Cherry Blossom Mantou vs Steamed Sakura Chicken With Choya

My experiments with using pickled cherry blossom continues after my first recipe on Matcha Cherry Blossom Chiffon (抹茶盐渍樱花戚风蛋糕) in April. And also with the extra packets of supply that Joyce (ahpoohbear) loop back for us from her recent Osaka trip, I am able to try out more fusion recipes using pickled cherry blossom.

In this post I am sharing two recipes such as Cherry Blossom Mantou (Asian-style steamed bun with pickled cherry blossom) and Steamed Sakura Chicken With Choya (Steamed chicken mid-joint using picked cherry blossom and choya).


CHERRY BLOSSOM MANTOU
(樱花馒头)


Here I am making a two-tone colour steamed bun (mantou) using Sakura Leaf Powder for the green portion but you could always replace it with Matcha powder according to your preference. The sakura leaf powder added a distinctive taste to this steamed bun leaving it with a sweet and savoury flavour that makes you go for second helpings.


(Make: 6 pieces  | Preparation: 55 minutes | Cooking: 15 minutes)

Ingredients:
250g All-purpose Plain Flour
1/2 Teaspoon (2g) Baking Power
3g Instant Dry Yeast
110ml Lukewarm Water
10g Milk Powder
1 Teaspoon Sakura Leaf Powder
Some Salt Pickled Cherry Blossoms (盐渍樱花), soaked in water
25g Caster Sugar
10g Unsalted Butter, soften


Method:-
1. Add dry yeast into the lukewarm water and give it a quick stir, set aside for about 2-3 minutes till bubbles appeared.

2. In a big mixing bowl, stir in sift plain flour, milk powder and baking powder together with caster sugar till combined.

3. Next slowly add in yeast water into the flour mixture and stir using a metal spoon or clean hand till it forms soft dough.

4. Knead soft butter into the dough till it does not stick to your hand and divide the dough into 2:1 ration size.

5. With the smaller dough, knead in Sakura Leaf Powder till combined then proof the two doughs in a warm place for 20 minutes.

6. Next, flatten the doughs to release the air in it. Place the green dough on top of the plain, roll it up into a oblong shape and proof for another 15 minutes.

7. Cut the dough into equal portion, place each portion on the steamer rack with greaseproof paper below. Place some drained sakura flower on top and rest for another 15 minutes.

8. Sprinkle some water on the mantou before placing the steamer rack into the pot of boiling water and steam them over medium heat for about 10 - 12 minutes (depending on the size of the mantou). When done, removed and served hot/warm.



STEAMED SAKURA CHICKEN WITH CHOYA
(樱花梅酒鸡)


My inspiration for this Steamed Sakura Chicken with Choya (樱花梅酒鸡) comes from our all-time favourite; Steamed Rice Wine Chicken (蒸黄酒鸡) which I would prepare at least once a month. And with some pickled sakura on hand as well as Choya (plum wine) that mum bought during her recent trip, I decide to use these two special ingredients to try out this dish.


(Serves: 2-3  | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
6 - 8 Chicken Mid-joints
1 Teaspoon of Grated Ginger
1 Stalk Spring Onion, cut into sections
100ml Choya (Japanese plum liqueur)
Some Salt Pickled Cherry Blossoms (盐渍樱花), soaked in water

Method:-
1. Lightly marinate chicken mid-joint with grated ginger, cornflour and pinch of salt.

2. With some ginger slices and spring onion below, arrange the mid-joints on top and place the drained sakura flowers that had being soaked for 5 minutes (rinse well) on it (refer to the photo above).

3. Lastly pour in choya and let it stands for 5 minutes before steaming the mid-joints over medium heat for 20 - 25 minutes till tender.


The mid-joints were infused with the combination of Choya and pickled Sakura leaving it with a refreshing and fragrance after taste. Also after steaming, the soup broth was full of flavour due to the essence from the chicken and choya. Do give this a try if you happen to have a bottle of Choya at home and don't worry about the pickled cherry blossom as you could always omit it for a new recipe.

