Homemade Pizza Using Perfect Italiano Cheese

March school holiday is going on this week so we have more rest and relax time to enjoy our breakfast and afternoon tea. And upon request from my kid, we have assorted pizza in different base such as "Thin or Thick Crust" using Pita Pocket, Wrap and normal sandwich bread.

And with a decent packet of Pizza or Mozzarella Cheese, you could also turn homemade pizza into something similar like restaurant serving which impressed your family or friends. Below we have 3 quick pizza ideas (with recipes) which I hope you would find it useful as a quick meal idea.


HAM AND TOMATO PIZZA
(using wholemeal wrap and Perfect Italiano Grated Mozzarella)


If you love "Thin Crust" pizza, I am sure you would love this! Just pick up any flavour / brand of wrap, despite whether it is plain, wholemeal or etc. Most important tip is to pre-bake the wrap for a minute or two (on both side) to get it slightly crisp before spreading the sauce and add on the toppings. In this way the base will remain crispy instead of soggy after baked and makes it an addictive finger food.


(Serves: 2  | Preparation: 5 minutes | Cooking: 5 minutes)

Ingredients:
  • 1 Piece of Wholemeal Wrap
  • 30g Of Shaved Ham, roughly tear
  • 100g Perfect Italiano Mozzarella Grated
  • 2 Broccoli Florets, cut into smaller pieces
  • Some Cherry Tomato, halved
  • 1 - 2 Tablespoons of Tomato Base Pasta Sauce
  • Garnish with dried parsley, chilli flakes, grated Parmesan cheese

Method:-
1. Lightly baked the wrap on both side for about 2 - 3 minutes in an toaster oven (or pop it into a preheated 180 Degree Celsius oven) till slightly crisp.

2. Remove, spread a thin layer of tomato pasta sauce on the wrap. Top it with half the amount of the Mozzarella cheese.

3. Arrange shaved ham, broccoli and tomato on it then follow by another layer of Mozzarella cheese.

4. Pop the prepared pizza back into the toaster oven (or normal oven) and bake for another 5 minutes or till cheese melted and turn slightly golden brown in colour.

5. To serve, top with some garnishing of your choice and enjoy it while hot.



HAM AND MUSHROOM PIZZA TOAST
(using wholemeal bread and Perfect Italiano Grated Mozzarella)


For a quick breakfast idea, grab any type of sandwich bread you have at home. Spread it with some tomato base pasta sauce (or with any tomato or BBQ sauce that you have), add some Mozzarella cheese plus your favourite toppings (or anything you can find in your fridge) to create a delicious pizza toast like what we have done.  This recipe is very easy and it can be done within 5 - 10 minutes using whatever ingredients on hand to create a delicious pizza treat at anytime of the day.


(Serves: 2 | Preparation: 5 minutes | Cooking: 5 minutes)

Ingredients:
2 Slices of Wholemeal Bread
30g Of Shaved Ham, roughly tear
100g Perfect Italiano Mozzarella Grated
1 - 2 Brown Button Mushrooms, thinly sliced
1 - 2 Tablespoons of Tomato Base Pasta Sauce
Garnish with dried parsley, chilli flakes, grated Parmesan cheese

Method:-
1. Lightly toast the wholemeal bread on both side for about 1 - 2 minutes in an toaster oven (or pop it into a preheated 180 Degree Celsius oven) till slightly crisp.

2. Remove, spread a thin layer of tomato pasta sauce then top it evenly with half the amount of the Mozzarella cheese.

3. Arrange shaved ham and mushroom on it then follow by another layer of Mozzarella cheese.

4. Pop the prepared pizza back into the toaster oven (or normal oven) and bake for another 3 minutes or till cheese melted and turn slightly golden brown in colour.

