2014 Lunar New Year Bakes #1 - Cheesy Pineapple Roll and Black Gold

Chinese Lunar New Year is less than two weeks from now and you can see lot of festive goodies available in either supermarkets, bakery shops and even most of the households are busy with making their own expertise of bakes. Every year for my household, we only make pineapple tarts/rolls because they are our favourite and also when compared to the rest of the new year bakes (such as love letter, almond cookies, kueh balu, kueh lapis and etc) this is consider the most easiest with the help of ready-made pineapple paste.



(Makes: 120 | Baking Time: 18 - 20 minutes)

Ingredients:
1kg Pineapple Paste, rolled into 8g each
360g Plain Flour
250g Unsalted Butter
60g Icing Sugar
2 Egg Yolks
60g Parmesan Cheese Powder
15g Corn Flour
1/4 teaspoon Sea Salt

Egg Wash:
1 Large Egg Yolk
1 tablespoon Milk

Method:

芝士凤梨卷
酥皮:
一公斤 (1kg)凤梨馅
250克无盐奶油
360克中筋面粉
60克芝士粉(Parmesan cheese powder)
15克玉米淀粉
60克糖粉
1/4 茶匙海盐
2颗蛋黄

蛋液:
一颗蛋黄
一汤匙鲜奶

做法:
1.把凤梨馅捏成大约8克重的椭圆形。

2.把奶油和糖粉用搅拌机打均匀后再一一加入蛋黄打发。

3.接着分3次拌入混合好的芝士粉,中筋面粉,玉米淀粉和海盐。拌成一个面团后就用保鲜纸包起来,醒面半小时。

4.把醒好的面团放少许在挤花筒挤出长型的酥皮,然后把一份凤梨馅放在未段,小心地卷起来。

5.就这样一直重复到材料用完,。

6.烤箱预热到160度。在已卷好的凤梨酥上扫上蛋黄液然后放进烤箱烤大约 15 -18分钟时间依烤箱而定)直到表面呈现金黄色。


We love these savory version of Cheesy Pineapple Roll as the added Parmesan cheese actually blends well with the sweetness of the pineapple paste and together with the buttery pastry which wrapped them together makes this even a good combination to balance the taste of this all-time favourite new year goodies.


BAMBOO CHARCOAL PINEAPPLE CAKE
(Black Gold - 黑金)


The concept of making these "Black Gold" is from an inspiration that I saw at a bakery shop near my area. They actually transformed the usual "pineapple balls" into black colour by adding some bamboo charcoal powder in it. So for my version I experiment this with the above recipe on Cheesy Pineapple Roll by adding in 3/4 tablespoon of bamboo charcoal powder and 20g Milk Powder. Further I also omit Parmesan Cheese from the recipe too.

[Lunar New Year Bakes] Ingredients for bamboo charcoal pineapple cake

(Make: 25 Pineapple Cake    |   Baking Time: 25 minutes)

Ingredients:
500g Bake King Pineapple Paste
350g All-purpose Plain Flour
20g Milk Powder
3/4 Tablespoon Bamboo Charcoal Powder
250g Unsalted Butter
60g Icing Sugar
2 Egg Yolks
15g Corn Flour
1/4 Teaspoon Sea Salt

Topping:
Edible Gold Foil or Shredded Coconut

[Lunar New Year Bakes] Bamboo Charcoal Pineapple Cake
To work on the "black gold", wrapped 20g pineapple paste with 25g pastry to form a rectangular block shown above. Before baking at 160 degree Celsius preheated oven, brush a layer of egg wash over it, top with either shredded coconut or edible gold foil and bake for about 25 minutes or until top is golden brown in colour.
