Asian-style Chow Mein (Fried Egg Noodles - 干炒鸡蛋面)

Asian-style Chow Mein
Today post is an impromptu recipe on our dinner which we all loves. And I am sure even for those of you who are in overseas countries like United States, Canada or Australia this Asia Chow Mein is something that you are familiar with from any of their Chinese dine-in or takeaway restaurants.

Between below is our version of Asian-style Chow Mein (fried egg noodle - 鸡蛋面) using ingredients such as BBQ pork (char siew), fishcake, veggies and egg. The egg chow mein comes in either fresh or dry packaging and you can easily find it in local supermarket. But sometime for convenience purpose,  instant noodles (noodles itself without any of the seasonings) can also be used as a replacement too.

Asian-style Chow Mein
Basically there are more than one way to prepare this noodle and the recipe shown below is just one of the way adapted by our family so do feel free to change it according to your preference to prefect the end result. Likewise you can also inter-change the ingredients according to what is available at your end such as swapping BBQ pork to chicken/beef strips, green vegetables so sweet peas or baby corn and etc.


(Yield: 2-3  | Preparation: 10 minutes  |  Cooking: 10 minutes)

Ingredients:
2 Pieces of Dried Egg Noodles (鸡蛋面)
250g Green Vegetables, cut into sections
150g BBQ Pork (char siew - 叉烧), diced
1 Piece of Fish Cake (鱼饼), cut into strips
1 Large Egg
5 Fresh Shittake Mushroom, sliced
1 Medium Brown Onion, halved and thinly sliced
3 Cloves Garlic, minced
Some Fried Shallot

Seasonings:
1 Teaspoon Curry Powder
1 Tablespoon Fish Sauce / Light Soy Sauce
Freshly Ground Pepper
50ml Hot Water

Method:
1. Blanched egg noodle in boiling water for about 1 minutes, remove and rinse with cold water and drain well. Set aside.

2. Swirl 1 tablespoon of cooking oil in frying pan; place BBQ pork, fishcake, mushroom and onion separately around the pan and sauté till fragrant.

3. Next move all the ingredients to the side of the pan (or you can remove them on plate first), add ½ tablespoon of oil and sauté garlic till slightly brown, add in vegetables and cook till slight soften.

4. Stir in prepared noodles; give it a few good stir to combine with the ingredients. Make a space in the centre of the noodles, crack in egg (wait for 10 seconds) then give it a few stir to combine the mixture.

5. Season with seasoning to taste (alternatively you can add in 1 tablespoon oyster sauce mix with 50ml hot water to replace the above seasonings) and serve immediately.

Tips:
- You can use any type of green vegetables such as choy sum, cabbage, napa cabbage and etc.

- Shimeiji brown can be used to replace shiitake mushroom too.

- Chicken Breast or Beef (cut into thin strips) can be used to replace BBQ pork.

干炒鸡蛋面

材料:
2片鸡蛋面
250克蔬菜,切成段
150克叉烧,切丁
1个鱼饼,切成条状
1个大鸡蛋
5朵花菇,切片
1个棕色洋葱,切成薄片
3瓣大蒜,切碎
一些炸葱油

调味料:
1茶匙咖喱粉
1汤匙鱼露/生抽
胡椒粉
50毫升热水

做法:
1.首先准备好所有的食材备用。接着水开后把鸡蛋面放进锅里煮大约1分钟然后捞出沥干水份。(煮的时间可按面的包装说明以免煮的过软不好炒

2. 锅烧热后倒入油,依照次序把叉烧,鱼饼,花菇和洋葱用小火炒香(约不到两分钟)。

3. 之后把炒好的材料推到锅的一旁,放少许油爆香蒜后才加入青菜继续炒到菜稍微变软。

4. 把预先准备好的面倒进锅里用筷子翻炒均匀,最后加鸡蛋再炒几次并放调味料即可完成。

提示:
- 您可以使用任何自己喜爱的绿色蔬菜如菜心,白菜,大白菜等的。

- 花菇也可以用其他的菇类代替。

- 鸡胸揉或牛肉(切成细条)也可以用来代替叉烧。
