Caramel Chicken with Potato

This Caramel Chicken with Potato dish is one of our family all-time favourite. It was infused with sweet and savory taste from the sauce and it's definitely perfect for a one dish meal. I was first introduce to this dish by one of my neighbour, Tarron during my stay in Brisbane many years back.

Instead of using sugar which is normal called in most Caramel Chicken recipe, here we are using Sweet Soy Sauce which is also known as "Kecap Manis" to sweeten the dish as well as giving it an unique fragrant and taste.


CARAMEL CHICKEN WITH POTATO


Although this dish might not look good as it is due to it's colour but I can assured you that you would love it's delicious sauce and taste which makes you having at least 2 bowl of rice to go with this dish.


(Serves: 4 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
1/2 Portion of Chicken(600g), cut into bite size pieces
1.5 Tablespoons Sesame/Cooking Oil
2 Medium Potato, peeled and cut into thick strips
2 Stalks of Spring Onion, cut into sections
1 Medium Red Onion, thinly sliced
4 Slices Ginger, thinly sliced
2 Garlic Cloves, lightly pound
2-3 Dried Chilli, optional
1 - 1.5 Tablespoon Sweet Soy Sauce(Kecap Manis)
1 Tablespoon Light Soy Sauce
Steamed Rice, to serve


Method:-
1. Trim and clean the chicken, pat dry and marinated it with 1 teaspoon of cornflour, light and dark soy sauce, ground pepper for at least 15 minutes before cooking time.

2. Lightly coat the potato strips with some cornflour and fry it with 1 teaspoon of oil till slightly golden brown, remove and set aside.

3. Heat up 1.5 tablespoons of sesame oil over medium low heat, saute ginger, garlic, onion, spring onion and dried chilli(soak in hot water to soften, remove seeds before use) till fragrant.

4. Add in chicken pieces and stir-fry until slightly golden in colour, stir in sweet and light soy sauce, return potatoes into pan, covered and cook for about 8 minutes with Happy Call Pan(pan locked) or until chicken is cooked through.

5. Check the taste and add extra sweet/light soy sauce according to your preference. Cook, stirring, for another 1 minute or until sauce thickens. Serve with steamed rice.
Note:-
~ You can use 4 chicken Maryland/breast meat for this recipe instead of 1/2 portion of chicken.

~ If you don't have dried chilli, you can replace it with red capsicum or red chilli.

Double Chocolate Banana Cake

Continue from my previous post on the Banana Chocolate Cake With Cranberry this double chocolate version is definitely with excitement! I made this Double Chocolate Banana Cake because it consists two of my boy's favourite ingredients which are "Banana" and "Dark Chocolate" and they definitely pairs well. If you want to impress your guests with something rich, soft and moist and quick for afternoon tea perhaps you can try baking this using either oven method or my super Happy Call Pan!

Banana Chocolate Cake With Cranberry

Banana Cake is always an old-fashioned family favourite when comes to tea-time or gatherings. I love it's unique fragrant release from the cake that kept lingering in your mouth after eating as well it also contribute extra points to the texture of the cake.

BANANA CHOCOLATE CAKE WITH CRANBERRY
(using Happy Call Pan)


After the two cake recipes that I have tested using Happy Call Pan(HCP), I decided to try whether I could apply normal cake recipe using this pan instead of oven. So I made this Banana Chocolate Cake with Cranberry which inspired from the latest banana cake recipe(HERE) that I have shared a few weeks back. Although the cake did not rise as high as what I expected compared to oven bake but the overall texture and taste of this cake is very well-received. Many who tried (during the blind taste test) didn't even realise that this cake is actually bake using HCP instead of oven.

(Makes: 30 x 25cm | Preparation: 10 minutes | Cooking: 30 minutes)

Ingredients:
225g All-Purpose Flour(plain flour)
170g Unsalted Butter, room temperature
170g Caster Sugar
2 Eggs(55g each)
2 Large Ripe Banana, mashed
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Vanilla Extract
Pinch of Salt
30ml of Milk
100g Dark Chocolate, chopped
60g Dried Cranberry
2 Tablespoons of RUM
1 Extra Banana for topping, optional


Method:-
1. Soak Cranberry(roughly chopped) with 2 Tablespoons of RUM for about 10 minutes. Sift together flour, baking powder, baking soda and salt together in a bowl and set aside.

