Majestic Bay Seafood Restaurant At Gardens By The Bay

Located below the Flower Dome (gardens by the bay), Majestic Bay Seafood Restaurant is a newest venture for Chef Yong Bing Ngen. The 110 seater restaurant offers a spacious layout for both family and group dining as well as a private room that can occupy up to 14 guests. With it's must try Signature Bay's Kopi Crab and Baked Rice and Assorted Seafood in Chef’s Recipe Sauce, below are some of the dishes that we have tried two weeks ago.

For starter, we get to try 3 selections of Dim Sum items from their menu which are Seared Chilli Crab Meat Bun, Steamed Shanghai Dumpling Pork and Steamed Siew Mai Dumpling. The Chilli Crab Meat Bun was good with a crispy outer skin and nutty flavour from the sesame seeds. When bite, it burst with a spicy sweet chilli crab sauce which makes you having no intention to share the rest of the bun with those sitting at your table.

On the other hand, the Steamed Shanghai Dumpling Pork is surprisingly good with a thin layer of outer skin wrapping the meat filling and tasty soup broth.

Steamed Siew Mai Dumpling - 香菇蒸烧卖 (S$4.50 for 4 pcs)


Being a Cantonese styled restaurant, Majestic Bay offers quite a range of soup menu from Soup Of The Day - 瓦煲老火汤 (S$18.00 for 2-4 pax, S$27.00 for 5-8 pax) to Chicken soup with cordyceps flower, conpoy and chinese ham or Bird nest with abalone and assorted seafood treasure soup and etc. And as as soup lover, I definitely love their double-boiled soup which was boiled over low heat till thick and flavorsome. 

Steamed, Live Prawns, Minced Garlic - 金银蒜蒸开边生虾 (Market price) uses fresh live prawns that are being shelled and butterfly in order to reduce the cooking time as well as making it easier for guests to enjoy the dish without dirtying the fingers to shell the prawns. Overall the prawns were sweet and fresh but the minced garlic taste was a bit strong towards my liking.


The Bay’s Signature “Kopi” Sauce Live Crab - 冠华咖啡焗肉蟹 (market price) used Sri Lankan Mud Crab which was prepared using 3 different types of coffee beans such as Arabica, Brazilian and White Coffee together with Apple Jam, Butter and Shaoxing wine to achieve a caramelized taste. When the crab was presented on the table,  the serving staff will pour Shaoxing wine and coffee liquor over it and light up the crab to creating a "Fire Crab" effect sending coffee aroma into the air.

But although I am a coffee lover I still prefer salted egg crab as compared to this.

{MUST TRY} Baked Rice, Assorted Seafood, Chef’s Recipe Sauce - 海鲜大烩焗饭 (S$68.00 for 4-6 pax, S$88.00 for 7-12 pax) is definitely the HIT for that night with the 7 of us all agreed and raising our hands crowing it the best dish fellow by their signature Bay's Kopi Sauce Crab.

According to Janice, this dish was inspired by one of the popular Portuguese dish Chef Yong sampled in Macau and he adapted the recipe for local palate. The plate of seafood baked rice was indeed filled with treasures such as baby abalone, scallops, mussels, prawns and etc that topped with spiced cream sauce and generous amount of mozzarella cheese. Overall the dish reminded us of Paella but with a hint of spicy Japanese Curry taste that blend well with the sauce and make the whole dish very addicting.

{MUST TRY} Pan-fried Radish Cake With Prawns and XO Chilli Sauce - 极品酱鲜虾萝卜糕 (S$20.00; S$30.00) was one of the highlight for that night. Although this dish might be pricey as compared to those served in foodcourts or dim sum restaurants but with generous amount of shelled prawns and chunks of homemade radish cake that pair with their in-house XO chilli sauce. I am sure you won't want to give this a miss.

Sweet’s temptation (S$20.00) which suitable for 4 person includes Glutinous Rice Dumpling with Fresh Cream Stuffing; Glutinous Rice Dumpling with Yam Paste Stuffing (coated with shredded coconut); Steamed Custard Bun with Salted Egg Yolk and Bay’s Chinese Pancake with Red Bean Paste.

Although their Salted Egg Custard Bun taste great with soft outer skin and savory filling but my personal preference goes to their Glutinous Rice Dumpling with Yam Paste Stuffing and Bay’s Chinese Pancake with Red Bean Paste. Love the crispy outer skin of the Chinese Pancake which is not too oily and it goes well with the fragrance and smooth red bean paste.

Savour Din Tai Fung's Delicious yet Healthy Classics Plus Complimentary Famous Amos Christmas Cookies Gift Set While Stocks Last

As year-end festive season approaching, Din Tai Fung is also one of the favourite dining place for family gathering or celebratory meal. And from 01 November to 31 December 2012, Din Tai Fung diners will receive an exclusive complimentary box of Famous Amos Chocolate Chip Cookies (150g) with a minimum spending of S$98.00, or S$88.00 for Citibank Cardmembers.

