[Recipes] Quick Lunch Bentos For Kids

It's past mid-week and I am sure everyone is looking forward to weekend. In this post, I will be sharing 5 different quick lunch bento (with two recipes) ideas which you can prepare for your kids or yourself in a way too. I am always delighted to create my bento with "colourful" items which brighten my day or for the one who eats it. Although I might not be a skillful bento maker like some of those experts who makes really good character (charaben) bento (example, Samantha Lee) but in a way I am happy with what I can do for my boy.

And I am sure you can make simple bento too with a mixture of bread/rice, meat and some sides with fried stuffs, fresh fruits and vegetables I am sure you can create something interesting out from the box.


SANDWICH SUSHI ROLL


Sandwich sushi roll can be a quick breakfast or tea snacks which you can prepare for your kids at anytime of the day. To make it more nutritious, wholemeal or mutli-grain  bread can be use to replace normal white bread together with addition of some lettuce and cucumber in it. And also you can choose fillings like egg, tuna or chicken mayonnaise depending on their preference.

(Serve: 1   | Preparation: 10 minutes | Cooking: 10 minutes)

Ingredients:
  • 1 Slice of Wholemeal Bread
  • 1 Slice of Sandwich Cheese
  • 1 Hard-boiled Egg
  • 1/2 - 1 Tablespoon Mayonnaise
  • Cucumber and Salad Green
  • Side Dishes For Bento

  • Bento Tools:
  • Bento Box
  • Side Dishes Food Casing
  • Food Cutters For Decorations
  • Cling Wrap
  • Food Tweezer and Small Scissor
  • Drinking Straw and Dried Spaghetti

Method:-
1. Place all side-dish in food casings and arrange them on one corner of the bento box.

2. Put bread on a sheet of cling wrap, using a rolling pin to flatten bread slightly then spread a tablespoon or more of egg mayonnaise on it leaving 2cm free along the other end of the edge.

3. Top with lettuce and cucumber strip then lift up the bread and place it on top of the "cheese stars" (cut out from sandwich cheese using heartshape food cutter).

4. Roll up to enclose filling then cut the sandwich into 4 rounds.

5. When done, arrange the rounds on the food case and you are ready to serve it with the sides.



PANDA ONIGIRI BENTO


Have you thought of making Onigiri (rice ball) using bread? With sandwich bread that can be easily get in all household, you can use it to  make cute animal onigiri like what shown above. Instead of Panda, you can shape and decorate it to look like dog, cat, pig and etc base on your creativity.

Below is a simple recipe and step-by-step photo guide on how to make the bread onigiri.


(Serve: 1   | Preparation: 15 minutes | Cooking: 10 minutes)

Ingredients:
  • 1 Slice of White Bread
  • 1 Slice of Sandwich Cheese
  • 1 Tablespoon Tuna Mixture
  • Seaweed Sheet
  • 2 Raisin/Blueberry for Panda Ear
  • Side Dishes For Bento

  • Bento Tools:
  • Bento Box
  • Side Dishes Food Casing
  • Food Cutters For Decorations
  • Cling Wrap
  • Food Tweezer and Small Scissor
  • Drinking Straw and Dried Spaghetti

Method:-
1. Place all side-dish in food casings and arrange them on one corner of the bento box.

2. Put bread on a sheet of cling wrap, using a rolling pin flatten the bread then cut a 2cm slit on each corner of the bread (refer to the step-by-step photo above).

3. Spoon 1 tablespoon of drained tuna and place it on the centre of the flatten bread (you can drizzle some mayonnaise on it).

4.Carefully hold the 4 corners of the bread together and with the help of the cling wrap, shape the bread into a panda face (oval).

5. When done, arrange the tuna bread on the food case and you can start to decorate the feature of the panda using cheese and seaweed sheet.

6. Lastly fix the panda ears using either raining or blueberry with the help of dried spaghetti stick.

Making your own bento like the above is  actually not as difficult as you think of. You can be creative to incorporate different side dishes/fruits which you prefer. Pick a meat or veggies to go with your sushi roll and at the same time add on some simple decoration to make it look more presentation. I hope this post can give you some inspiration to make a simple bento for your kid(s) this weekend to encourage and rewards them for coming CA2 exam. Father's Day Breakfast Bento With Lee Kum Kee Ketchup

With Father's Day just a few days around the corner, I would like to wish all Fathers out there a happy and blessed day with your family and loved ones. Although it's not quite popular for people in Asia to celebrate Father's Day instead of Mother's Day but I am sure the newest generations are more willing to whip up something for their dad.

Since we will be away for holidays during Father's Day, my boy and I managed to put up a quick and easy Father's Day Breakfast using tomato sauce as one of the main ingredients which we would like to share with you.


LEE KUM KEE NEW PRODUCTS


Before we start off with the recipe, just to share that this June, Lee Kum Kee has launched three new products in major supermarkets like Cold Storage and Giant and they are such as:-

Tomato Ketchup (S$1.25) which made from high quality tomatoes with no added preservatives or colouring.

Pure Sesame Oil (S$3.30) which is carefully processed to retain strong flavour of sesame seeds. This condiment is my great helper in my kitchen that enhance the flavour of our dishes with just a few dashes.

Chu Hou Paste (S$3.50) is made from soybeans, garlic, ginger and sesame seeds which is a convenient cooking sauce for braising, marinating or cooking meats and vegetables.


On top of the new products, Lee Kum Kee also printed some recipe cards which enable shoppers to pick up from the supermarkets to try out with the new range of products launched. Would share with you my favourite recipe using Chu Hou Paste (柱侯酱) to make the "Stewed Chicken" in upcoming post soon.


