5 Recipes Using Spare Ribs

Spare ribs are inexpensive ingredients which are full of flavour and it can be used in many different ways such as barbecued, roasted, steamed or slow-cooked. In Singapore spare ribs are often used to prepare one of our well-known local dish; Bak Kut Teh (肉骨茶) which we can replicate at home using store bought spice pack too.

Here we have 5 Asian-style spare rib recipes which you might be interested to try out over the weekend. All the ingredients used can be easily obtain from local supermarkets and I have also included demo clips and Chinese version of the recipes on how to prepare these dishes.



HONEY SPARE RIBS
(蜜汁排骨)


[Spare Ribs Recipe] Honey Spare Ribs
Made this Honey Spare Ribs (蜜汁排骨) sometime back because we are craving for spare ribs. These all-time family faavouite spare ribs dish are deep-fried till golden brown before coated with a layer of sweet and savoury honey sauce that is super finger licking.

Ingredients for honey spare ribs

(Yield: 4 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
500g spare ribs, cut into bite size
1 teaspoon cornflour
1 teaspoon light soy sauce
3 shallot, sliced
1 stalk spring onion, cut into section
15ml rice or cooking wine

Honey Sauce:
2 tablespoons honey
1 teaspoon sugar
1 tablespoon white vinegar
1/2 teaspoon light soya sauce
1 teaspoon sesame seeds
1/2 tablespoon tomato sauce, optional

Method:
1. Marinate spare ribs for at least 30 minutes or overnight in the fridge.

2. Lightly coat the spare ribs with cornflour then deep-fried till golden brown, remove and set aside.

3. Leave about 1 teaspoon of oil in the pan, add in honey sauce mixture and bring it to simmer.

4. Toss in spare ribs till well coated with the sauce. Simmer on medium heat till sauce thicken.

蜜汁排骨
排骨料理不论什么时候都是餐桌上的一道美味佳肴。尤其是这道甜醇酸美的蜜汁排骨更是令人食指大动胃口大开。而它的秘诀就在于选用的蜂蜜和如何处理排骨。

(分量: 4人份 | 准备: 10 分钟 | 烹煮时间: 20 分钟)
材料:
500克排骨
1茶匙玉米粉
1茶匙生抽
3棵小葱头,切片
1棵青葱,切段
15毫升米或料理酒

蜜汁酱料:
2汤匙蜂蜜
1汤匙白醋
1茶匙糖
1/2茶匙生抽
1茶匙芝麻
1/2汤匙番茄酱

做法:
1. 处理好的排骨用腌料腌至少30分钟或隔夜。

2. 将腌好的排骨粘上少许玉米粉,然后油炸至金黄色,捞出待用。

3. 热锅里保留大约1茶匙的油,接着倒入混合好的蜜汁酱料。

4. 最后加入排骨快速翻抄直到酱汁完全被吸收。撒些芝麻即可上桌。



BRAISED TOMATO SPARE RIBS
(番茄排骨)


[Spare Ribs Recipe] Braised Tomato Spare Ribs
As we all know tomato is a very nutritious ingredients. By using it to cook this simple Braised Tomato Spare Ribs it actually suits well as a appetizing dish for hot summer weather. The taste is surprisingly good with light scent of sweet and sour tomato flavour and you can even have it with some crusty bread instead of rice.

Ingredients for braised tomato spare ribs.

(Yield: 4 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
500g spare ribs, cut into bite size
4 medium tomato, seeds removed & quarters
3 medium potato, cut into 1" cubes
1 medium carrot, cut into 1" cubes
1 brown onion, diced
5 tablespoons tomato sauce
1/2 teaspoon dark soy sauce, optional
250ml hot water
Spring onion, sliced

Method:
1. Blanch spare ribs with 2 slices of ginger and some spring onion for 2 minutes. Rinse, drain and set aside.

Cooking Tips:
1. If you have time you can slightly pan-fry the spare ribs for a few minutes till slight browned in colour before adding into steps 4.

Steps on preparing the braised tomato spare ribs
2. Preheat a heavy duty pan or cast iron pot with 1 tablespoon of oil; sauté onion, carrot and potato for 3 minutes on low heat before adding in tomato.

3. Continue to cook mixture for another 2 minutes till tomato soften.

4. Stir in tomato sauce, dark soy sauce and spare ribs then cook a minute before adding in hot water and some spring onion.

5. Bring mixture to boil, simmer over low heat for 20 - 25 minutes or until potato and spare ribs are soften.

6. To serve, top with extra chopped spring onion and freshly ground pepper.

番茄排骨 - Braised Tomato Spare Ribs

番茄可是其中一种营养丰富的食材所以用它来做这道非常简单的番茄排骨可是炎热夏天的开胃好菜(或汤)。它的味道出奇的好而且还带有番茄的清香味吃起来一点也不腻。

番茄排骨

(分量: 4人份 | 准备: 10 分钟 | 烹煮时间: 20 分钟)
材料:
500克排骨,切小块
番茄4个,种子去除切块
3个马铃薯,切成1"方块
1条胡萝卜,切成1"方块
1个褐色洋葱,切丁
5汤匙番茄酱
1/2茶匙黑酱油,可免
250毫升热水
青葱,切段

做法:
1. 准备一锅热水然后将冲洗干净的,姜片和青葱一起煮2分钟。捞起冲洗一下,沥干备用。

2. 预热炖锅再加入1汤匙油爆香洋葱,马铃薯和胡萝卜(约3分钟)之后才放番茄。

3. 用中小火继续煮2分钟直到番茄变软。

4. 这时候拌入番茄酱,黑酱油和排骨翻抄1分钟。

5. 最后加热水和一些葱段用小火焖煮20 - 25分钟,直到排骨和2分钟都变软。

6. 上菜是在上面撒些葱花和胡椒粉即可。

小贴士
1. 如果有时间沸水后的排骨可以先稍微煎到表面呈金黄色才加入步骤4。



BRAISED PUMPKIN SPARE RIBS
(焖金瓜排骨)


[Spare Ribs Recipe] Braised Pumpkin Spare Ribs
Pumpkin makes great desserts such as pumpkin pie, cheesecake and pudding which are our all-time favourite. Besides dessert I also like to add a wedge of it to flavour our soup with nature sweetness. Here I want to share a savoury dish using pumpkin and spare ribs which is absolutely delicious. Imagine the tender ribs are being surround with chunks of soft pumpkin and hint of spicy taste from the chilli which make this heavenly match dish.