This redeemable Famous Amos Cookies come in two different festive packaging such as the "Red Pyramid Gift Box" (shown on the 1st photo) which secured with a golden ribbon (worth S$10.00, while stocks last). Alternatively there is also another endearing square "Bear Tin"(above, worth S$11.50) which would be available only after the red pyramid gift box is fully redeemed.

Beside the cookies promotion, there are about 30% of Din Tai Fung dishes being certified as ‘Healthier Choices’ by the Health Promotion Board. So below are some of the dishes that I would like to share with you from their Healthy Signature Classics which our family love.

First on the list is definitely they well-known Steamed Pork Dumplings which is also known as Xiao Long Bao - 小笼包  (S$6.80 for 6 pieces / S$9.50 for 10 pieces). As we all know their Xiao long Bao is made with flavoursome minced pork which wrapped in delicate dough skin with at least 18 exquisite folds. I love the bites with each mouthful of juicy meat filling and melt-in-your-mouth skin.

Next as a soup lover, their new Truffle Chicken Soup (S$19.80 per serving) taste awesome with aroma of the truffles which is strong but not overpowering making it a bonus point to enhance the taste of the chicken broth. This new dish is available in a limited quantity per day at Din Tai Fung outlets such as Marina Bay Sands, Paragon, 112 Katong and Resorts World Sentosa.

Lastly, if you love the combination of beef and noodles I am assure you would like this Special Braised Beef Noodle Soup With Beef Brisket (S$11.00 per serving). The meat used is of the less fatty portion of the beef and it is also prepared by steaming to retain the flavours of the dish which makes it a healthier choice. I also love the broth which is prepared using fresh tomatoes instead of canned tomato puree which makes it taste better in both flavour and taste.

Crystal Jade Jiang Nan @ Vivo City

Recently Crystal Jade Jiang Nan (翡翠江南) has returned as a casual eatery in VivoCity (facing Tung Lok Signatures - 同乐经典) at Level 1, #01-52 featuring simple Shanghai, Sichuan, Wu Xi and Guangdong dishes such as homemade noodles, xiao long bao and etc.

And since Aunt's Birthday is approaching in mid-June, I suggest to have an early celebration for her over at Crystal Jade Jiang Nan as well to try out their new menu.


APPETIZERS
餐前小吃


For appetizers Mum and Aunty both suggested to order this "Deep-fried White Bait "Wu Xi" Style (无锡小鱼儿)" where the crispy white baits are tossed with fried garlic, salt and pepper together with a layer of caramelized sugar coating. Indeed this is a wonderful snack to start off while waiting for the main dish to be served.

For something adventure, I decided to try their "Marinated Pig’s Ear with Cucumber (湘江红油顺风)" which is a common appetizer in Zhejiang. These slices of crunchy pig’s ears are spiced with chilli oil, together with fresh cucumbers and sesame oil which helps to further enhance its flavour and texture.
Price: S$8.50/plate (small)

Just a note this "Steamed Beancurd with Egg Yolk, French Bean, Carrot, Black Fungus Served in a Cup (五彩拌豆腐)" is kind of a cold appetizer which is tasteless on it's own. So in order to flavour this dish, you have to adjust the taste using the provided condiments such as chilli oil, shallot oil, extra virgin olive oil and black vinegar.

As you can see from the above, it is such a vibrant appetizer with tofu, egg yolk, carrots and etc added to achieve the colour, fibre and nutrition. Although I have tried to add a bit here and there of the provided condiments but we still find this appetizer not very suitable for my liking but mum said it taste great together with the Deep-fried White Bait.

MAIN DISH

All along, the traditional Xiao Long Bao from Crystal Jade taste quiet decent with it's juicy filling of minced pork and soft dumpling skin so without hesitate I decided to order their new "Crystal Jade Multi-flavoured Xiao Long Bao (翡翠水晶八式小笼包)" for Aunt's Birthday to create some atmosphere.

Each tray comes with Crystal Jade’s Original Xiao Long Bao, Prawn Xiao Long Bao, Vegetable And Dried Beancurd Xiao Long Bao, Spicy Beef and Spicy Chicken Xiao Long Bao for an authentic Sichuan experience or western flavour such as Foie Gras, Cheese and Black Truffle Xiao Long Bao. To start with try those with a lighter taste(original) before moving on to the stronger flavour such as spicy beef and remember to eat them immediately or else the outer skin will be harden.
Price: S$14.50/serving tray

Another "must try" dish is their "La Mian with Spicy Chicken, Preserved Egg And Cucumber in “Sichuan” Style (重庆口水鸡拉面)" where the springy handmade noodle is served together with cold spicy chicken which makes it a refreshing dish for a change.

Although the "ma la" spicy sauce was a bit too strong(spicy) rather than numbing(ma la) to our taste but overall it still blends well with the cold noodles and tender chicken that leaves us crave for more helpings.

Since their "Not Fried Rice (不是炒饭)" is sold out by the time we arrived (around 1.00pm), we have to sort for another alternative. So from the service staff recommendation, we ordered the "Fried Five Grain Rice With Anchovies" which served in a Korean style stone pot.

