Betty Crocker - Our Favourite Cake & Cookie Mixes

Think about it this is the 11th Mother's Day that I am celebrating with the family and this year my boy gave me a special handmade gift; Assorted Chocolate Chip Cookies which he made solely on his own. And to spread the love for this special occasion, he even packed the cookies into gift bags for his granny and grandma as well my bestie whom is also his schoolmate mum.

Betty Crocker is one of the well-known brands under General Mills which recognised as the biggest cake mix brands in the world. They have a wide range of fuss-free and easy to use cake and cookie mixes that even young kids can bake something wholesome just by adding minimal ingredients such as butter and egg.


HOMEMADE CHOCOLATE CHIP COOKIES
(using Betty Crocker Cookie Mix)


[Betty Crocker] Homemade Chocolate Chip Cookies
For the past few years, my boy would prepare beautiful Mother's Day card that he drew himself together with bouquet of flower which he bought from the school bookshop. But this year since he saw that I have some Betty Crocker mixes at home, he decided to make Chocolate Chip Cookies for me instead. And since the cookie mix is pretty easy to handle with just addition of soften butter and egg to form a dough, I agree to let him handle this baking project on his own while I just helping him with the hot oven.

[Betty Crocker] Ingredients for chocolate chip cookies

(Yield: 50; 1.5 inch cookies | Preparation: 10 minutes | Baking: 15 minutes)

Ingredients:
1 Packet Betty Crocker Chocolate Chip Cookie Mix
125g Unsalted Butter, soften
1 Egg

Optional Toppings:
1.5 Tablespoons Rolled Oats
1.5 Tablespoons Dried Cranberries, roughly chopped

Method:
1. Preheat oven to 180°C (356°F). Line baking tray with parchment paper and set aside.

Steps on making chocolate chip cookies.
2. Empty Cookie Mix into a medium mixing bowl, stir in softened butter follow by egg until it forms a soft dough with no trace of flour.

3. Using two teaspoons or an ice-cream scoop, drop dough by rounded teaspoonfuls 2" apart on prepared tray.

Getting ready to go into the oven.
4. Bake in preheated oven (middle rack) for 12 - 15 minutes until edges are light golden brown (baked 1-2 minutes longer for a crispier texture).

5. Remove baking tray from oven, stand cookie for 1 minute before transferring to cooling rack.

Tip:
To make assorted chocolate chip cookies:
- you can divide the dough into a few portions (we divide ours into 3 portions) before stirring in your preference ingredients such as rolled oats, walnuts, raisin, cranberry and etc.

This hearty Chocolate Chip Cookie with Rolled Oat is one of my mum's favourite to go with her usual afternoon tea. On a side note, it has a crisp outside and yet with a slightly chewy texture when bite.

CHOCOLATE FUDGE BROWNIE
(using Betty Crocker Brownie Mix)


[Betty Crocker] Chocolate Fudge Brownie
I am sure everyone has a favourite brownie recipe that you often use. For me I prefer a rich and fudgy brownie with moist and chocolatey interior where I can eat it warm on its own with a glass of cold milk. Apart from the boy’s handmade cookies I also made a Chocolate Fudge Brownie as an early Mother's Day treat for my mum and mother-in-law using Betty Crocker fudge brownie mix plus a few walnuts to decorate the top.

Overall this brownie mix yield pretty good end result which was well received by everyone in the family. Beside that it is also a fool proof recipe for beginner to build up their confident in baking and at the same time enjoy a good quality brownie within an hour or less including preparation and baking time.

[Betty Crocker] Ingredients for making Chocolate Fudge Brownie

(Yield: 8" Round Tin | Preparation: 5 minutes | Baking: 50 minutes)

Ingredients:
1 Packet Betty Crocker Fudge Brownie Mix
1/4 Cup (60ml) Water
2/3 Cup (160ml) Grapeseed/Vegetable Oil
2 Eggs (55g each)
8 Pieces Walnuts, optional

Steps on making chocolate fudge brownie.
Method:
1. Preheat oven to 180°C (356°F). Grease a 8" round baking tin and set aside.

2. Empty brownie mix into a medium mixing bowl, with a spatula (or metal whisk) stir in water, oil and eggs until combined.

3. Pour batter into prepared tin and top with walnuts if using.

4. Bake in preheated oven for 50 minutes or until toothpick inserted into the centre of the cake and comes out almost clean (a bit of moist crumbs).

5. Remove from oven, cool brownie in pan on cooling rack before serving it warm on its own or with a scoop of vanilla ice-cream.

Tip:
~ To cut warm brownies easily, use a plastic knife and cut in short sawing motion.


Chocolate Fudge Brownie
As a mum who loves to bake, I always look forward to our usual weekend baking project where the boy and I get together to make some cookies, muffin, cake or bread for our weekly breakfast or tea-time supplies. Sometimes for a quick and easy snack or when my boy's classmates come over to do school work, I will whip up quick bites from our trustworthy Betty Crocker range of mixes and one of our all-time favourite is chocolate chips cookie.