2. Cream soft butter and caster sugar using a electric beater or hand whisk till pale and creamy.

3. Add one egg at a time together with vanilla extract, beat till combined before stirring in the mashed banana and cranberry mixture. Mix well.

4. Using a spatula, fold in sifted flours in 3 batches alternatively with milk till well combined. Lastly stir in the chopped chocolate.

5. Slowly scrap mixture into the lightly greased Happy Call Pan(grease 1 teaspoon of oil on both side of the pan using hand or paper towel). You can also add some banana slices on top of the batter before baking to enhance the look and taste.

6. Bake on low heat for 12 minutes, slowly shift the pan towards right side so that left side (1/2 of the HCP) of the pan is on the heat, bake for another 6 minutes. Next shift the pan back towards the left side so that right side(1/2 of the HCP) of the pan is on the heat. (the purpose of doing this is to even out the baking as well as give the cake a nice brown colour on the surface when flip over)

7. Lastly, flip the HCP over and bake for another 6 minutes(3 minutes left, 3 minutes right) to have a nice brown top.

FOR OVEN METHOD:-
1. Follow steps 1 - 4, pour cake batter into a greased 7" square or round tin.

2. Bake in preheated 180° Celsius oven for about 40 - 50 minutes or when a skewer inserted in the center and comes out clean.

Homemade Muah Chee In 15 Minutes

Muah Chee which also known as "麻糍" is a very common street food found in local Pasar Malam(night market) which cost about S$1.00 - S$2.00 per box. Since young this has being one of my favourite local snack other than Popiah(spring roll) and Nonya Kueh.

And from what I heard from the older generation they used to make "muah chee" by steaming the glutinous rice flour mixture rather than those shortcut methods that was invested using some modern kitchen gadget such as microwave. So with easy to follow recipe(s) and modern gadget(s) it is not difficult to make our own homemade muah chee as when we like.


MUAH CHEE
(麻糍)


Here with the help of my Happy Call Pressure Pan(HCP) I could easily make my favourite muah chee anytime of the day in less than 15 minutes time. You could control the texture of the muah chee from the amount of water use. For example; to achieve a softer texture the ratio of flour and water will be 1:1 whereas if you prefer more "Q(chewy)" texture you could reduce the water from 1 to 3/4 cup. If you are looking for new flavour you could also add in 1 - 2 tablespoons of black sesame powder into the glutinous rice flour and stir till combine with water.

(Serves: 2-3 | Preparation: 5 minutes | Cooking: 5-7 minutes)

Ingredients:
1 Cup Glutinous Rice Flour
3/4 - 1 Cup Water
1/2 Teaspoon Sugar
1.5 - 2 Tablespoons Shallot Oil/Cooking Oil

Peanut Coating:
1.5 Cup Peanut Powder
1 - 2 Tablespoons Caster Sugar, optional
1 Tablespoon White Sesame Seeds, optional


Method:-
1. Prepare shallot oil either using microwave method(HERE) or directly from the HCP. (saute 4 thinly sliced shallot with 2 tablespoons of oil in HCP over low heat till golden brown, remove the shallot and leave the oil in the pan)

2. Place glutinous rice flour and sugar in a mixing bowl, slowly stir in water with a whisk till well combined.

3. With HCP on medium low heat together with the shallot oil, slowly swirl in the flour mixture and stir it using a wooden spoon/chopstick or spatula till it begins to form a soft dough.

4. Lower the heat and continue to toss and cook the dough for another 3 - 5 minutes (depending on the heat) till the dough is smooth and slightly transparent on its surface. Remove and set aside on a oiled plate/container.

5. Using kitchen paper towel, wipe off the oil from the HCP and add in the sesame seeds. Toss it over low heat for about 2 minutes(stirring in between) before adding the peanut powder and stir till fragrant(another 2 minutes or so). Set aside to cool for about 3 minutes before stirring in the caster sugar and mix well.

