[Recipe] Steamed Carrot Cake With Seafood XO Sauce - 海皇XO酱蒸萝卜糕

Carrot Cake (萝卜糕) aka radish cake or chai tow kway is a popular dish eaten during Chinese New Year to symbolize "good fortune (好彩头)". Although there are a few different methods in making this traditional dish but generally shredded white radish is being mixed with the rice flour batter together with ingredients like dried shrimps, mushroom and Chinese sausage.

Despite being a new year dish, carrot cake is also one of the common dim sum items which often served in steamed or pan-fried version. Besides those you can also find another local version known as Fried Carrot Cake (菜头粿) which is stir-fried with eggs and preserved radish.

Have you ever tried preparing a decent "3 dishes + 1 soup (三菜一汤)" meal within 30 minutes (excluding preparation of ingredients and marinating)? In this post I would be sharing some tips and recipes on how to cook-up four delicious home cook dishes and get them ready on the dining table within 30 minutes.

Since this task is part of the criteria from Lee Kum Kee MOS Blogger Competition which I am taking part, I decided to put myself on a test to see whether am I able to complete the assigned task within the time frame.

After planning and cooking for weeks, months and even years it sometimes make SAHM (Stay At Home Mum) feels that all these routines seems to be a "hectic chore" which are never ending. Often we just wanted to create some decent and healthy meals that are less time consuming and "hopefully" they suits everyone's preference in the family too.

So after much thoughts and suggestions from readers, I decided to start a new column on this blog known as "Weekly Meal Planner" from 01st March 2014 onwards featuring our weekday dinner menus hopefully on Mondays base on a bi-weekly timeline. The featured dishes might vary from Asian, Western or even just 5 recipes on soup or dessert for the week which I hope it would help to inject some new ideas into your weekly menu planning.

Father's Day Breakfast Bento With Lee Kum Kee Ketchup

With Father's Day just a few days around the corner, I would like to wish all Fathers out there a happy and blessed day with your family and loved ones. Although it's not quite popular for people in Asia to celebrate Father's Day instead of Mother's Day but I am sure the newest generations are more willing to whip up something for their dad.

Since we will be away for holidays during Father's Day, my boy and I managed to put up a quick and easy Father's Day Breakfast using tomato sauce as one of the main ingredients which we would like to share with you.


LEE KUM KEE NEW PRODUCTS


Before we start off with the recipe, just to share that this June, Lee Kum Kee has launched three new products in major supermarkets like Cold Storage and Giant and they are such as:-

Tomato Ketchup (S$1.25) which made from high quality tomatoes with no added preservatives or colouring.

Pure Sesame Oil (S$3.30) which is carefully processed to retain strong flavour of sesame seeds. This condiment is my great helper in my kitchen that enhance the flavour of our dishes with just a few dashes.

Chu Hou Paste (S$3.50) is made from soybeans, garlic, ginger and sesame seeds which is a convenient cooking sauce for braising, marinating or cooking meats and vegetables.


On top of the new products, Lee Kum Kee also printed some recipe cards which enable shoppers to pick up from the supermarkets to try out with the new range of products launched. Would share with you my favourite recipe using Chu Hou Paste (柱侯酱) to make the "Stewed Chicken" in upcoming post soon.


FATHER'S DAY BREAKFAST BENTO
(using Lee Kum Kee Ketchup)

(Serves: 1 | Preparation: 10 minutes | Cooking: 10 minutes)

Ingredients:
2 Slices of Sandwich Bread
2 - 3 Fresh Shittake Mushrooms, sliced
1/2 Cup of Mozzarella Cheese
4 Tablespoons Lee Kum Kee Ketchup
1 Egg
1 Tablespoon Fresh Milk / Pouring Cream
1 Small Tomato, diced
2 Mini Japanese Sausage
1 Slice of Sandwich Cheese
Some Steamed Corn Kernels
Some Cherry Tomato
Seasonal Fresh Fruit

Tools Needed:
Bento Box
Side Dishes Food Casing
Alphabet and Heart-shape Food Cutters
Food Tweezer
Bento Food Pick (optional)

Method:-
1. Using a 8cm wide heart-shaped food cutter, cutout two heart shapes from bread and lightly toast it in the oven toaster for 1 minute each side. Set aside.

2. Spread a layer of Lee Kum Kee Ketchup on the toasted bread, top it with some Mozzarella cheese and mushrooms.

3. Pop them back into the oven toaster and bake for 1 minute or till cheese melt.

4. While the bread is in the oven toaster, prepare the scramble egg by heating up a small frying pan with 1 teaspoon of oil/butter.

5. On low heat, add in the diced tomato and quick it a quick stir for 10 seconds before swirling in the egg mixture (beat egg with 1 milk/pouring cream) and cook till almost done.