Teochew Style Steamed White-spotted Rabbitfish

Every year before and during Chinese New Year (CNY) period you would definitely be able to see this auspicious "White-spotted Rabbitfish(白肚鱼/拜年鱼)" available at all wet market fish stalls as well as the seafood sections at major supermarkets. These fish taste especially delicious during this season and they are also big in size and comes with roes that are particularly relished too.

Last year I have shared with you a similar Teochew style recipe known as "Pan-fried White Spotted Rabbitfish With Leeks"(recipe HERE) whereas for this year it would be the steamed version which consists similar ingredients.


TEOCHEW STYLE STEAMED WHITE-SPOTTED RABBITFISH


My dad used to cook this dish and according to my mum who taught me this recipe over our phone conservation, she mentioned that in order to maintain the texture and taste of the fish it would be good if I blanched it in boiling water before steaming. (in this case the fish is half cooked and it would not release so much water during steaming which will affect the texture of the meat)

So since I wanted to achieve what my dad used to cook for us, I follow my mum's suggestion and steps to dot and surprising it works well. My steamed white-spotted rabbitfish taste almost 90% like my childhood food. Now at least I have master another traditional food in our household which might comes in handy one of these days.


(serves: 2 | Preparation: 10 minutes | Cooking: 10 minutes)

Ingredients:
2 Large White-spotted Rabbitfish(白肚鱼/拜年鱼)
2 Stalks Chinese Leek, cut into diagonally sections
2 Slices of Ginger
3 Garlic Cloves, finely minced
1 Tablespoon of Oil
1/2 Tablespoon of Oyster Sauce
50ml Water


Method:-
1. Clean and rinse the fish, cut a diagonal slit on the fish(refer to the photo stated no. 1 above) to shorten cooking time.

2. Add water to about 1/4 level of the pan and bring it to boil before blanched the fish for about 20 seconds on each side. Remove, rinse, pat dry using kitchen paper towel. Stuff the ginger slice into the stomach area(to get ride of the fishy smell) of each individual fish and set aside on steaming plate.

3. Next saute minced garlic with oil till fragrant, add in leeks and continue to fry for another 20 seconds, before adding in the oyster sauce and water.

4. Simmer the mixture over low heat for another 1 minute or so, remove and drizzle it evenly on top of the prepared fish.

5. Prepare a steamer with boiling water and steam the fish for about 7 minutes or till fish is cooked through. (can take reference from the eyes which would turn white and puffed out) Serve immediately with steamed rice or porridge.

Braised Bee Hoon With Pumpkin & Prawns

With Chinese New Year(CNY) celebration still going on until next Monday, 06 February 2012(the fifteen day of Chinese New Year). Most households are still in the festive mood on preparing auspicious CNY dishes with ingredients such as Abalone, Mushrooms, Black Moss, Sea Cucumber and etc.

In this post I am using simple ingredients such as rice vermicelli, pumpkin(金瓜 - 金玉满堂), prawns(嘻哈大笑) and mushrooms to prepare a very colourful and auspicious New Year noodle dish for the family.

Stir-fry Fu Gui Cai and Stuffed Mushrooms with Black Moss, Glutinous Rice Wine Chicken

Time flies, today is the 3rd day of Chinese Lunar New Year and I am sure most of you have being busying with the house to house visiting plus feasting on the delicious New Year goodies and food. Even though nowadays we could easily ordered or enjoy a hassle free reunion dinner in restaurants but I believe there are still many housewives, mothers, grandparents and etc busying with the preparation of their signature dishes for reunion dinner.

I remember when I was a kid, I always look forward to Chinese New Year to feast on those "special" dishes that my dad would only cook during New Year. And although I am not a very good cook like my dad, every Chinese New Year I would still try to cook up one or two of my self concoct dishes for my family.


STIR-FRY FU GUI CAI AND STUFFED MUSHROOM WITH BLACK MOSS
富贵花开


For this year reunion dinner, I have prepared this quick and easy stuffed mushrooms with minced meat and black moss dish to serve together the auspicious greens known as Fu Gui Cai(富贵菜). To make it more colourful and appetising, I have also added gingko nuts and wolfberries to enhance the presentation.