6. Transfer the cooked glutinous rice dough to the peanut mixture, toss well and cut it into bite size pieces and serve.

Lastly if you don't have any HCP or non-stick pan but would like to try making this Asian snack, you could either use the Microwave Method from Little Teochew website(HERE) or Steaming Method at Anncoo Journal(HERE). I am sure either one of this would enable you to have some decent homemade Muah Chee for family gathering or party.

Time flies fast and today it's Friday again where we have another interesting recipe theme for our Photo Friday. Just for a quick introduce, the above Abacus Seeds is one of the Hakka's specialty where the family will get to eat them during special occasions or gatherings. Since olden time till now, the side ingredients have become varied such as minced meat, cuttlefish, mushrooms, dried shrimps, tau kwa (firm beancurd) and etc.

{Happy Call Pan Version} Apple Upside-down Cake

The Happy Call Pressure Pan (HCP) craze kept burning among Happy Call Chefs who contributes many wonderful recipes at Munch Ministry website as well as their HCP discussion group over at facebook. After my 1st successful attempt on baking the Pineapple Upside-down Cake using HCP I decide to use the same recipe with a twist to make this Apple Upside-down Cake since we have some granny smith sitting in the fridge compartment.  


APPLE UPSIDE-DOWN CAKE
(using Happy Call Pan)


This is indeed something that I am looking forward to serve as tea cake especially that soft layer of Apple and light Cinnamon fragrant that is sitting beautiful on top of the cake. The caramel is not too sweet and it definitely brings out the unique taste of this cake together with layer of texture from the apple, walnut and raisin.


(Make: 30 x 25cm | Preparation: 10 minutes | Cooking: 20 - 25 minutes)

Ingredients:
180g Plain Flour
3 Teaspoons Baking Powder
4 Large Egg(60g each)
90g Caster Sugar
1/2 Teaspoon Vanilla Extract
Grated Rind of 1 Lemon
60ml Unsalted Butter, Melt
60ml Grape Seeds Oil

Caramel Apple:
50g Unsalted Butter
100g Brown Sugar
50ml Water Water
2 Green Apple, skin remove and cored
1 Tablespoon Lemon Juice
1/4 Teaspoon Cinnamon Powder
50g Walnut
60g - 80g Golden Raisin

Method:-
1. To prepare the Caramel Apple; sliced the apple into about 0.5cm thick, lightly marinate it with lemon juice and cinnamon powder. Set aside.

2. Simmer unsalted butter and brown sugar over low heat in HCP until sugar dissolve and mixture begins to bubble. Sir in marinated apple slices, water and continue to simmer over low heat for another 3 - 5 minutes till apple slightly soften. (Pan close but don't lock it)

3. When done, turn off the heat and arrange the apple, walnut and half of the golden raisin as close as possible without too much gaps in between. Set aside and prepare the cake batter.

4. In a medium mixing bowl, whisk together eggs, sugar and vanilla extract with a hand mixer till well-mixed(about 1 minute) and mixture slightly turn pale in colour (you can refer to the step-by-step photo above).

5. Next whisk in the melt butter, grape seeds oil and follow by the sifted flour mixtures(plain flour + baking powder) and continue to stir until the flour is in-cooperate into the batter (the batter will be slightly like thick cream texture) before stirring in the remaining golden raisin(lightly coat raisin with flour so that it wont sink during baking)

5. Pour the mixture over the prepared caramel apple, smooth the top and bake(lock the pan) over very low heat for about 23 - 25 minutes(usually you will see steaming coming out when cake is ready) or until a skewer inserted and come out clean.

6. Carefully flip the pan over and bake the top of the cake for another 5 minutes to brown the top before removing it from stove.

Tips:-
~ You can also bake this Apple Upside-down Cake in the oven at 180 degree for about 40 - 50 minutes using an 8" round tin.

