[Fall Recipes] Mini Apple Cheesecake & Pumpkin Parmesan Scone

[Fall Recipes] Pumpkin Scones, Pumpkin Madeleine and Mini Apple Cheesecake with Salted Camera l Sauce
Every year during the month of October, we love to get our hands on some Fall Recipes such as "pumpkin" related bakes like Pumpkin Scones, Pumpkin Chiffon Cakes, Pumpkin Pie or some comfort casseroles for Halloween Party as well as Thanksgiving dinner. 

This October we are featuring two pumpkin related recipes over at Bake King recipe website which are Mini Apple Cheesecake (serve with salted caramel sauce) and Pumpkin Parmesan Scones.



MINI APPLE CHEESECAKE
(with salted caramel sauce)


Mini Apple Cheesecake with Salted Camera l Sauce
Between what is your favourite fall recipe? For us beside anything with pumpkin, we also tried a new recipe using apple to make Mini Apple Cheesecake. Each bite is filled with soft crunch of apple within the smooth cream cheese plus drizzle of homemade salted caramel to for that extra velvety taste.

Ingredients for apple cheesecake

(Yield: 8  | Preparation: 10 minutes | Baking: 30 minutes)

Ingredients:
  • 250g Cream Cheese
  • 1 Large Egg
  • 60g Caster Sugar
  • 1/4 Cup Sour Cream
  • 1 Teaspoon Vanilla Extract
  • 2 Green Apple, skin removed and cut into cubes
  • 1 Teaspoon Lemon Juice
  • Zest of 1 Lemon
  • 2 Tablespoons Cinnamon Sugar

  • Biscuit Base:
  • 150g Oreo / Digestive Biscuit, crashed
  • 1 Tablespoon Caster Sugar
  • 60g Unsalted Butter, melted

SALTED CARAMEL SAUCE


Homemade Salted Caramel Sauce
Other than dark chocolate sauce, the second on my list would be salted caramel because I love the combination of sweet and savory taste which goes well with most of the bakes. And with simple ingredients like butter, cream and sugar; you can easily prepare your own fuss-free Homemade Caramel Sauce in less than 20 minutes (you can refer to a quick video clip below) .

Ingredients for salted caramel sauce.

(Yield: 250ml | Preparation: 5 minutes | Cooking: 10 minutes)

Ingredients:
  • 1 Cup Caster Sugar
  • 65ml Water
  • 1/4 Cup Unsalted Butter
  • 1/2 Cup Heavy Cream
  • 1/2 Teaspoon Sea Salt Flakes

Steps on preparing the salted caramel sauce.
Method:
1. Caramel Sauce: Whisking constantly to dissolve sugar and water over medium heat in a heavy-duty saucepan.

2. Once mixture comes to boil, stop whisking and allow it to simmer until it reaches dark amber colour (swirl pan occasionally during simmering).

3. Next immediately whisk in butter until it dissolve completely, remove saucepan from heat.

4. Carefully pour in heavy cream and whisk till combine.

5. Lastly stir in sea salt and pour mixture into a glass jar to cool completely.

6. Cover caramel tightly and it can be store for up to 2 weeks in the refrigerator. To use just warm caramel up for a few seconds.

PUMPKIN PARMESAN SCONES


Pumpkin And Parmesan Scones
Scones is a cross between cake and bread that usually serve warm with jam or dollop of cream together with a pot of hot tea. You can either shaped the scone into rounds or scored the dough into six - eight triangles (shown above) and bake till crisp on the outside and soft in the centre. 

Ingredients for Pumpkin Parmesan Scone

(Yield: 8 wedges | Preparation: 10 minutes | Baking: 25 minutes)

Ingredients:
  • 300g Pumpkin Cubes
  • 2½ Cup Bake King Self-Raising Flour
  • 1 Cup Finely Grated Parmesan
  • ½ Cup Butter Milk
  • 50g Pumpkin Seeds

  • Egg Wash:
  • 1 Egg Yolk
  • 1 Tablespoon Buttermilk

Share and divide the prepared dough into 8 - 12 wedges before baking.

[Pumpkin Parmesan Scone] 南瓜芝士司康
司康饼(scone)据说是起源于苏格兰人的一种快速面包而它的名字是来自苏格兰皇室加冕的地方,因那里有一块历史长久并被称为司康之石 (Stone of Scone)的石头。司康的外脆内松软的口感在于司康的做法,要拿捏好小麦粉,牛油(必需要冷),牛奶和鸡蛋的混合过程是做司康的关键。除此以外司康的形状可以做成圆形、方形,三角形等, 口味也可因各人喜好做成甜或咸当为早餐与下午点心。

这个用南瓜泥和帕尔玛奶酪 (Grated Parmesan Cheese) 做的南瓜芝士司康和平常的食谱有点不同因为它并没有用牛油而且用南瓜泥来取代。由于加入了南瓜泥和帕尔玛奶酪所以吃起来口味介于甜咸之间,用来配冰咖啡或牛奶最好.

南瓜芝士司康

材料:
2.5杯自发面粉
300克南瓜,切小方块
1杯帕马森干酪(Grated Parmesan Cheese)
半杯酸奶油 (sour cream),冷却
50克南瓜籽

蛋液:
1个蛋黄
1汤匙酸奶油

司康做法:
1. 先将烤箱预热到200摄氏度,然后在烤盘上铺上烘焙纸备用。

2. 把自发面粉和帕马森干酪倒入搅拌碗中拌均匀。

3. 接着加入酸奶油和南瓜泥,用牛油刀慢慢地把里面所有的材料拌成一团才加一半的南瓜籽然后捏成一个软面团。

4. 桌面撒少许面粉之后将面团揉成2.5厘米厚的圆形。按对角线切成8或12个三角形便放在铺上烘焙纸的烤盘。

5. 进烤箱前先刷上蛋液然后烘烤约25分钟或至表面成金黄色,取出后放网架上冷却。

温馨小提示
自制酸奶油:在量杯中加入1汤匙柠檬汁,然后倒入足够的牛奶到1杯的测量线然后放一旁静等10分钟即可。


Pumpkin Parmesan Scones
Although in Singapore, dressing up in costumes playing door-to-door "treat and trick" or Halloween theme parties are not as popular like those in western countries.
