Garden Vegetable Frittata
My family is a big fan of eggs especially when they are prepared in either scrambled, boiled or fried. And recently we are in love with baked frittata which can be easily prepared by throwing in couple of root vegetables such as carrot, potato, onion and etc together with eggs and cheese before popping the mixture into the oven.

Between you could also mix and match your favourite ingredients to make asparagus, potato and bacon or even chorizo/sausage frittata depending on your family preference. Here we have a meatless version by using garden vegetables that I sliced effortlessly with my Bosch kitchen machine (you could refer to the picture below).


One of the features for MaxxiMUM Kitchen Machine is to enable easy cutting of cheese, fruits, vegetables and etc using the continuous-feed shredder that comes in 4 different cutting disc. The discs usually works with setting 5 - 7 depending on its purpose.

Garden Vegetable Frittata
Since festive season is around the corner, you might want to try your hands on this Garden Vegetable Frittata which is somehow like a cross between omelette and quiche that you can serve it for either breakfast or brunch. Furthermore this yummy dish is also loaded with protein from the eggs and cheese making it a great choice to boost up your energy level.

Ingredients for garden vegetable frittata

(Yield: 7" Round Dish | Preparation: 10 minutes | Cooking: 25 - 30 minutes)

Ingredients:
  • 100g Sliced Zucchini
  • 150g Sliced Butternut Squash
  • 1 Medium Potato (150g)
  • 1/2 Red Bell Pepper
  • 1 Medium Onion, sliced
  • 8 Button Mushroom, sliced
  • 2 Clove Garlic, minced
  • 3 Eggs
  • 100ml Milk
  • 1 Cup Shredded Cheddar / Mozzarella Cheese
  • Salt and pepper to taste

Steps on slicing the continuous-feed shredder 
Method:
1. Preheat oven to 180°C, grease a 7” round dish and set aside.

2. Using the Professional Supercut slicing disc from the MaxxiMUM (MUMXL40G), slice zucchini, butternut squash, potato, mushroom, bell pepper and onion on Setting 5.

3. To shred the cheese, change slicing disc to shredding disc (using the coarse side) and work on Setting 7.

4. Heat 1 tablespoon oil in a large frying pan over medium heat. Sauté garlic till fragrant, add in sliced vegetables and cook for 3 minutes or until soft.

5. Transfer mixture to the greased baking dish and top with shredded cheese.

6. Whisk eggs, milk and dry parsley (if using) until combined. Season with salt and pepper then pour over to the vegetables.

7. Bake frittata in preheated oven for 25 - 30 minutes or until set and light golden brown.

8. Remove and stand aside for 5 minutes before serving with salad greens.

Garden Vegetable Frittata - 蔬菜烘蛋
蔬菜烘蛋是一道简单又有营养的早餐或主菜。它的做法很随意,主要是用蛋和一些蔬菜如;甜椒,夏南瓜,马铃薯,蕃茄和洋蔥等加芝士一起烘烤。每一口吃起来有香甜的蔬菜味和濃郁的芝士香真是绝配。但由于每个人的喜好不同所以您也可以采用不同的食材如香肠,蘑菇,火腿等来变换不同的搭配。

田园蔬菜烘蛋

材料:
  • 100克西夏南瓜,切片
  • 150克南瓜,切片
  • 1个马铃薯(约150克)
  • 1/2个红甜椒
  • 1个中等大小的洋葱,切成薄片
  • 8个蘑菇,切片
  • 2瓣大蒜,切碎
  • 3个鸡蛋
  • 100毫升牛奶
  • 1杯切达奶酪/马苏里拉奶酪,切丝
  • 盐和胡椒,少许

做法:
1. 先把所有蔬菜洗淨。用 MaxxiMUM (MUMXL40G) 的切片刀把蔬菜分别用5号速度切成薄片,备用。

2. 把切片刀转换成刮丝刀,别用7号速度把奶酪切丝。雞蛋加牛奶搅拌均匀,加盐和胡椒调味,备用。

3. 平底鍋加熱,淋上少许油然後加入洋蔥,蒜头和其余的蔬菜炒至7成熟。捞起并放进涂抹油的7"烤盘里。

4. 接着将准备好的蛋液均勻地倒在蔬菜面上,然後撒上起司丝。

5. 放进预热180摄氏度的烤箱烤25分钟至起司溶化即可享用。

6. 如果沒有烤箱,可以用平底鍋蓋上蓋以小火煎15分鐘。