As I have mentioned before this is a very easy to prepare tea cake which can be done within 30 minutes if proper preparation is done before hand such as weighing the flour, sugar and replace melted butter with oil. So while catching up with your guest you could just pop into the kitchen and get ready the batter to bake this cake. And most importantly you need not need to be around the stove to look after the cake. All you need to do is set the timer on and check it out after 20 minutes of baking time. Remember on very LOW heat.

{Happy Call Pan Version} Pineapple Upside-down Cake

Yes! I am still experimenting with the Happy Call Pressure Pan (HCP) which is so versatile in different area of cooking. Example it can be use as a steamer to steam herbal chicken/fish, baking such as sweet potato, cereal chicken and this Pineapple Upside-down Cake and many others wonderful dishes which you can find HERE.

If you remember about two Friday back, I have shared with you a wonder Pineapple Upside-down Cake from Nami's website(read more HERE). And despite of the oven bake version I have tried using HCP to make this cake with a twist on the recipe and surprising it turns turns out well with soft and moist cake texture. And most importantly it cut short baking time by almost half and the end result was rather similar too.


PINEAPPLE UPSIDE-DOWN CAKE
(Using Happy Call Pan)

Although this recipe is done using Happy Call Pressure Pan (HCP) which is easier in term of cooking compared to oven but you can also apply this recipe using any non-stick pan which will yield similar result too. The secret to success on this recipe is to cook/bake the batter over very low heat(as high heat will burnt the surface of the cake and leave the internal batter uncooked).


(Make: 30 x 25cm | Preparation: 10 minutes | Cooking: 20 - 25 minutes)

Ingredients:
180g Plain Flour
3 Teaspoons Baking Powder
4 Large Egg(60g each)
90g Caster Sugar
120ml Unsalted Butter, Melt

Caramel Pineapple:
30g Unsalted Butter
40g Caster Sugar
4 Tablespoons Water
4 Pineapple Rings, cut into chunks
50g Walnut, optional


Method:-
1. To prepare the Caramel Pineapple; simmer unsalted butter and sugar over low heat in HCP until sugar dissolve and mixture became slightly brown in colour. Sir in pineapple cubes and water and continue to simmer over low heat for another 3 - 5 minutes. (Pan close but don't lock it)

2. When done, turn off the heat and arrange the pineapples and walnut as close as possible without too much gaps in between. Set aside and prepare the cake batter.

3. In a medium mixing bowl, whisk together eggs and sugar with a hand mixer till well-mixed(about 1 minute) and mixture slightly turn pale in colour (you can refer to the step-by-step photo above).

4. Next whisk in the melt butter and follow by the sifted flour mixture(plain flour + baking powder) and continue to stir until the flour is in-cooperate into the batter. (the batter will be slightly like thick cream texture)

5. Pour the mixture over the prepared caramel pineapple, smooth the top and bake(lock the pan) over very low heat for about 20 - 25 minutes or until a skewer inserted and come out clean.

Note:-
~ You can replace unsalted butter in the cake batter with corn oil or grape seeds oil for a lighter version. (For this recipe I used 60ml melted butter plus 60ml grape seeds oil)

~ If you prefer a brown top on the cake you can flip the pan over at the last 5 minutes so that the top will appear slightly brown in colour. (I omitted the flip over step but just gently shake the pan for a few times after 10 minutes of cooking time)

With this recipe you can mix and match to bake Apple/Pear/Peach Upside-up Cake using HCP in just 30 minutes time. And I am sure it will be well-received by your family and friends too. On my side I have also try leaving a slice of the cake till the next day and I am happy that it still taste soft and nice like the one freshly out from the pan.

Braised Bee Hoon With Pumpkin & Prawns

With Chinese New Year(CNY) celebration still going on until next Monday, 06 February 2012(the fifteen day of Chinese New Year). Most households are still in the festive mood on preparing auspicious CNY dishes with ingredients such as Abalone, Mushrooms, Black Moss, Sea Cucumber and etc.

In this post I am using simple ingredients such as rice vermicelli, pumpkin(金瓜 - 金玉满堂), prawns(嘻哈大笑) and mushrooms to prepare a very colourful and auspicious New Year noodle dish for the family.