I would be submitting this Stir-fry Fu Gui Cai and Stuffed Mushrooms with Black Moss dish to this month Aspiring Baker #15 - Auspicious Dishes for CNY (January 2012) that is hosted by Wen of Wen's Delight.


(serves: 3-4 | Preparation: 15 minutes | Cooking: 10 minutes)

Ingredients:
6 - 8 Dried Medium Chinese Mushrooms, soaked in hot water till soften
150g Minced Meat
10g Black Moss(发菜), pre-soaked in water
10 Gingko Nuts
1 Floret of Fu Gui Cai(富贵菜)
Some Wolfberries
1 Red Chilli, sliced
3 Slices Ginger
3 Cloves Garlic
1 Teaspoon Cooking Wine
1 Teaspoon Cornflour + 1 Tablespoon Water, mixed well

Seasoning:
1 Tablespoon Oyster Sauce
1 Teaspoon Cornflour
1/2 Teaspoon Sesame Oil
1/2 Cooking Wine
Dash of Pepper

Sauce:
100ml Water
3 tablespoons Oyster Sauce
1 Teaspoon Sugar


Method:-
1. Mix minced meat, black moss and seasonings together and set aside to marinate for at least 10 minutes if time permit.

2. Stuff about 1 tablespoon of the minced meat mixture into the pre-soaked mushrooms.

3. Preheat Happy Call pan with about 1 tablespoon of oil and fry the stuffed mushrooms for about 1 minutes each side or until cooked. (HCP close but don't lock) Remove and set aside.

4. Add in another 1 tablespoon of oil to saute ginger and garlic till fragrant before adding in the Fu Gui Cai (remove the leaves from the floret, reserved 1/4 of the last portion to act as flower), chilli and gingko nuts. Close the pan and let it cook for another 1 minute before giving it a quick stir and close the pan for another 30 seconds.

5. Next add in the cooked stuffed mushrooms together with the sauce mixture and give the mixture a quick sit-fry and simmer on low heat for another 30 seconds before removing the vegetables.(arrange the vegetables in the middle of the plate)

6. Lastly with the mushrooms and gingko nuts still remains in the pan, add in corn star mixture and cooking wine and wolfberries, mix well with all the ingredients.

7. Remove and arrange mushrooms on serving plate around the fu gui cai. You can also decorate the mushroom with the wolfberries shown above.


Note:-
~ If you prefer you could replaced the dried mushroom with fresh shiitake mushrooms.

~ Pick up other greens such as broccoli, xiao ba cai or etc according to your preference if fu gui cai is not available.

~ For more varieties you could also add in fish or prawn paste to the minced meat mixture.



GLUTINOUS RICE WINE CHICKEN
黄酒鸡


This Glutinous Rice Wine Chicken(黄酒鸡) is one of the traditional Hakka dish eaten during confinement or Chinese New Year. To cook this dish usually they would buy kampong chicken instead of the normal chicken and simmer it together with their homemade Glutinous Rice Wine. According to the Hakka this dish is good to replenish lack of blood due to fatigue, malnutrition, cold chills, irregular menstruation, anemia, postpartum weakness and etc.


(serves: 2-3 | Preparation: 10 minutes | Cooking: 15 minutes)

Ingredients:
1/2 Chicken(about 600g), cut into bite sizes
1 Tablespoons of Sesame Oil
6 Slices of Ginger, cut into thin strips
200ml - 250ml of Glutinous Rice Wine
6 Red Dates, cut into thick slices
1/4 Teaspoon Salt

Marinade:
1 Teaspoon Cornflour
1 Teaspoon Sesame Oil
1 Teaspoon Light Soy sauce
1 Teaspoon Cooking Wine

Method:-
1. Marinate the chicken with cornflour, sesame oil, light soya sauce and cooking wine for at least 10 minutes.

