Quick & Easy Banana Cake


Although I don't really like banana as a fruit on its own but I am a big fans of Banana Cake and Muffin. I love the sweetness and wonderful aroma while the cake is still baking in the oven. Here we have another quick recipe from M4M website which I am sure your loved ones will come back for more after the first serving.


Ingredients:
125g Butter
125g Sugar
1 Cup Flour
1 Tablespoon Baking Powder
2 Large Eggs
40ml Milk
1 Teaspoon Vanilla Extract
2 Large Mashed Bananas
1 Extra Banana, for topping

Method:
1. Preheat oven to 180 degree and prepare two 7" x 3.5" disposal loaf tray.
2. Cream butter and sugar until light and creamy.
3. Add in eggs (one at a time) and beat until well combined.
4. Next stir in milk, mashed bananas & vanilla extract..
5. Lastly fold in sieved flour & baking powder.
6. Mix well and pour into the prepared tin and bake for 30 - 40 minutes or until a skewer inserted in the centre and comes out clean.

Notes: You must used very ripe banana to achieve a better taste and texture.

    Need to consult you on oven setting for baking of cakes. Must the upper heating element be on when baking any cakes or just on the lower heating element will do. When then will the oven upper heating element be on based on your expertise in cake and cookies baking. Can kindly share with me as this is my first time trying to bake a cake and when I tried using your receipe to bake, my cake do not rise. Pls advise. Tks.

    1st thank for dropping by and also trying out this banana cake recipe. Actually i am not any expert in baking yet and i am still learning... :)

    OK.. as far as i know, usually baking require both upper and lower heat for both cookie and cake. But the normall, we use upper heat to do grilling . And certain oven have function on cookie, cake and etc so you have to check on yr oven menu.

    From the recipe given, you have to used 1 tablespoon of baking powder which is already sufficient to make the cake rise, so i am not sure why yours doesn't so the reason might due to the whisking of butter and egg or your setting of oven temperature. HTH :)

    Need your advise.. Is 1 cup of flour = 240g? Today I've baked banana cake but when I cut the cake, it break easily and a bit of dry. Pls advise... thank you!

    Thanks for your compliments :)
    According to the conversion. 1 cup of plain flour is around 125g. I am not sure where you find 240g on... but then as for 1 cup of sugar = 225g. If your cake tends to break or dry then it might due to overbaked or the amt of liquid in the batter. HTH :)