6. Next adding in 1 tablespoons of Lee Kum Kee Ketchup and stir till the mixture is well-mixed. Remove and set aside.

7. Assemble the scramble egg and sausage into the bento box then start decorating the heart-shaped pizza toast with some lettering cutout from the sandwich cheese.

8. When done, arrange them nicely back into the prepared bento box and serve.


Actually there are many ways which you could incorporate Ketchup into your cooking instead of using it only as a dipping sauce. [April $20 Budget Meal] Seaweed and Minced Pork Soup, Fried Bitter Gourd Omelette and Ma Po Tofu

I have being craving for those Cze Char style Seaweed Soup recently and after asking around for a quick and easy recipe. I managed to settle on Alice's version where she is very patience to guide me through  the steps during one of our chat on MSN. Her method was pretty good with boiling of  fresh ikan bilis stock and she also share on how to "clean" the seaweed by frying it dry in a non-stick pan which will enhance it's fragrance and at the same time removes any dirt that is trapped in between the seaweed.

This set of Budget Meal cost about S$6.60 which is good enough for 2 - 3 servings.

SEAWEED SOUP

Ingredients: (serves 2 - 3)
1/4 Portion of Dried Seaweed, cut from a 20cm round
60g Minced Pork
2 Garlic Cloves, lightly pound
1 - 2 Slices of Ginger
1 Stalk of Spring Onion, cut into sections
1 Medium Tomato, cut into wedges
1 Egg, lightly beaten
1 Litre Hot Water
1/2 Cube or Knorr Ikan Bilis Stock

Method:-
1. Marinate minced pork with light soy sauce, sesame oil, pepper and corn starch for about 5 minutes.

2. Heat up 1/2 Tablespoon of oil in a soup pot, saute ginger, garlic and spring onion till fragrant then add in minced pork and continue to stir-fry for a few minutes till cooked through.

3. Pour in hot water and bring to boil, add stock cube, let it simmer for 2 - 3 minutes. Remove the garlic, ginger and spring onion before adding in the tomato and seaweed.

4. Turn off the heat, slowly swirl in the beaten egg and serve.


Total cost for this dish is about S$1.80 with breakdown shown below:-
Cost of Ingredients:
~ Seaweed = S$0.40
~ Egg = S$0.20
~ Tomato = $0.20
~ Minced Pork = S$1.00


Whenever we visit any Cze Char(煮炒) stalls, we will always order either their "Bitter Gourd Omelette" or "Egg Foo Yong(芙蓉蛋)". Here we can also prepare a simple version of this delicious omelette dish at home according to personal preference. If you are not sure on how to choose the bitter gourd, you can always ask the stall owner for help. But if you are getting it from supermarket, just try to get those with bright jade green colour and wider pattern lines so that they are not on the extreme bitter taste.

BITTER GOURD OMELETTE

Ingredients: (serves 2 - 3)
2 Large Eggs
100g (1/3 Portion of a Medium) Bitter Gourd, thinly sliced
2 Garlic Cloves, finely minced
1 Teaspoon of Light Soy Sauce
Dash of Pepper and Sesame Oil
1.5 Tablespoon Oil for frying Omelette


Method:-
1. Before cooking the bitter gourd, add 1 teaspoon of salt and marinate for 5 minutes, wash and squeeze dry to reduce the bitter taste.

2. Heat up oil in frying pan, saute garlic until fragrant. Add in bitter gourd and mix well.

3. Stir-fry the bitter gourd until soft, slowly swirl in the beaten egg (beat egg, light soy sauce, sesame oil and pepper together till combined) .

4. Pan-fry at medium heat until set, turn it over and continue to fry until golden brown.

5. Dish up and serve.


Total cost for this dish is about S$0.90 with breakdown shown below:-

~ Bitter Gourd = S$0.50
~ 2 Eggs = S$0.40


It has being long since I last set my wok with this popular Chinese dish which is known as Mo Po Tofu(麻婆豆腐). It has a combination of tofu (beancurd) and minced meat that cooks in a spicy chili and bean based sauce. For this home version of Mo Po Tofu, I used the instant Lee Kum Kee Mo Po Tofu sauce which is slightly mild compare to the original "spicy" taste that we ate from Chinese Restaurants.

MA PO TOFU

Ingredients: (Serves 2 - 4)
90g Minced Pork
250g Soft Tofu, dice in 1" cubes
2 Garlic Cloves, finely chopped
1/2 Teaspoon Sugar, optional
1 Packet of Lee Kum Kee's Ma Po Tofu Sauce

Method:-
1. Preheat frying pan with 1.5 tablespoon of oil and saute minced garlic till fragrance before adding in the minced pork.

