Pumpkin Red Bean Balls vs Gula Melaka Steamed Cake with Sweet Potato

March is coming to the end and this month my baking project with Bake King features some quick and easy Asian tea snacks such as Pumpkin Red Bean Balls and Gula Melaka Steamed Cake with Sweet Potato. Pumpkin Red Bean Balls has a very soft texture when bite and it pairs well with the sweet red bean paste which makes it sort of like the Mochi (Japanese rice cake made of mochigome).

Pumpkin Red Bean Balls
The concept for this Pumpkin Red Bean Balls is quite similar to the Pumpkin Ondeh Ondeh recipe which I shared before years back. But this time instead of the usual grated gula melaka or dessicated coconut fillings, I decided to fill these soft and yummy pumpkin balls with red bean paste to give it a rather Japanese "mochi" taste.   And these pumpkin balls also remains soft even after half a day at room temperature.

南瓜皮材料::
250克蒸南瓜,压成泥状
100克水磨糯米粉
70克木薯粉
¼茶匙海盐
40毫升花生/玉米油
30克细砂糖

馅料:
240克豆沙馅

装饰:
250克新鲜椰丝
¼茶匙海盐
少许香兰叶

做法:
1.把椰丝和盐搅拌均匀,并然后在上面放些香兰叶再用中火蒸5分钟。取出放在一旁待用。

2. 接着把红豆馅揉成约10克重的小圆团备用。

3. 将所有南瓜皮的材料依次序(粉类,盐,南瓜泥和油)一起搅拌成南瓜面团(如果面团太湿可以加多-到两汤匙的糯米粉)。

4. 把拌好的面团均匀的分成15克重然后用来包预备好的豆沙馅。

5. 之后用一个小锅放入半锅水。当水开始煮沸时,小心的放进揉好的南瓜球用中火煮大约2分钟,直到它的颜色变成半透明而且稍微浮起水面。

6. 最后,捞起南瓜球并趁热让它粘上预备好的椰丝。

GULA MELAKA STEAMED CAKE WITH SWEET POTATO


Gula Melaka Steamed Cake with Sweet Potato
These Gula Melaka Steamed Cake with Sweet Potato is super easy to prepared even for breakfast or tea snack because all you need is to mix and stir everything in a mixing bowl. Spoon the batter into baking cups or ramekins then steamed them over high heat and you would be able to enjoy some lovely cakes in less than 30 minutes.

It is not necessary for you to get assorted sweet potato like what shown above but if possible remember to get some really good gula melaka in order to achieve better taste and fragrant. On top of that you can just used whatever toppings that are available in your pantry such as pumpkin cubes, roasted chestnut, sweet corn kernels and etc for replacement too.


(Make: 6 | Preparation: 10 minutes | Cooking: 15 minutes)
Ingredients:
200克自发面粉
100克马六甲椰糖 / 黑糖
40毫升椰奶
120毫升水
50克蕃薯,切丁

做法:
1. 把120毫升水和椰糖放入小锅煮到糖溶化,待用。

2. 将自发面粉连同椰奶和过筛糖浆一起搅拌均匀成面糊。

3. 接着把面糊倒入放在容器的小纸杯(约100毫升容量)上面撒些蕃薯丁,然后用大火蒸15分钟。