The 4 of us simple love this fried rice which is full of nutritious and vibrant colours from the ingredients used such as brown rice, preserved pickles, pumpkin seeds, pine nuts, sweetcorn kernel and etc served together with some crispy anchovies on top.

BEVERAGE AND DESSERT

We are amazed by the presentation of this "Hong Kong Style Cold Milk Tea" as it is served in a tall glass flask together with some dry ice flowing from the center of the flask. The overall taste of the milk tea is quiet smooth and fragrant but it could be better if it slightly colder.

To end the lunch, we ordered 3 different types of dessert such as "Pumpkin Cake with Red Bean Paste And Salted Egg Yolk (南瓜饼)" (i made something similar before, HERE) and "Japanese Glutinous Rice Dumpling with Fruit And Cream (白雪红梅)". So if you can't decide on which one to choice, you can order what I did with the combination plate of 2 items each.

They have a few choices on their shaved ice dessert but Aunt prefer this "Green Tea Snow Ice" with toppings such as colourful jelly, kidney beans and etc.

At the end of our meal, we are given a complimentary voucher of "8 pieces of Original Xiao Long Bao" for next return visit. (voucher is given with purchase from any basket of Crystal Jade Xiao Long Bao). Shall return again to try their "Not Fried Rice (不是炒饭)" since we didn't get to try it this round plus to enjoy our complimentary Xiao Long Bao.

[Value Set Lunch] Nanxiang Steamed Bao Restaurant

Last week I went down to Nanxiang flagship outlet at Plaza Singapura to collect my dinning voucher which I have won from on one of their Facebook event. To be honest, I have not try any items from their 4 outlets even though I am very interested to find out more about their King Size Nanxiang Steamed Soup Bun(蟹黄灌汤包) which comes with a straw for customer to sip the soup broth.

While collecting my voucher, we were attracted to their Set Lunch promotion menu which comes in two different different category such as Signature Value Set Lunch (S$27.60 for 2 pax) and Superior Value Set Lunch (S$35.60 for 2 pax).

Both of their value set lunch categories have similar items except on the "Steamed Bun and Home Made Style Dish". So after comparing both the menu, we decided to have the Superior Value Set Lunch because I wanted to try their "Salted Egg Yolk Prawns" and "Spicy Crabmeat and Pork Filling Steamed Bun".

Out of the 6 items from the "Shanghai Cold Dish" column we decided to try their recommending "Nanxiang Drunken Chicken(南翔糟鸡)" and leave the "Chilled Tofu with Century Egg" on our next visit. Their Drunken is lightly infused with Chinese wine fragrance that does not overpower the taste of the chilled chicken.

Making a decision between crab roe and crabmeat could be something difficult especially for those who loves to eat crab. Here at their Superior Steamed Bun column, you can either take up the non-spicy "Crab Roe and Pork Filling Steamed Bun(蟹黄小笼)" or be more adventure like us and try their "Spicy Crabmeat And Pork Filling Steamed Bun"(香辣蟹肉小笼).

At first we thought that their "spicy crabmeat" might be something similar to Din Tai Fung's Chili Crab Xiao Bao Long but when we get to taste it, it was totally different. This one at Nanxiang, the soup broth is rather clear with hint of spiciness from the spices used which makes it taste like a bit overdo for the combination.

For Dim Sum pastries usually I would prefer something sweet rather than savoury. But for this round I am attracted to this "Salt and Pepper Cashew Nut Pastry(椒盐腰果酥)" which I am curious about it's taste. Overall this little treat taste great with bites of chopped cashew nut that mixed with their tasty seasoning which wrapped in layers of crispy dough pastry.

This "Salted Egg Yolk Prawn(黄金虾仁)" is the main reason why I choose their Superior Value Set Lunch(S$35.60++ for 2 pax) rather then the Signature Set (S$27.60++ for 2 pax). Each prawn is shelled for your convenient, coated with flour batter, deep fried till golden and crispy before coating with a luxury layer of salted egg yolk sauce. Thumb up for this!

To complete the value set, you can choose any 2 items from the Fried Rice/Noodles category. From the menu, we picked this "Shanghai Vegetable Rice(上海菜饭)" which might look plain but the taste is definitely better than some other fried rice that I recent tried in another Hong Kong cafe.

Other than Fried Rice we also try one of their noodle item which is the "Nanxiang Dumplings with Noodle Soup(南翔小馄饨汤面)". Sad to say although the texture of the noodle is springy and good but their dumplings were just average in taste, nothing fancy.

Other then those dishes from the Superior Set Lunch above, we also order this Must Try "King Size Nanxiang Steamed Soup Bun(蟹黄灌汤包)" it will be serve with a straw to drink the soup broth.

The rich broth is being concealed in the thick layer of bun skin together with generous amount of crabmeat and roes. Each sip leaves you with that warm and sweet taste release from the ingredients used, but I find the taste a bit too strong to my liking.  And for your information those bun skin is rather hard for consuming as it is especially made to hold the soup broth but by all means you can still tear it open to enjoy the remaining pieces of crabmeat and roe after you have done with the soup.
