Steamed Crab With Glutinous Rice

Saw this interesting dish from a Chinese New Year recipe book and I decided to give it a try. And after searching one of the main ingredients; Crab for a few days I finally bought one this morning. So after soaking the glutinous rice for a few hours, season it with seasoning we are ready to place the crab on it and off it goes into the bamboo steamer. If you don't have any bamboo steamer you can just use any of a suitable size pot and steaming plate too.




Ingredients:
1 - 2 Mud Crab, depending on the size
300g Glutinous Rice
3 Dried Black Mushrooms
30g Dried Shrimps
1 Shallot(sliced)
1 Stalk Spring Onion, cut into sections
3 Slices Of Ginger

Seasoning:
1 Teaspoon Light Soy Sauce
2 Teaspoons Dark Soy Sauce
1/2 Teaspoon Sugar
3 Tablespoons Water

Methods:
1. Rinse glutinous rice, soak overnight and drain well then put into a steamer and steam for 1/2 hour over high heat and keep warm.
2. Soak black mushrooms until soft, remove the stems and dices. Rinse and dice dried shrimps.
3. Heat 2 tablespoons of oil in wok, stir fry shallot until fragrant, add mushrooms and dried shrimps then fry for a minute or two, add in seasoning and bring it to boil.
4. Stir seasoning into the glutinous rice and mix well then transfer it into a bamboo steamer and keep warm.
5. Gut the crabs, wash and cut into large pieces and arrange crab on the prepared glutinous rice with some spring onion and ginger slices. Top with shell and steam on high heat for 10 minutes. Serve hot.
