[recipe] Chocolate Madeleines - 巧克力玛德琳

Madeleines (玛德琳)are a small light French sponge cake that are baked in the shape of a shell that exist in a few sizes and design. The key to determine the success of a Madeleine cake is its high "belly" which similar to the "feet" of a Maccaron.

[Fall Recipes] Pumpkin Madeleine - 南瓜玛德琳蛋糕

This week we will be sharing another fall related bake (more recipes here) using pumpkin to make Pumpkin Madeleine which is a fusion recipe between American and French. Since my family prefer lighter version without adding of too much of those usual spices like nutmeg, pumpkin pie spice, all spice and etc; I only toss in a decent amount of cinnamon powder to lift up the taste.

Chocolate Madeleines

Out of all bread and parties available in the bakery shops, my boy has this passion towards Chocolate Madeleine. So whenever we are near ION, Orchard he would definitely get some Madeleine from “Bread Society”. He loves the moist and chocolatey texture of the cake which he could have at least 3 for his tea-snack.

And recently while arranging the bookshelves, I happened to come across this wonderful recipe which I jotted down from one of Donna Hay’s cookbook some years back. With that I decided to try making a batch of these chocolate madeleine for my boy.

Matcha Madeleines with Azuki Bean

Madeleines are very small traditional sponge cakes with a distinctive shell-like shape which traditional recipes always include ground almonds and lemon zest. But for the Madeleines in this post, I did not included the the two ingredients mentioned by rather I add in some Matcha - 抹茶(Green Tea) powder and cooked Azuki Bean - 紅豆 for a Japanese snack fusion.

Chocolate Chip Madeleines

After about almost a year, finally I get the chance to use my "Scallop Shell Madeleine Tin" which one of my blog friend bought it for me from Japan during her visit to Singapore. With that I replicated these Chocolate Madeleines which is one of my son's favourite tea-snack .