2. Preheat Happy Call Pan on low heat with sesame oil and saute gingers till fragrance(close but don't lock).

3. Add in marinated chicken and cook on low heat for 1 minute (closed and locked), flip the pan over and cook for another 1 minute.

4. Next flip the pan back, add in rice wine and red dates, locked the pan and simmer over low heat for about 8 - 10 minutes till the chicken is tender and cooked through.

5. Lastly add in salt to taste and serve hot.

Sweet and Savoury Longevity Noodles ~ 长寿面

3 More days to Chinese Lunar New Year and everyone is busying with some last minutes shopping on clothing or groceries. Here in order to usher in wealth and good luck for the year of the dragon, I have prepared two auspicious "Longevity" noodles recipes to share with you.

And with these two noodle dishes I wish everyone a Happy and Prosperous Chinese New Year that comes with many folds of blessing, health and wealth.


SWEET LONGEVITY NOODLES

Longevity Noodles(长寿面) is often eaten during Birthday or festive season such as Chinese New Year. And it is eaten to symbolise longevity together with a pair of hard-boiled eggs which representing fertility or life. There are many ways on preparing longevity noodles based on individual dialect groups and culture. Some might also use "Mee Suah/Mian Xian" ( 面线), Ee-Fu(伊面) noodles together with meat and etc to cook a sweet or savoury version.


(serves: 2 | Preparation: 5 minutes | Cooking: 20 minutes)

Ingredients: 
Half Packet (150g) of Handmade Red Noodle
4 Eggs
1 Knot of Pandan Leave
3 Slices of Ginger
Red/Brown Sugar to Taste


Method:-
1. To make hard-boiled eggs, bring fresh eggs and water to boil then simmer over medium low heat for about 8 - 10 minutes depending on your preference.

2. Using another pot, bring 1.2 litres of water to boil, add in ginger slices and pandan leave then let it simmer for about 5 minutes.

3. Meantime spread out the handmade red noodles and put it in boiling water for 1 minutes, stir occasionally. When soften, remove, rinse with water and drained well and divide into serving bowls.

4 Next add in shelled hard-boiled eggs and sugar to sweeten the soup(you can add in slightly more sugar as the noodles would balance the taste when added).

5. Lastly ladle the soup and eggs over the noodles and served immediately.


This quick and simple "Sweet Longevity Noodles" is something that my dad would prepared for me and my brother's Birthday during our childhood time. We have not eaten this for so long ever since we grown up and my dad passed away.

But today, suddenly I have this urge to replicate this dish which bought back many of my childhood memories. I guess nowadays the younger generation would find it hard to appreciate this traditional dish which might one day become extinct.


BRAISED EE FU NOODLES
(Cantonese-style Longevity Noodles)


Ee-Fu/Yi Mein(伊面) is one of the flat Cantonese egg noodles that is made from wheat flour and I am sure most of you are familiar with this noodle dish as it is a very common noodle dish served in most Chinese restaurant during special occasions such as wedding or birthday dinners. So in a way, this Cantonese-style noodle is also known as "Longevity" noodles too.


(serves: 4 | Preparation: 10 minutes | Cooking: 15 minutes)

Ingredients:
1 Packet Dried Hong Kong Ee-Fu Noodles, about 350g
250ml Chicken Stock
4 Tablespoons Oyster Sauce
4 Tablespoons Dark Soy Sauce
2 Teaspoon Sugar
2 Tablespoons Cooking Oil
100g Small Dried Chinese Mushrooms, soaked till soften
200g Bean Sprouts, root removed
1 Bundle Yellow Chives, cut into sections
Splash of Cooking Wine(Hua Tiao Wine)
Dash of Pepper


Method:-
1. Bring a big pot of water to the boil and cook the noodles for about 5 minutes or until softened. Drained and set aside.

2. In a wok/frying pan, heat up 2 tablespoons of cooking oil and saute the mushrooms(squeeze dry) over low heat for about 3 minutes till fragrance.

3. Next add in the mixture of chicken stock, oyster sauce, sugar and dark soy sauce into the mushrooms and bring the mixture to boil.

