Singapore Food Festival 2012 @ Waterfront Promenade, Marina Bay

This year's Singapore Food Festival 2012 kicked off last Friday, 13 July 2012 at the Waterfront Promenade, Marina Bay(map) instead of at the Clarke Quay Read Bridge like the previous years. With a larger space at the new venue, this is also the first time Singapore Food Festival (SFF) Village extended its' operation hours from 11.00am to 11.30pm daily from 13 - 22 July 2012, offering a total of 120 hours of glorious food.

During the ten days (13 July to 22 July) of glorious seafood, you will be able to sample delicious dishes from about 50 vendors under one roof at the SFF Food Village. And this year with more seating area up to 1,500 sitting capacity, I am sure everyone will gets the chance to try out their desire dishes.

Since one of the mode of payment is using NETS FlashPay Card, you are encourage to purchase the limited edition SFF 2012 NETS FlashPay Cards available for sale at the SFF Village. It is priced at S$12.00 with a stored value of S$7.00 and the special NETS FlashPay card also entitles a 20% discount for all purchased at the SFF Food Village.

One of the highlight for this year SFF 2012 Official Opening of the SFF 2012 was a live cooking demonstration of Chilli Crab by SFF Food Consultant, Chef Eric Teo. GUEST OF HONOR (GOH), Mr Teo Ser Luck, Minister of State for Trade And Industry also join in together with Chef Eric to complete the cooking of this authentic Singapore signature dish.

Above are some of the participating food stalls of this year Singapore Food Festival 2012. And there are about 50 stalls featuring international and local favourite like Chilli Crab, Black Pepper Crab, Prawn Noodles, Italian Seafood Cuisines, Cze Char and etc.

Here, you can excite your palate with the launch of the first Singapore Food Festival Seafood Platter which is presented by Seafood Paradise (under Paradise Group). This seafood platter offers five varieties of seafood dishes, such as their popular Chilli Crab or Signature Creamy Butter Crab, Stir-fried Live Geoduck with Asparagus in XO Sauce, Crisp-fried Prawns tossed with Salted Egg Yolk, Deep-fried Coral Trout in Nyonya Style and Supreme Seafood Fried Rice.

This is how the Seafood Platter will be served upon purchased and you get to choose from either Chilli Crab or Signature Creamy Butter Crab to go with the rest of the 4 items. I love the taste and texture of the fried rice which is enhanced with the added fish roes. The salted egg yolk prawns are tasty too as well as the nyonya style sauce which used to coat the coral trout.

In line with the Festival's seafood theme, Neo Garden has introduced Mussels to the well loved, thick Laksa gravy and coined the name "Signature Laksa's Mussel March" as the mussels are standing upright in marching stance. Apart from Laksa Mussel, their famous Curry ChickenHome-style Sin Chow Mee Hoo, Original and Buffalo-style Drumlets are also available at their stall in the SFF Food Village.

The Founder's Prawn Fritters from Neo Garden is a "must try" if you love this delicious homemade delicacy. Because of Mr Neo Kah Kiat's (founder and CEO of Neo Group Limited) love for this humble snacks, he had actually perfect this Prawn Fritters and make it into their signature dish which you cannot stop munching after one. The texture is so light and crispy plus the prawns are fresh juicy when bite.

To join in the waves of this year SFF 2012, Covelli Italian Bistro and Wine Bar also present their first ever Seafood Dessert which is known as "Squid Ink Meringue with Sea Urchin-Mango Cheese Mousse".  It is a very special dessert whereby you can taste two different distinctive flavour in one. I personally love the taste of the Sea Urchin Mango Cheese Mousse which gives it a light and refreshing after taste.

An interesting Baked Eggs snack from Ming Lang where they have other items such as Fish and Meatball Soup, Xiao Long Bao, Teppanyaki Squid, Takoyaki and etc.

Gardens by the Bay @ Bay South

Gardens by the Bay((滨海湾花园))is a theme garden which comprises of three distinctive waterfront gardens such as – Bay South, Bay East, and Bay Central. And the first phase of the Gardens, Bay South Garden, was officially opened to public on 29th June 2012.

Last Sunday, we decided to visit join in the crowds and explore the gardens after our Sunday church service. And since this is an impromptus visit, all photos shown here are taken using iPhone so pardon me for the quality of the photos. At the meantime, hope you would enjoy the post and have a rough ideas on what's going on inside the Gardens By The Bay.

Bay South is the largest garden with 54 hectares in area and it is located next to the Marina Bay Sands Hotel and a few minutes walk from Bayfront MRT Station.  This vibrant garden showcased the best of tropical horticulture and garden artistry, with a mass display of tropical flowers and iconic structures like the Supertrees, and the two conservatories (Flower Dome and Cloud Forest).


SUPERTREE GROVE AND OCBC SKYWAY


At the Supertree Grove, you can find 12 of these unique trees of up to 16 storeys in height while the the remaining six are placed in clusters of three at the Golden and Silver Gardens.

Ticket to the OCBC Skyway can be purchase near the entrance of the Skyway at the Supertree Grove for S$5.00 per entrance(re-entry is allow within the same day).

While up at the Skyway you a stroll along the 128-metre long walkway that connects the two 25 metre Supertrees at the Supertree Grove and take in a different view of the Gardens.

CLOUD FOREST


At another end of the garden, it compressed two different conservatories known as Flower Dome and Cloud Forest each showcasing different types of  forest trees, plants and from the Mediterranean and semi-arid subtropical regions.