Buttermilk Cereal Chicken

Some of you might notice that I have being "working hard" on my experiments(more recipes HERE) with the Happy Call Pressure Pan(HCP). By the look of the photo above, could you believe those golden and crispy drumlets are NEITHER deep-fried or oven baked!

Yes, for your information these yummy Buttermilk Cereal Chicken is done using HCP without deep-frying or bake. With just minimum amount of oil to grease the pan, you would be able to prepare more healthy and delicious food for the family. In this post, I would be sharing the recipe for this Buttermilk Cereal Chicken using HCP and Oven.

Above shows the comparison of Buttermilk Cereal Chicken done using Happy Call Pressure Pan (HCP) via  Oven Toaster base on the recipes shown below.


BUTTERMILK CEREAL CHICKEN
(Using Happy Call Pan Method)


Look at these golden drumlets with yummy cornflakes coating, isn't it make you crave for some upon looking at it now? These super easy finger food would be something worth trying during weekend if you have some "stock-up" cornflakes in the pantry. And I assure you this definitely taste better than those deep-fried chicken from those fastfood restaurants.


(serves: 2-3 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
6 Chicken Drumlets
1.5 Cups Cornflakes
1 Teaspoons Ground Paprika
1 Teaspoons Grated Lemon Rind
Pinch of Salt
1/4 Cup Plain Flour
3/4 Cup Buttermilk
Olive Oil Cooking Spray
Some Salad Greens, to serve


Method:-
1. Using your hands gently crush cornflakes into crumbs, add in paprika, lemon rinds, pepper, salt and stir until well combined.

2. Place flour and buttermilk in separate shallow dishes. Coat chicken drumlets one at a time with flour, shaking off excess before dipping in buttermilk.

4. While the drumlets are still moist (this will enable the cornflake crumbs to cling), coat it one at time in cornflakes mixture, pressing on with fingertips to secure the crumbs.

5. Place drumlets on preheated HCP (light brush the pan with cooking oil and preheat on low heat for 30 seconds) with pan lock and cook over very low heat for 5 minutes before flipping the pan over for another 5 minutes.

6. Rotate the pan a few times (cook about 20 minutes) or until golden and cooked through (leave the pan unlock for the last 5 minutes to achieve crispy outer skin). Serve with some salad greens.

Tip:-
- If you have time, marinate the chicken with some extra Ground Paprika(1 teaspoon), lemon rind and 1/2 tablespoon lemon juice for about 30 minutes.

~ You can cut a slit on the drumlets to enable the meat to cook faster.


BUTTERMILK CEREAL CHICKEN
(Oven Baked Method)


For those who don't own a Happy Call Pressure Pan, you could also try out this recipe using either Oven Toaster or normal Oven and the end-result is equally good. Just for a note, the outer skin of the chicken will remain crispy for an hour or so if use Oven baked compare to HCP which need to be consume as soon as possible.


(serves: 2-3 | Preparation: 10 minutes | Cooking: 30 minutes)

Ingredients:
6 Chicken Mid-joint
1.5 Cups Cornflakes
1 Teaspoons Ground Paprika
1 Teaspoons Grated Lemon Rind
1/4 Teaspoon Freshly Ground Black Pepper
Pinch of Salt
1/4 Cup Plain Flour
3/4 Cup Buttermilk
Olive Oil Cooking Spray
Some Salad Greens, to serve

Method:-
1. Preheat oven to 200°C. Line baking tray with baking paper and set aside.

2. Using your hands gently crush cornflakes into crumbs, add in paprika, lemon rinds, pepper, salt and stir until well combined. Set aside.

3. Place flour and buttermilk in separate shallow dishes. Coat mid-joints one at a time with flour, shaking off excess before dipping in buttermilk.

4. While the mid-joints are still moist (this will enable the cornflake crumbs to cling), coat it one at time in cornflakes mixture, pressing on with fingertips to secure the crumbs.

