Chocolate Banana Kugelhop vs Wholemeal Apple Tea Cake
For the month of May, our baking collaboration with Bake King features two healthy tea cake recipes such as Chocolate Banana Kugelhop and Wholemeal Apple Tea Cake. These cakes are made with less sugar; without butter, oil or eggs which are great for those who are concern with their waistline or carbs intake. And most important these cakes are very easy to prepare and they are naturally sweeten using real fruits which are added into the cake.



CHOCOLATE BANANA KUGELHOP


Chocolate Banana Kugelhop
Kugelhop / Kugelhopf / Gugelhupf are all referring to the same cake bake in kugelhopf (bundt) pan which consists of a soft yeast dough together with raisins, almonds, candied fruits or nuts. But for a simple version, yeast dough is omitted and I replace half of the plain flour used with almond meal (ground almond) for a nutty taste as well as mashed banana for the sweetness and liquid (that's why there is no oil and water required for this recipe).


(Yield: 6" cake | Preparation: 10 minutes | Baking: 45 minutes)

Ingredients:
  • 50g Bake King All-Purpose Plain Flour
  • 50g Bake King Almond Meal
  • ¼ Teaspoon Baking Powder
  • 55g Dark Chocolate Chips
  • 30g Caster Sugar
  • 2 Egg Yolks
  • 120g Banana, mashed
  • 1 Teaspoon Lemon Juice
  • Rind of 1 Lemon

  • Meringue:
  • 2 Egg Whites
  • 30g Caster Sugar

Chocolate Banana Kugelhop
咕咕洛芙蛋糕其实是德国的一种茶点蛋糕。它原本的做法有个发酵的面团连同葡萄干,杏仁,干果和坚果等一起混合。但在这个简单的食谱里我把酵母面团省略,用一半的杏仁粉取代面粉来达到豆香的味道。而且我还用香蕉泥取代油和水分及分蛋试做法让蛋糕变的更松软和有弹性。

巧克力巧克力咕咕洛芙蛋糕

材料:
50克面粉
50克杏仁粉
1/4茶匙泡打粉
55克黑巧克力豆
30克细砂糖
2个蛋黄
120克香蕉,压成泥状
1茶匙柠檬汁
1个柠檬皮

蛋白霜:
2个蛋白
30克细砂糖

Chocolate Banana Kugelhop
做法:
1.先将压成泥的香蕉和1茶匙的柠檬汁一起拌均匀,放一旁备用。

2.用打蛋器把蛋黄,柠檬皮和细砂糖一起用中速度打发成缎带状(约5分钟)。

3.接着将蛋白从冰箱取出,用中速度打15秒再分然后分3次加入细砂糖继续打到蛋白呈现三角形在搅拌棒上。

4.接着把一半过筛后的面粉混合(面粉,杏仁粉和泡打粉)加入蛋黄糊里用刮刀轻柔拌匀,再加入一半的蛋白霜拌匀。

5.最后重复面粉和蛋白霜的序列,拌入香蕉泥搅拌均匀即可。

6.把完成的面湖倒入预先涂抹油的咕咕洛芙模内,放进180摄氏度的烤箱烤45 -50 分钟

7. 烤好后,整个蛋糕连同模一起放在冷却架上10分钟等稍微降温后才脱模。



WHOLEMEAL APPLE TEA CAKE


Wholemeal Apple Tea Cake
Next we have another healthy Wholemeal Apple Tea Cake which contains NO "butter, egg and sugar" because basically we swap butter with grape seed oil and honey for sugar. But in order to get a caramelized texture for the top, I did sprinkler some cinnamon sugar on it which is optional and you could easily replace that by using rolled oats or almond flakes for that crunchy top too. 


(Yield: 1 medium loaf | Preparation: 10 minutes | Cooking: 30 minutes)

Ingredients:
  • 125g Wholemeal Flour
  • ¾ Teaspoon Baking Powder
  • 80ml Grape Seeds/Corn Oil
  • 50g Honey
  • ¼ Teaspoon Salt

  • Apple Filling:
  • 1 Medium Apple (200g), thinly sliced
  • 1 Tablespoon Golden Raisin
  • 1 Tablespoon Lemon Juice
  • ¼ Teaspoon Cinnamon Powder
  • 1 Tablespoon Brown Sugar

Wholemeal Apple Tea Cake
全麦苹果蛋糕是个非常健康的的选择,因为它没有用牛油,鸡蛋和糖做为材料。基本上我们是用葡萄籽油来代替牛油,蜂蜜取代糖的甜但为了让蛋糕上层有焦糖的效果我在上面撒了些肉桂糖。不过这也能用燕麦片或杏仁片来取代肉桂糖达到脆香的效果。

全麦苹果蛋糕

材料:
125克全麦面粉 (Wholemeal Flour)
¾茶匙泡打粉 (Baking Powder)
80毫升葡萄籽/玉米油
50克蜂蜜
¼茶匙盐

苹果馅:
1个苹果(200克),切成小薄片
1汤匙葡萄干
1汤匙柠檬汁
1/4茶匙肉桂粉 (Cinnamon Powder)
1汤匙红糖 (Brown Sugar)

做法:
1. 用一个小锅放入苹果片,葡萄干,柠檬汁,红糖和肉桂粉以中火煮约5分至到苹果微软。离火,放一旁冷却备用。

2. 在搅拌碗里,用打蛋器拌均匀油,蜂蜜和盐,然后再拌入筛过的面粉和泡打粉。

3. 最后加入苹果馅,轻柔搅拌拌然后倒入涂抹油的烘盘里。

4. 放进预热160摄氏度的烤箱烤30分钟或直蛋糕表面呈现金黄色即可。

提示:
你也可在烘烤前洒一些额外的肉桂糖粉在蛋糕面糊上让它有焦糖效果的味道与口感。
