each
1 Small Carrot, shredded
1 - 2 Tomato, seed removed and diced
1 Small Brown Onion, thinly sliced
2 Stalks Spring Onion, thinly sliced 1 Packet of Enoki Mushroom, trim off the root portion
1 Red Chilli(optional), thinly sliced

Method:-
1. Add 1 teaspoon of cooking oil in the Happy Call Pan(HCP), saute onion for about 1 minutes till sightly soften.

2. Toss in diced tomato and shredded carrot, cover the pan and cook for another 1 minute.

3. Meantime, whisk eggs together with enkoi mushrooms and 3/4 of the chopped spring onion till well mixed.

4. Open the HCP cover, evenly pour the egg mixture onto the onion mixture, swirl the pan so that all the egg mixture goes round the pan.

5. Cover, and cook for about 2 minutes on low heat till the omelette set, flip the pan over and cook for another 1 - 2 minutes till done.

6. Flip the pan over again. Using spatula divide the omeltte into portion and garnish with remaining spring onion, sliced chilli and serve immediately.

Rosemary Honey Chicken Drumlets


There are many ways you can enjoy honey either on it's own, mix it with water or juice, drizzle on fruits and pancakes or use it for baking cake or savoury food. No matter which method you prefer, a daily dose of honey in whichever way is good to boost the body's supply of antioxidants which is therefore essential for protecting against free radicals.

In my last related honey post, I have shared a "Honey Lemonade" recipe which is good for flushing out your body system and gives it a boost to increase your daily energy. And in this post, I will be sharing another finger licking recipe using honey to enhance it taste and colours.


ROSEMARY HONEY CHICKEN DRUMLETS


If drumlets is not your preference you can always replace it with mid-joints or even chicken maryland for a hearty serving portion together with some mashed potato or garden salad to complete the meal.


(Serves: 2-3 |      Preparation: 5 minutes |         Cooking: 30 - 40 minutes)

Ingredients:
10 - 12 Chicken Drumlets
1 Tablespoon Honey Sheep Lemon West Coast Honey
1/2 Tablespoon Oyster Sauce
1/2 Tablespoon Cooking Wine
1/2 Teaspoon Dark Soy Sauce
1/2 Teaspoon Freshly Ground Black Pepper
2 Sprigs Rosemary, remove leaves and roughly chopped

Method:-
1. Trim the bone end of each chicken drumlets, remove skin around the bone and push the down the flesh to the head of the drumlet to form a cluster.

2. Marinate the drumlets with honey, oyster sauce, dark soy sauce, cooking wine, pepper and rosemary leaves. Set aside in the fridge for at least 30 minutes or overnight.

3. Line baking tray with baking paper or aluminum foil, arrange marinated chicken drumlets(remove from the fridge 10 - 15 minuets before cooking)on it and bake in oven toaster for about 30 minutes(flipping the drumlets two to three time during cooking to even the brown colours)

ALTERNATIVELY:-
~ Bake in a preheated 200° Celsius(400 degrees Fahrenheit) oven for about 30 - 40 minutes or till cooked through.

4. Next brush chicken drumlets with some extra honey lemon during the last 5 minutes of cooking time to enhance the colour and flavour of the drumlets.

5. When done, remove from oven and serve immediately.

Personally I love this hassle free recipe which consists of light fruity flavors of lemon with fresh herbs and honey which makes it an refreshing starter for parties or even main dish. And here in Singapore we also have a group of food lovers who gets together to support this event, and this would be held on 19th May 2012 at The Lawn.