4. Tip in the noodles and toss to coat with the sauce before tossing in the bean sprouts and yellow chives.

5. Give the mixture a good stir and if it dries up, add in another 50ml of chicken stock/hot water and simmer over low heat until most of the liquid has evaporated (about 5 minutes).

6. Lastly adjust the seasoning to taste, add in splash of cooking wine and pepper, serve immediately.

Note:-
~ You can replace dried Chinese mushrooms with fresh shiitake mushrooms.
~ Replace Abalone/Scallop Sauce with Oyster Sauce for better taste.

Nutella Cupcakes with Chocolate Chips

There are so many versions of Self-frosting Nutella Cupcake recipes available online whenever you do a goggle search. Here I am using a recipe from Camemberu with slight changes by adding my son's favourite mini chocolate chips to make it more chocolatey on top of the Nutella used.


NUTELLA CUPCAKES WITH CHOCOLATE CHIPS


For the recipe of this Nutella Cupcakes with Chocolate Chip you would notice that I have used 2 types of flours like what I did for the Kiwifruit and Lime Cupcakes as i prefer a lighter texture by in-cooperate some self-raising flour. But if you find it too troublesome, you could always follow the original recipe and use 100g of plain flour plus 1 teaspoon of baking powder instead.

Recipe adapted and modify from Camemberu Self-Frosting Nutella Cupcakes.

(serves: make 6 | Preparation: 10-15 minutes | Cooking: 20 minutes)

Ingredients:
70g Plain Flour
30g Self-Raising Flour
70g Unsalted Butter, soften
70g Caster Sugar
2 Eggs, 60g each
1/4 Teaspoon Vanilla Extract
1/2 Teaspoon Baking Powder
1/4 Cup Mini Chocolate Chips
Pinch of Salt
Some Nutella Spread


Method:-
1. Cream butter and sugar until light and fluffy(about 2 minutes on medium speed)

2. Add egg one at a time and beat till no trace of egg mixture.

3. Next add vanilla and stir in flour mixture until flours are full in-cooperate before toss in the chocolate chips and mix well.

4. Fill each cup with 1/4 of the batter, add in 1 teaspoon of Nutella each before covering it with batter to fill 3/4 full.

5. Give the mixture a quick swirl using toothpick and bake in preheated 180 degree celsius oven for 20 minutes or until skewer insert and comes out clean.

These are some of the Mini Nutella and Peanut Butter Cupcakes which my boy would occasionally request as his tea snack or breakfast. And I guess these mini version would be great for kids to bring to school or outings compared to the normal size cupcakes above.

{Zespri Kiwifruit Recipes} Kiwi, Lime & Mint Cooler, Avocado with Gold Kiwifruit Salsa and Pan-fry Salmon with Green Kiwifruit

Using fresh fruits in either Cooking/Baking is always something that interests me. As you can search through my recipes list, I have tired many dishes with fresh fruit like mango, apple, orange, avocado and etc. And this “Kiwifruit” feast featured here was inspired by the ZESPRI Kiwifruit tasting event held at Heart Bistro which I have missed out last week.

With the goodwill of the folks from Edelman(ZESPRI's PR), they have sent me a set of their press kit which includes fresh kiwifruit, kiwifruit recipes, cute kiwifruit 2GB thumb drive and etc. Below are 3 recipes using fresh ZESPRI Kiwifruit which I would like to share with you and hopefully it would inspired you to in-cooperate some kiwifruit in your daily dishes too.

In Singapore you can easily get a pack of these yummy ZESPRI Kiwifruit from any leading supermarkets or fruit stalls. And do you know ZESPRI Kiwifruit are the most "nutrient dense" of popular fruits that belong in the "Super Fruits" category. Each bite contains more essential nutrients than the other 27 most popular fruits.