5. Place mid-joint prepared tray and lightly spray/brush with cooking oil.

6. Roast for 30 minutes(turning twice) or until golden and cooked through. Serve with some salad greens.

My family loves this crispy buttermilk chicken which is so flavorsome with it's tasty, tender and juicy meat together with the crispy and hint of spiciness on the outer skin. This is sure a good finger food to be serve during parties which goes well with sparking wine or beer.

Caramel Popcorn

Popcorn or popping corn is corn (maize) which expands from the kernel and puffs up when heated. There are many techniques for popping corn from either normal kitchen pan/pot, microwave to large scale popcorn machines. Usually Popcorn is eaten in movie theatres that served in choices such as salted or sweetened. But now instead of having it only in the cinema, we could also easily make them at home or purchase in major supermarkets.

About a year ago "Garrett Popcorn" which is a chain of popcorn outlets open it's first outlet in Resort World Sentosa and now they have many other outlets located in Singapore too. (detail HERE). I love their Caramel Flavour with Macadamia Nuts where I could enjoy my favourite nuts and popcorn coated with delicious caramel.


CARAMEL POPCORN


My boy prefers popcorn which is sweeten like those sold in the "cinema" compared to those available in the commercial shops (either nuts, chocolate,  cheese, colouring and etc). And since it is pretty easier to make "popcorn" at home using minimum ingredients and a cooking pot (or home type popcorn machine), we always "pop" some whenever we crave for them.


(serves: 4 | Preparation: 5 minutes | Cooking: 10 minutes)

Ingredients:
2 Tablespoons Vegetable Oil
1/2 Cup Corn Kernel

Caramel Sauce:
1/4 Cup Honey
1/4 Cup Golden Syrup
3/4 Cup Caster Sugar
100g Butter Chopped


Method:-
1. Line a big baking tray with baking papers, allowing 2cm overhang at long ends.

2. Heat oil in HCP(or any cooking pan) over medium heat. Add 2 - 3 corn kernels to test the heat. (Oil is hot enough when corn turns slowly in a circle)

3. Add remaining corn, cover and lock the pan(if using HCP). Shake pan gently when corn starts popping.

4. Remove from heat when corn stops popping. Transfer to a bowl and discard un-popped corn.

5. To make Caramel Sauce:- Clean the pan using kitchen paper towel after removing the popcorn. Place honey, golden syrup, sugar and butter in the pan. Stir and cook over very low heat for about 6 minutes or until sugar dissolved.

6. Next bring the mixture to boil without stirring for another 5 minutes or until light golden.

7. Work quickly, pour mixture over popcorn and stir to combine. Rest caramel popcorn in prepared lined baking tray to cool completely.

8. Break into pieces and served or stored in air-tight containers.


Although this recipe is done using Happy Call Pan (HCP) but you still can apply the same method using any heavy duty pan/pot to achieve the similar results. Have a lovely weekend everyone!!! Cheers!

Stir-fry Fu Gui Cai and Stuffed Mushrooms with Black Moss, Glutinous Rice Wine Chicken

Time flies, today is the 3rd day of Chinese Lunar New Year and I am sure most of you have being busying with the house to house visiting plus feasting on the delicious New Year goodies and food. Even though nowadays we could easily ordered or enjoy a hassle free reunion dinner in restaurants but I believe there are still many housewives, mothers, grandparents and etc busying with the preparation of their signature dishes for reunion dinner.

I remember when I was a kid, I always look forward to Chinese New Year to feast on those "special" dishes that my dad would only cook during New Year. And although I am not a very good cook like my dad, every Chinese New Year I would still try to cook up one or two of my self concoct dishes for my family.


STIR-FRY FU GUI CAI AND STUFFED MUSHROOM WITH BLACK MOSS
富贵花开


For this year reunion dinner, I have prepared this quick and easy stuffed mushrooms with minced meat and black moss dish to serve together the auspicious greens known as Fu Gui Cai(富贵菜). To make it more colourful and appetising, I have also added gingko nuts and wolfberries to enhance the presentation.

I would be submitting this Stir-fry Fu Gui Cai and Stuffed Mushrooms with Black Moss dish to this month Aspiring Baker #15 - Auspicious Dishes for CNY (January 2012) that is hosted by Wen of Wen's Delight.