5. To serve, top with some garnishing of your choice and enjoy it while hot.

ASSORTED PIZZA
(using pita pocket and Perfect Italiano Pizza Plus)


For a more satisfying treat that close to a "Thick Crust" pizza, you could get a packet of Pita Pocket which is available in the supermarket (bread section) that comes in either small or medium rounds. With that you could enjoy a mini pizza party for your family movie night using your favourite toppings like Hawaiian, Tuna, Seafood and etc.


(Serves: 4 | Preparation: 5 minutes | Cooking: 10 minutes)

Ingredients:
  • 4 Wholemeal Small Pita Pocket
  • 250g Perfect Italiano Pizza Plus Cheese
  • 1 Hardboiled Egg, halved
  • Some Tuna Mayo
  • 4 Fresh Prawns, Halved
  • Some Fresh Basil Leaves, thinly shredded
  • Some Cherry Tomato, halved
  • Some Ham And Capsicum, sliced
  • Some Fresh Pineapple, cubed
  • Some Tomato Base Pasta Sauce
  • Garnish with dried parsley, chilli flakes, grated Parmesan cheese

Method:-
1.Lightly toast the pita pocket on both side for about 1 - 2 minutes in an toaster oven (or pop it into a preheated 180 Degree Celsius oven) till slightly crisp.

2. Remove, spread a thin layer of tomato pasta sauce then top it evenly with half the amount of the Pizza Plus cheese.

3. Top with your desire ingredients and follow the similar steps base on the recipes shown above.


Lastly I hope with these 3 quick pizza recipes it would somehow or rather inspired you to prepare more homecook food for the family which I believe it is not as difficult as what you think. Grilled Salmon With Orange Marmalade

Chinese New Year (CNY) is less than a month away and I am sure everyone is busying with spring cleaning, planning New Year reunion dinner, gatherings as well as what to cook for the visiting guests and etc. Over the years, I have some collection of Chinese New Year recipes on dishes, desserts and bakes which you might be interested to take a look and hopefully it would help to spark up some inspirations for your CNY menu.


GRILLED SALMON WITH ORANGE MARMALADE
(using Frezfruta Orange Marmalade)


To shorten the cooking process of the usual CNY dishes like Braised Mushroom With Sea Cucumber, Fish Maw Soup, Braised Soy Duck, Chicken Curry and etc. Here I have a quick and healthy Grilled Salmon with Orange Marmalade that served with steamed vegetables which I think it would be great idea to add  into your New Year Menu.


(Serves: 2 | Preparation: 10 minutes | Cooking: 10 - 15 minutes)

Ingredients:
  • 2 Pieces of Salmon Fillet (200g each)
  • 3 Tablespoons Frezfruta Orange Marmalade
  • 1 Teaspoon Sesame Oil
  • 1 Tablespoon Light Soy Sauce
  • 1 Tablespoon Cooking Wine
  • 1/2 Tablespoon Freshly Grate Ginger
  • 2 Clove Garlic, lightly smashed
  • Extra 1/4 Cup Frezfruta Orange Marmalade
Sides:
Assorted Steamed Vegetables


Method:-
1. Check and remove all the bone from the salmon fillet using a tweezer.

2. Combine all marinade and marinate the salmon for 5 minutes.

3. Lightly grease a griddle pan, grill the salmon fillet with skin side down first for about 4 - 5 minutes each side over medium heat.

4. To make the marmalade sauce: remove the salmon from the pan, add in ¼ Cup Frezfruta Orange Marmalade to the marinade mixture and simmer till mixture comes to boil. Remove from heat.

5. To serve, top salmon fillets with Orange Marmalade Sauce and steamed vegetables as sides.


I choose salmon because I love the taste and texture when combined with the marinade especially the orange marmalade which helps to boost up it taste. But just remember not to over cooked the salmon or else the meat would be too dry.

Huiji Mui Fan

Mui Fan (烩饭) is one of my favourite childhood dish and even until now I still love this dish despite of whether homecook or store bought from the Cze Char stall(煮炒摊). You can easily create your own style of Mui Fan with different ingredients such as seafood, meat or vegetables. In this post, I would share with you a new version of my "herbal flavour" mui fan using Huiji Waist Tonic and Red Wine Lees.


