[Recipe + Video] Cajun Seafood Parcel - 烤海鲜包裹

"Eat with your hands and don't be shy" is the slogan for today's post. Although I am not a huge seafood fans but I always wanted to find an opportunity to try boiled seafood in bag which is quite popular get-together dish in Singapore where you can enjoy with a group of friends. With that in mind, I replicate this Cajun Seafood Parcel by seasoning the ingredients with Cajun spices, wrap and bake until cooked.

We love the sauce underneath which was flavourful and pack with hint of sweet, spicy & buttery taste. Oh ya make sure you remember to toss the mixture with the sauce before serving to enhance the flavour.



CAJUN SEAFOOD PARCEL
(烤海鲜包裹)


This homecook version was inspired by one of my Facebook friend, Shirley who used Cajun spices as the key marinade. To start with you can simply use any seafood of your choice but for us we preferred flower crabs (will try mud crab or crayfish next round) for its natural sweetness, prawns and fish fillet together with pumpkin, sweetcorn and broccoli for a complete variety of meal and vegetables.


(Yield: 2-3 servings | Preparation: 10 mins  | Baking Time: 25 mins)

Ingredients:
2 medium flower crabs, halved
10 big prawns
200g grouper fillets, cut into 1.5" chunks
1 pearl sweetcorn, cut into 2" thick slices
150g pumpkin, cut into cubes
50g unsalted butter, cubes
1/2 lemon, cut into chunks
100g blanch broccoli florets, optional

Seasoning:
1 tablespoon Cajun spices
1 teaspoon paprika (or 1/2 teaspoon)
dash of dried parsley
1/4 teaspoon freshly ground black pepper
pinch of sea salt flakes

Method:
1. Trim and clean flower crabs (remove the shell, trim the legs and cut the body into half) then marinate it together with prawn and fish using the above seasoning ingredients for at least 15 minutes to an hour in the fridge.

2. Toss sweetcorn and pumpkin with drizzle of olive oil and ground pepper, set aside.

3. Get a large piece of aluminum foil (at least 50cm long), top it with a layer of parchment paper then arrange marinated seafood, pumpkin, sweetcorn on it (you can pack them into two individual parcel for quick and even cooking time).

4. Lastly top with butter and lemon then fold the sides together to form a parcel.

5. Place seafood parcel on baking tray and bake in preheated 180°C (356°F) oven (air fryer or oven toaster) for 25 minutes or until meat is cooked. (open the parcel and check the meat after 25 minutes)

"用你的双手吃,不要害羞" 是这道菜的口号。虽然我不是非常喜欢海鲜类的食物,但我却一直想找个机会到餐厅去尝尝水煮袋海鲜这道料理。就因如此我便用Cajun 香料和一些海鲜加南瓜,玉米及少许的辣椒粉做了这道烤海鲜包裹。家人都喜欢包裹里那香甜浓郁的海鲜汁,带点幸辣味尺起来非常开味。

(分量: 3人份    | 准备: 15 分钟   | 烹煮时间: 25 分钟)

材料:
2只中型花蟹,切半
10只大虾
200克鱼柳,切成1.5" 块状
1条珍珠玉米,切成2" 厚片
150克南瓜,切成1" 方块状
50克牛油, 切成1" 方块状
1/2柠檬,切块
100克西兰花,烫熟

调味料:
1汤匙 Cajun 香料
1茶匙辣椒粉(或1/2茶匙)
少许干欧芹
1/4茶匙黑胡椒粉
少许海盐片

做法:
1. 花螃洗刷干净后除去外壳并用剪刀把身体剪半,接着把它和鱼虾一起用调味料腌至少15分钟或一小时以上。

2. 玉米和南瓜用少许橄榄油和胡椒粉拌匀,备用。

3. 取一大张铝箔纸(大约50厘米长)并在上面扑一张大小一样的烘焙纸再放腌制好的海鲜,南瓜和玉米块。

4. 最后加上牛油和柠檬块包起来 (你可以把材料分开成两分,这样烘烤时比较容易快熟)放进预热180摄氏度的烤箱(空气炸锅或小烤箱)烤25分钟或直到肉煮熟(25分钟后打开包裹检查肉的熟度)。

5. 上桌前打开包裹把里面的东西搅拌一下即可享用。