(serves: 3-4 | Preparation: 15 minutes | Cooking: 10 minutes)

Ingredients:
6 - 8 Dried Medium Chinese Mushrooms, soaked in hot water till soften
150g Minced Meat
10g Black Moss(发菜), pre-soaked in water
10 Gingko Nuts
1 Floret of Fu Gui Cai(富贵菜)
Some Wolfberries
1 Red Chilli, sliced
3 Slices Ginger
3 Cloves Garlic
1 Teaspoon Cooking Wine
1 Teaspoon Cornflour + 1 Tablespoon Water, mixed well

Seasoning:
1 Tablespoon Oyster Sauce
1 Teaspoon Cornflour
1/2 Teaspoon Sesame Oil
1/2 Cooking Wine
Dash of Pepper

Sauce:
100ml Water
3 tablespoons Oyster Sauce
1 Teaspoon Sugar


Method:-
1. Mix minced meat, black moss and seasonings together and set aside to marinate for at least 10 minutes if time permit.

2. Stuff about 1 tablespoon of the minced meat mixture into the pre-soaked mushrooms.

3. Preheat Happy Call pan with about 1 tablespoon of oil and fry the stuffed mushrooms for about 1 minutes each side or until cooked. (HCP close but don't lock) Remove and set aside.

4. Add in another 1 tablespoon of oil to saute ginger and garlic till fragrant before adding in the Fu Gui Cai (remove the leaves from the floret, reserved 1/4 of the last portion to act as flower), chilli and gingko nuts. Close the pan and let it cook for another 1 minute before giving it a quick stir and close the pan for another 30 seconds.

5. Next add in the cooked stuffed mushrooms together with the sauce mixture and give the mixture a quick sit-fry and simmer on low heat for another 30 seconds before removing the vegetables.(arrange the vegetables in the middle of the plate)

6. Lastly with the mushrooms and gingko nuts still remains in the pan, add in corn star mixture and cooking wine and wolfberries, mix well with all the ingredients.

7. Remove and arrange mushrooms on serving plate around the fu gui cai. You can also decorate the mushroom with the wolfberries shown above.


Note:-
~ If you prefer you could replaced the dried mushroom with fresh shiitake mushrooms.

~ Pick up other greens such as broccoli, xiao ba cai or etc according to your preference if fu gui cai is not available.

~ For more varieties you could also add in fish or prawn paste to the minced meat mixture.



GLUTINOUS RICE WINE CHICKEN
黄酒鸡


This Glutinous Rice Wine Chicken(黄酒鸡) is one of the traditional Hakka dish eaten during confinement or Chinese New Year. To cook this dish usually they would buy kampong chicken instead of the normal chicken and simmer it together with their homemade Glutinous Rice Wine. According to the Hakka this dish is good to replenish lack of blood due to fatigue, malnutrition, cold chills, irregular menstruation, anemia, postpartum weakness and etc.


(serves: 2-3 | Preparation: 10 minutes | Cooking: 15 minutes)

Ingredients:
1/2 Chicken(about 600g), cut into bite sizes
1 Tablespoons of Sesame Oil
6 Slices of Ginger, cut into thin strips
200ml - 250ml of Glutinous Rice Wine
6 Red Dates, cut into thick slices
1/4 Teaspoon Salt

Marinade:
1 Teaspoon Cornflour
1 Teaspoon Sesame Oil
1 Teaspoon Light Soy sauce
1 Teaspoon Cooking Wine

Method:-
1. Marinate the chicken with cornflour, sesame oil, light soya sauce and cooking wine for at least 10 minutes.

2. Preheat Happy Call Pan on low heat with sesame oil and saute gingers till fragrance(close but don't lock).

3. Add in marinated chicken and cook on low heat for 1 minute (closed and locked), flip the pan over and cook for another 1 minute.

4. Next flip the pan back, add in rice wine and red dates, locked the pan and simmer over low heat for about 8 - 10 minutes till the chicken is tender and cooked through.

5. Lastly add in salt to taste and serve hot.