HUIJI MUI FAN


With a twist and inspiration from my usual mui fan, I decided to come out with something herbal and nourishing for the family. Also mui fan can be consider as a quick one dish meal which consists of cooked rice, meat, vegetables, egg(optional) and gravy in a plate. I love this type of comfort dish which is so easy to prepare and with less washing up to do too.


(Serves: 2 | Preparation: 5 minutes | Cooking: 5 minutes)

Ingredients:
150g Pork Fillet, thinly sliced
60ml Huiji Waist Tonic
2 Serving Of Cooked Brown Rice
4 Slices Ginger, shredded
1 Stalk Spring Onion, cut into sections
2 Tablespoons of Hong Zao (red wine lees), optional
2 Tablespoons Sesame Oil
1 - 2 Eggs


Method:-
1. Preheat frying pan with 2 tablespoons of sesame oil, sauté ginger and spring onion till fragrant.

2. Stir in pork slices and cook 10 seconds, add in the red wine lees if using and continue to fry till meat is cooked.

3. Pour in 60ml Huiji Waist Tonic, crack in egg(s) and gently give the mixtures a few stirs. Simmer the mixture for 10 seconds.

4. Off the heat, season mixture with salt and pepper before spooning it on top of the cooked rice.

5. Garnish with some chopped spring onion, cut chilli and serve immediately.


As for this dish, try to use either pork or chicken fillet so that the meat can be easily cooked and remains tender when bite. And also for those who like pork liver, you can add in some together with the pork fillet to create a better flavour and texture for this dish.

Oatmeal Fish Porridge

If you have being following this blog, you can find another similar Savory Oatmeal Porridge which I had shared the recipe a few years back. I still remember that recipe was taught to me by my ex-boss wife who always include it in their breakfast menu. And since we can easily purchase either Instant/Quick Cook Oatmeal from leading supermarkets and they both works well on Sweet (recipe) and Savory (recipe) dishes, hence oatmeal became one of my favourite pantry ingredients.


OATMEAL FISH PORRIDGE


This Oatmeal Fish Porridge can act as a great idea for weekend brunch or you can even serve it for dinner too. The idea of using fish slices is because I wanted to create something similar to Fish Congee but with more nourishing ingredients like carrot, wolfberries, gingko nuts and egg. But then it is still up to individual to mix and match with the ingredients that you prefer.


(Serves: 2  | Preparation: 5 minutes | Cooking: 15 minutes)

Ingredients:
1/2 Cup of Quick Cook Oatmeal (Quaker brand)
750ml Chicken Broth
150g Mackerel Fish Slices
1 Egg, lightly beaten
2 Stalks Spring Onion, cut into sections
Some Diced Carrot
Some Gingko Nuts
Some Wolfberries
Some Chopped Spring Onion

Method:-
1. Lightly marinate fish slices with salt, pepper and sesame oil, cornflour and set aside.

2. Preheat a saucepan with some oil, lightly fry the diced carrot and spring onion till fragrant, add in soup broth and gingko nut, simmer over low heat for about 10 minutes until carrot is soften.

3. Next add in quick cook oatmeal and continue to simmer till almost done (if the mixture is too thick, add extra 150 - 200ml of hot water/soup broth to dilute), add in fish slices and wolfberries.

4. When fish is cooked through, switch off the heat, drizzle beaten egg and give it a quick stir.

5. Ladle oatmeal into serving bowls, top with some chopped spring onion and fried shallot, serve immediately.


I guess for a change, this is not a bad idea for rice replacement as it look and taste somehow or rather similar to congee. And if you prefer more dilute version, add in either more chicken broth or reduce the amount of oatmeal. For me, I prefer a sticky texture if I am looking for some comfort food during cold weather.