2. Stir-fry minced pork till cook through, pour in Lee Kum Kee Sauce For Ma Po Tofu and simmer for 10 seconds.

3. Slowly add in the drained tofu and give it a quick stir to absorb the flavour from the Ma Po sauce and slightly thickened. (You can add in some sugar to balance the spicy and salty taste from the sauce)

4. Dish up on serving plate, sprinkle with some chopped spring onion and serve immediately with warm steamed rice.

~ Silken Tofu = S$1.50
~ Lee Kum Kee Sauce = S$1.40
~ Minced Pork = S$1.00


Using simple ingredients like EGG and TOFU you can also whipped up something delicious like what we had for dinner. And I am sure most of you can also come out with some other delicious dishes using these simple ingredients too. Most important you know what is good for your family and  I am sure you will try to incorporate as many healthy ingredients as you can in your daily cooking.

Lemon Grass & Honey Garlic Chicken

Made this simple dish and delicious chicken dish using instant LEE KUM KEE's Honey Garlic Sauce for today's dinner. I had marinated the chicken with some ginger juice, finely chopped lemon grass and sliced shallot.

Ingredients:
1 Chicken Drumstick
2 Stalk of Lemon Grass, finely chopped
3-4 Shallot, thinly sliced
1 Packet of Lee Kum Kee's Honey Garlic sauce

Methods:
1. Wash and pat dry the chicken drumstick then marinate it with some light soya sauce, sesame oil and corn flour for at least 1 hour in the fridge.
2. In a non stick pan or pot, add some oil and saute the lemon grass and shallot for a few minutes until fragrant then add in the chicken drumstick and pan-fry on low heat until almost done.
3. When the chicken is almost cooked or cooked, pour in the instant honey garlic sauce and add in some water to simmer it over low heat.
4. When the chicken is cooked through, remove it from pan and place it on serving plate and top with extra garnish like spring onion and chilies.

Note:
a) You can used chicken pieces or chicken wings for this dish.

Sweet & Sour Chicken Meatballs

Although nowadays there are some people who are having phobia of eating chicken because of the H5N5 Bird flu Virus. Chicken is still an excellent source of protein and a rich source of most B Vitamins. However, chicken skin is high in saturated fat and should be removed before eating. Chicken breast fillet is an ideal meat for any weight loss diet. Chicken meat is also low in carbohydrate, low in fat with a moderate protein content.

So for today's dish, we will be using Chicken Breast fillet to make the meatballs and deep-fry in with breadcrumbs. We also incorporate a few colourful vegetables to make this dish more vibrant and nutrition.

For those who loves to eat sweet and sour pork but scare of it fats contain, maybe you will wish to try on this low-fat version using chicken breast meatball. It taste just as good as well........


Ingredients:(can make 16-20 small meatballs)
1 Chicken Breast Fillet, skin removed
2 - 3 Tablespoons Cornflour
1 Egg, lightly beaten
4 - 5 Tablespoons Dried Breadcrumbs
1 Medium Japanese Cucumber, peel and cut into 1" section
1 Medium Tomato, cut into wedges
1/2 Red Onion, cut into wedges
1/2 Yellow Pepper, cut into wedges
1 Piece Fresh Pineapple, cut into wedges

Methods:
1. Remove the skin from the chicken breast, wash and cut it into small cubes and put it in a food processor.
2. Add in 1 Teaspoon Cornflour, 1/2 Tablespoon Light Soy Sauce, 1 Teaspoon Cooking Wine, 1/2 Teaspoon Sesame Oil and some pepper then blend the diced chicken into a paste form.
3. Let the chicken paste rest in the fridge to marinate for at least 30 minutes.
4. Roll the chicken paste into a small meatball (about the size of a normal fishball), coat it with some corn flour, then dip in beaten egg and roll onto some breadcrumbs.
5. Leave all the breadcrumb meatballs aside for 2-3 minutes so that the breadcrumbs won't fall off easily when deep-frying.
6. Prepare a pot of 80% boiling hot oil and slowly add in the meatballs in two batches and deep-fry till golden brown, drain and set aside.
8. Preheat a frying pan with 2 tablespoons of oil, saute the Onion until fragrant then add in the tomato, cucumber, yellow pepper and pineapple and stir till combine.
9. Next add in the sauce ingredients and bring to boil, gradually add in some cornflour mixture(1 tablespoon cornflour + 1 tablespoon water) and stir well.
10. Lastly add in the meatballs and stir fry till all the meatballs are coated with the sauce and remove to serve.

Sweet & Sour Sauce:
6 Tablespoons Water
1/2 Teaspoon Salt
2 Tablespoons Fine Sugar
2 Tablespoon Tomato Sauce
1/2 Tablespoon A1 Sauce
1 Teaspoon Sesame Oil
1 Tablespoon Chilli Sauce
1 Tablespoon White Vinegar

Methods:
1. Mix all the above sauce ingredients in a small bowl and set aside for later use.

Notes: You can also used those pre-mix sweet and sour sauce that is found in most supermarket like Lee Kum Kee Brand. Posted by Picasa