FATHER'S DAY BREAKFAST BENTO
(using Lee Kum Kee Ketchup)

(Serves: 1 | Preparation: 10 minutes | Cooking: 10 minutes)

Ingredients:
2 Slices of Sandwich Bread
2 - 3 Fresh Shittake Mushrooms, sliced
1/2 Cup of Mozzarella Cheese
4 Tablespoons Lee Kum Kee Ketchup
1 Egg
1 Tablespoon Fresh Milk / Pouring Cream
1 Small Tomato, diced
2 Mini Japanese Sausage
1 Slice of Sandwich Cheese
Some Steamed Corn Kernels
Some Cherry Tomato
Seasonal Fresh Fruit

Tools Needed:
Bento Box
Side Dishes Food Casing
Alphabet and Heart-shape Food Cutters
Food Tweezer
Bento Food Pick (optional)

Method:-
1. Using a 8cm wide heart-shaped food cutter, cutout two heart shapes from bread and lightly toast it in the oven toaster for 1 minute each side. Set aside.

2. Spread a layer of Lee Kum Kee Ketchup on the toasted bread, top it with some Mozzarella cheese and mushrooms.

3. Pop them back into the oven toaster and bake for 1 minute or till cheese melt.

4. While the bread is in the oven toaster, prepare the scramble egg by heating up a small frying pan with 1 teaspoon of oil/butter.

5. On low heat, add in the diced tomato and quick it a quick stir for 10 seconds before swirling in the egg mixture (beat egg with 1 milk/pouring cream) and cook till almost done.

6. Next adding in 1 tablespoons of Lee Kum Kee Ketchup and stir till the mixture is well-mixed. Remove and set aside.

7. Assemble the scramble egg and sausage into the bento box then start decorating the heart-shaped pizza toast with some lettering cutout from the sandwich cheese.

8. When done, arrange them nicely back into the prepared bento box and serve.


Actually there are many ways which you could incorporate Ketchup into your cooking instead of using it only as a dipping sauce. Quick Easter Bunny Bento

With Easter Sunday coming up this weekend, I prepared a quick Easter Pizza Bento for my boy as his breakfast.  Actually there are nothing complicated about this bento, what I did was transformed the pizza toast which I had made previously into something Easter themed with Bunny and Easter Egg.

After which just use your imagination to decorate the bunny as well as the oval shape so that it would resemble Easter egg design.

Homemade Pizza Using Perfect Italiano Cheese

March school holiday is going on this week so we have more rest and relax time to enjoy our breakfast and afternoon tea. And upon request from my kid, we have assorted pizza in different base such as "Thin or Thick Crust" using Pita Pocket, Wrap and normal sandwich bread.

And with a decent packet of Pizza or Mozzarella Cheese, you could also turn homemade pizza into something similar like restaurant serving which impressed your family or friends. Below we have 3 quick pizza ideas (with recipes) which I hope you would find it useful as a quick meal idea.

Rainbow Omelette using Happy Call Pan


Thinking of what to cook for this week or even tonight? What about this quick and easy "Rainbow Omelette" which consists of Eggs, Tomato, Enoki Mushroom, Carrot and Onion. Eggs are one of the nutritional ingredient which has 11 different vitamins and minerals, high quality protein, healthy fats (including omega-3) and important antioxidants. Other than their nutritional value, eggs are tasty, convenient and versatile to be use in creating a balance and healthy dish for the family.


RAINBOW OMELETTE
(using Happy Call Pan)


My little boy loves egg and in order to create more egg dishes and add in extra ingredients to make it more nutritious, I often cook this "rainbow omelette" with similar ingredients to make it a tasty and colourful dish. For us, we simply loves this dish which is vibrant in colours as well as the layers of texture and from the soft and silky egg to chewy enoki mushrooms.

This dish is done perfectly in less than 10 minutes using my beloved Happy Call Pan which cooks my daily dishes in a hassle free and efficient way. And I specially delicate this dish to Joyce, my best friend as she is a "super" fan of Egg and Mushrooms!


(Serves: 4 | Preparation: 5 minutes | Cooking: 5 minutes)

Ingredients:
3 Eggs, 55g each
1 Small Carrot, shredded
1 - 2 Tomato, seed removed and diced
1 Small Brown Onion, thinly sliced
2 Stalks Spring Onion, thinly sliced 1 Packet of Enoki Mushroom, trim off the root portion
1 Red Chilli(optional), thinly sliced

Method:-
1. Add 1 teaspoon of cooking oil in the Happy Call Pan(HCP), saute onion for about 1 minutes till sightly soften.

2. Toss in diced tomato and shredded carrot, cover the pan and cook for another 1 minute.

3. Meantime, whisk eggs together with enkoi mushrooms and 3/4 of the chopped spring onion till well mixed.

4. Open the HCP cover, evenly pour the egg mixture onto the onion mixture, swirl the pan so that all the egg mixture goes round the pan.

5. Cover, and cook for about 2 minutes on low heat till the omelette set, flip the pan over and cook for another 1 - 2 minutes till done.

6. Flip the pan over again. Using spatula divide the omeltte into portion and garnish with remaining spring onion, sliced chilli and serve immediately.

{Lunchbox} Easter Chicky Bento

Happy Easter Sunday! I hope you would like this Easter Bento post that I have prepared you. Since our family would be attending Sunday church service plus a house warming event, I won't have enough time to prepare something special for my boy on Easter, therefore I decided to make this Easter Chicky Bento for him yesterday.

For this bento I have used 3 cleaned empty egg shells to act as food containers instead of the usual bento paper/silicon case. And with these shells, I have created some Easter theme such as "3D Pumpkin Rice Chick", "Hard-boiled Egg Chick" and "Artificial Egg".