Ingredients for braised pumpkin spare ribs

(Yield: 4 | Preparation: 10 minutes | Cooking: 20 minutes)

Ingredients:
500g spare ribs, cut into bite size
300g pumpkin, cut into 1" chunks
1/2 tablespoon fermented black beans
2 bird eyes chilli, chopped
1 teaspoon minced garlic
2 stalks spring onion, cut into 2" sections
1/2 tablespoon oyster sauce
150ml hot water

Marinade:
1/2 tablespoon cooking wine
1/2 tablespoon light soy sauce
1/2 tablespoon cornflour
1 teaspoon ginger juice
1 teaspoon sesame oil

Method:
1. Marinate spare ribs with the above marinade for at least 30 minutes or overnight in the fridge.

2. Lightly coat marinated spare ribs with cornflour and set aside. Preheat frying pan with 1 tablespoon oil and seal the ribs on both side for 2 minutes or until browned.

3. Stir in minced garlic and fermented black bean then give it a quick toss till fragrant. Add in pumpkin, chilli, oyster sauce, half of spring onion and continue to fry for another minute.

4. Lastly add in hot water and simmer over low heat for 15 minutes until pumpkin and meat are tender.

5. Stir in remaining spring onion and serve immediately.

焖金瓜排骨 - Braised Pumpkin Spare Ribs
金瓜排骨可是一道非常营养丰富的家常小菜。而且到了深秋初冬的时候澳洲的南瓜更是便宜又漂亮。因此用它来做这道菜简直是太棒了,又香甜又可口。况且南瓜本性温又有润肺益气,治咳止喘,疗肺痈与便秘等等的功效。


焖金瓜排骨

(分量: 4人份 | 准备: 10 分钟 | 烹煮时间: 20 分钟)
材料:
500克排骨,切小块
300克南瓜,切成1"放块
1/2汤匙黑豆豉
2根小辣椒,切碎
1茶匙蒜末
2棵青葱,切成小段
1/2汤匙蚝油
150毫升热水

腌料:
1/2汤匙料酒
1/2汤匙淡酱油
1/2汤匙生粉
1茶匙生姜汁
1茶匙香油

做法:
1.处理好的排骨用腌料腌至少30分钟或隔夜。

2.将腌好的排骨粘上少许玉米粉,然后用1汤匙油煎2分钟到或直到金黄色。

3.接着拌入蒜末和黑豆豉和排骨一起爆香30秒。倒入南瓜,辣椒,蚝油和一部分的青葱再继续翻炒1 分钟。

4.最后加入热水并用小火焖15分钟或直至排骨和南瓜变的软。

5.起锅前加入少许葱段即可食用。



BRAISED SPARE RIBS WITH POTATO
(焖马铃薯排骨)


This Braised Spare Ribs with Potato is one of my boy's favourite and I often swap the spareribs with chicken pieces of wings for a change. You can modify the recipe by adding your preference ingredients and serive it as one pot dish together with steamed rice. or noodles.

[Weeknight Dinner] Ingredients for braised pork rids with potato

(Yield: 2-3 | Preparation: 10 minutes | Cooking: 25 minutes)

Ingredients:
8 Spare Ribs (600g), whole or chop into half
2 Large Potato, cut into chunks
1 Small Carrot, cut into chunks
1 Medium Red Onion, cut into wedges
3 Cloves Garlic, whole/minced
12/ Tablespoon Oyster Sauce
1 Stalk Spring Onion, cut into section
Hard-boiled Eggs, optional

Marinade:
2 Tablespoons Cooking Wine
1 Teaspoon Sesame Oil
1 Teaspoon Light Soy Sauce
1/2 Teaspoon dark soy sauce
1 Teaspoon Grated Ginger Juice Dash of Pepper
1 Tablespoon Cornflour

Method:
1. Marinate spare ribs for at least 30 minutes or overnight in the fridge before cooking.

2. Shallow fry onion and garlic till fragrant,  move to the set of the pan or heavy duty pot.

3. Pan-fry spare ribs for 2 minutes on each side until browned.

4. Add in potato, carrot, half portion of spring onion and give it a few stirs.

5. Next stir in 1/2 tablespoon of oyster sauce (you can replace 1/4 portion of chicken stock cube with oyster sauce too) and 1 teaspoon dark soy sauce and cook for 20 seconds before adding in 300ml of hot water and eggs.

6. Bring the mixture to boil then lower the heat and simmer for 25 minutes or until potato and meat are soften.



COKE PORK RIBS
(可乐排骨)


Coke Pork Ribs is a super easy and yet finger licking good dish which you can easily replicate at home using either spare ribs or chicken wings. For us we prefer spare ribs compared to chicken because of it's texture and taste which makes it similar to Pai Gu Wang (排骨王). If you prefer a darker colour for this dish, you can add an extra 1/2 tablespoon of dark soy sauce while simmering so that it will end up with a deep glossy coating and caramelized flavor.