ZESPRI Kiwifruit also contains more than 210% of the recommended daily intakes of Vitamin C which gives you 2 times more Vitamin C than an orange. KIWI, LIME AND MINT COOLER


If resources is possible do use fresh Green or Gold kiwifruit in your drinks if you are preparing kiwifruit juice or puree to get the full goodness out of them. Here to start off, let's have a glass of freshly blended "Kiwi, Lime and Mint Cooler" to refresh your body after a hectic day at work. And by adding mint leaves it also act as a fresh and aromatic flavor to the drink with a cool aftertaste.


(serves: 2 | Preparation: 10 minutes

Ingredients:
2 ZESPRI Gold Kiwifruit, cut into halves
2 ZESPRI Green Kiwifruit, cut into halves
1 Teaspoon of Honey
15ml, Juice of Half Lime
1/4 Cup Mint Leaves
1/2 Cup Ice Cubes, optional
150ml Chilled Sprinkling Water/Sprite/Wine

Method:-
1. Blend kiwifruit with honey, lime juice, mint leaves and ice cubes till combined. (I prefer mine without ice so usually i will used chilled sprinkling water/sprite)

2. Divide into cups and top with chilled sparking water and serve.



AVOCADO WITH GOLD KIWIFRUIT SALSA


For starter let's have some crunch to go with the cooler. Does this "Avocado with Gold Kiwifruit Salsa serve on Corn Chips" sound good to you? It is a refreshing dish with hint of sweet, sour and spicy taste due to the adding of lime juice and chopped chilli. This definitely serves well as a party food or tapas to go with cocktail or beer.

(serves: 2-3 | Preparation: 10 minutes)

Ingredients:
2 Ripe ZESPRI Gold Kiwifruit, cubes
1 Ripe Avocado, cubes
1/2 Tablespoon Runny Honey
Juice of 1/2 Lime
1 Red Chilli, seed removed and chopped
1 Tablespoon Shredded Basil/Mint Leaves

Method:-
1. Mix honey, lime juice, chilies and herbs in a bowl.

2. Stir in kiwifruit and avocado cubes and marinate for about 15 - 30 minutes.

3. Upon serving, spoon mixture on corn chips and serve it as starter or pairing with wine and beer too.

You can also serve this salsa on it's own by the side of the main course or mix it together with some shredded chicken and salad greens and serve as a quick salad too. No matter which is your preference style I am sure this appetizing salsa will make your meal taste great.



PAN-FRY SALMON WITH GREEN KIWIFRUIT


Salmon has earned its research reputation as a health-supportive food based on it's amount of omega-3 fatty acid content. Here we are using two nutritious ingredients to form a main course which is so easy to prepare and yet so healthy for the whole family.


Recipe adapted and modify from ZESPRI, Kiwifruit Recipes booklet
(serves: 2 | Preparation: 15 minutes | Cooking: 6 - 8 minutes)

Ingredients:
2 - 3 ZESPRI Green Kiwifruit
1 Small Chilli, seeded and diced
1 Teaspoon Maple Syrup/Honey
450g Salmon Fillet, halves
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Olive Oil
2 Servings of your desire Salad Greens

Dressing:
2 Tablespoons Olive Oil
1 Teaspoon Honey
2 Tablespoon Apple Cider Vinegar
Freshly Ground Black Pepper to Taste

Method:-
1. Place salmon in a deep bowl together with chili, vinegar and honey. Marinate for at least 15 - 30 minutes.

2. Meanwhile, peel and slice the ZESPRI Green Kiwifruit in wedges.

3. Heat the oil in a non-stick pan and saute the drained salmon for 3 minutes or until just cooked (according to your own preference).

4. To assemble, pile the salad greens in individual serving plates, top with kiwifruit and salmon.

5. Combine the ingredients for the dressing and drizzle over the salad. Garnish with extra black peeper if desired.

Don't back off from this dish if you are worry about the "smell" of the salmon fish as the marinade from the chopped chilli and apple cider vinegar actually has mask it quite well to flavour this dish. And furthermore to ease your cooking chore, you can even place the salmon on a grease disposal foil tray and bake in the toaster oven for about 8 minutes(turning once) depending on your preference for cooking the salmon.