The admission fees for both conservatories for Singaporean and PR is S$20.00 (Adult), S$18.00 (Senior citizen, 60 years and above) and S$12.00 (Child, 3 - 12 years old).

Enter the Cloud Forest, you see this 35-metre man-made mountain complete with the tallest indoor waterfall where visitors crowding around to get their best shots. The Cloud Forest portrays plant life from about 2,000-metres above sea level at the top of the mountain to around 1,000-metres at the bottom of the ravine.

FLOWER DOME


The Flower Dome replicates the cool-dry climate of Mediterranean and semi-arid subtropical regions like South Africa and parts of Europe like Spain and Italy. It has a collection of plants from deserts all over the world as well as showcases the adaptations of plants to arid environments. (Flower Dome will be slightly colder than Cloud Forest)

White Crystal Garden

There are about a total of 3,332 glass panels of 42 varying shapes and sizes in the Flower Dome which are designed and equipped with light sensor shadings to ensure that the flowers and plants in the conservatories received maximum light and yet maintaining at temperature within 23°C  -  25°C.

There is a flower field located at the central of the conservatory specially designed to reflect different seasons, festivals and themes. And this 850sq metre flower field can hold up to 18,000 blooms at one time.

These are only 3 parts of the Garden attractions that we have explored. Asia's Dining Destination Package - Behind-the-scenes Kitchen Tour at Waku Ghin, Guy Savoy And Santi

Continue from my previous post on the Asia's Dining Destination (ADD) package, here I am sharing with you one of their main highlight which is the "behind-the-scenes" kitchen tour at the renowned Waku Ghin, Guy Savoy and Santi. These are 3 of the celebrity chef restaurants which serves Japanese, Spanish and French style of fine dining cuisines and desserts.

And apart from the celebrity chef kitchens tour, our group also have a bonus chance on getting to know more about the hotel main kitchen (Heart-of-house tour) which is located at the basement area.


HEART-OF-HOUSE KITCHEN TOUR


On Day 2, after our breakfast we were lead by the Executive Chef of Marina Bay Sands, Chef Christopher to brief us on the work areas and main functions of the hotel kitchen. As photographing is restricted in the main kitchen areas due to security purpose there aren't many photos about this 45 minutes trip.

But during the trip we get to see how food are being prepared in different sections of the kitchen such as in-house bakery to prepare all the daily breads and pastries for most of the hotel cafes and restaurants. Personal lockers and laundry cabinets for those with uniforms as well as shoe shine service provided by their Public Area Department for all Team Members at S$2.00 each.

Guess what we found! A 7-11 store located at the Heart-of-House area in order for the team members to get their snacks or drinks during break-time or at their convenient. And for your information they do have a staff canteen where team members could have their 2 meals per day complimentary by the hotel too.


WAKU GHIN


After lunch, we proceed to the highlight of the day where we are able to have a close-up inside view of the celebrity chef restaurants and their kitchen. First stop we arrived at Waku Ghin which showcases the brilliance of Chef Tetsuya Wakuda in his only establishment outside of his world famous Sydney restaurant. All the work stations were surprisingly clean and sparking in their main kitchen and we also get a chance to see a cooking demonstration by one of their chef at their private dining area. During the cooking demo, the skillful chef prepared some quick and easy braised lobster which taste so juicy, flavorsome and succulent when bite.

The restaurant's dining concept is based on multi-faceted use of space, where diners can move from room to room, luxuriating over the dining experience.  They have Four unique rooms which offers private enclosures for small parties to experience the art of skilled chefs preparing food for each group personally. After meal, diners may move on to the drawing room to relax over desserts and coffee while admiring the view of the Singapore skyline.

GUY SAVOY


Next stop, we headed over to Guy Savoy which serves French style of fine dining cuisines and desserts. Selecting only the finest ingredients to prepare and serve with an uncompromising awareness is what makes a dining experience truly exceptional at Guy Savoy.  Here, guests can dine in its modernist dining room or choose to have a pre-dinner aperitif at the champagne bar. They even have a degustation bar menu which is available in the afternoon allowing guests to enjoy wines from every part of France and paired with a tasting portion of the famous Guy Savoy cuisine.

During the kitchen tour, we also get the chance to try their signature"Artichoke and Black Truffle Soup" which serves with toasted mushroom brioche and black truffle butter. Although this is my first time having Artichoke Soup but it's intense flavour and texture definitely has left a deep impression in my memories.  For dessert we get to try the floating island cube serves with earl grey tea chocolate and macrons. I would review more on Guy Savoy "Bites and Bubbles" menu in another post soon.

SANTI


Our 3rd stop is at SANTI where it combines Mediterranean culture with the authentic taste of the Catalan region in Spain. The cuisine is both basic and sophisticated using seasonal ingredients and meticulous attention to the preparation of the food.

Out of the three restaurants, I prefer the layout and decoration of Santi with cool grey stones and soft white linen which gives me a "at home" kind of cozy feeling upon entering the dining area. During the kitchen tour we are able to see how the savory and pastry chefs are dealing with their dishes plus get to know more on their ingredients used and storage.

To end the kitchen tour we also get to try their signature "Iberic Ham with Tomato Bread Toast" sever with traditional “Gazpazho Andaluz”. Indeed this is a great starter for pre-dinner dish and the Iberic Ham taste great with the tomato bread combi which brings up it unique flavour. SOUVENIR


At the end of the trip we are also given a Souvenir Bag each which contains a complimentary recipe each from the renowned restaurants mentioned above together with Marina Bay Sands Apron and Chef Hat too.
