Durian Sweetcorn Muffin - 榴莲玉米玛芬

I love corn muffin especially those served as sides in American restaurant that comes with bits of corn kernels in it because I simply adore its sweetness and sandy texture on each bites. So for this mentioned recipe, I turn my favourite ingredients; cornmeal, sweetcorn and durian into a sinful and yet delicious teatime snack which we go crazy with.

3 Recipes Using Avocado

Recently I am in love with two health-giving fruits which are Avocado and Lemon because I use them to prepare my daily "must have" beverages such as Avocado Milkshake/Smoothie and Honey Lemonade. With my new found love, I also decided to venture into more recipes by including them as one of the key ingredients. Therefore I hope the 3 avocado recipes (2 recipes using Philips Airfryer) shown below would be useful to add into your existing methods of consuming this super fruit.

Blueberry Lemon Streusel Muffins

I always wanted to try making this type of streusel muffins which I often come across in cafes like Starbucks, Paris Baguette and etc which cost around SG$4 each. And what attracts me most is that top layer of golden crispy buttery streusel topping which contrast well with the soft and moist exterior of the cake.

Moreover homemade muffins actually does not require much effort and time if you have all the ingredients ready in your pantry as what you have to do is just stir, mix and bake. So why not join us to bake a tray of this Blueberry Lemon Streusel Muffins for afternoon tea or breakfast which I bet you will love it just as much as we do.


BLUEBERRY LEMON STREUSEL MUFFINS


For this recipe is quite similar to the previous one that I did for the Chocolate Chip Muffins but instead I replace about half of the plain flour with organic wholemeal flour for a healthier version (if you could replace with all wholemeal flour will be better). On top of that if you prefer a stronger lemon fragrant, you can also add in 1 whole lemon zest instead of ½ into the cake batter.

Chocolate Chip Muffins - 巧克力豆松饼

Adding a handful of chocolate chips to the usual vanilla scented muffin batter always turn them into great tea snack. These moist and fluffy delicious muffins can be eaten either warm or at room temperature together with a glass of cold milk or tea. And beside the chocolate chips filling sometime we also love to sprinkle extra chocolate chips or nuts on top of the batter before sending them into the oven.

Banana And Espresso Walnut Muffins

Two weeks ago, I made some Banana And Espresso Walnut Muffins using Nigella Lawson’s Banana Muffin’s recipe whereby I added some extra walnuts and instant espresso coffee powder  to enhance the flavour. I always love Nigella’s recipe which is easy to follow and the ingredients used  are also easily found in our kitchen pantry. Moreover these muffins are so light and fluffy which makes them a great company for breakfast or afternoon snack together with smoothie or hot beverages.

Fruit And Muesli Muffins

Before this post, I have only seen and read "Muesli" in supermarkets and recipe books. It is only until I try out these wonderful "cereal" from VOGEL's which consists of uncooked rolled oats, real dried fruits and nuts that I totally fell in love with them. In fact I have replace my usual breakfast cornflakes to these yummy muesli for my milk, cooked oats, yoghurt and bakes.

Here I am sharing a 3 Steps:- Stir, Mix and Bake wholesome Fruit And Muesli Muffins recipe which you could bake anytime of the day and keep the extra in the freezer for up to 3 months. But if you love fruits and nuts, I promise these muffins would gone even without you notice them.

These Muesli are made mainly using ingredients such as grains, fruits, nuts and seeds from New Zealand which are free from artificial flavours or colours. VOGEL's mueslis combine the natural, less processed ingredients with those that pack essential healthy boosting components such as antioxidants, fibre, protein, vitamins and minerals.

Chicken And Mushroom Salad Cups using YIFON Bottled Mushrooms plus Recipe Booklets

From a glance at this photo does it reminds you on something similar to the "Nonya Kueh Pie Tee" which is usually filled with shredded turnips, carrot, hard boiled egg, chopped peanuts and etc. Here instead of  using the traditional Kueh Pie Tee shells, I replaced it with "Sui Gow Wrappers" that are baked in mini muffin tray to form a small shell cases.

With a twist from the traditional way of making Kueh Pie Tee, I used boiled shredded chicken breast meat with some YIFON bottled mushroom, tossed the mixtures together using some refreshing lime juice, cut chili and chopped peanuts.

Chocolate Banana Muffins

Last month I have made some “Banana & Oreo Muffin” where you can make use of those oreo cookies in a new way rather than dipping them in fresh milk for snack. With the same concept, I replace the oreo cookies with some cocoa powder and mini chocolate chips to create another lovely flavour for chocolate lovers.

As you can notice from most of my posts, I love to make muffins especially those mini or mouthful size type. I find making these makes it easier for my kid to have it as tea snack or sometime it can be also act as a lovely gift for friends too.

Lemon Butter Muffins

Recently my mum has such a great craving for Lemon Butter Cake that she kept reminding me for a suitable recipe where she can try making some to share with her friends. So from her requirements, I managed to come out with some Lemon Butter Muffins which are full of lemon fragrant, taste and sponge cake like texture.

Banana & Oreo Muffin

Muffin is common American term of bread that is baked in small portions. Somehow or rather it looks like cake or cupcake in shape but usually it is not as sweet as cupcakes and generally without any frosting.

Baking muffins is always an enjoyment time for me and my kid. Since it does not required much procedures I can always let him handle most of the task, which in a way helps to build up his self-confident too. And moreover I love that facial expression of him waiting patiently near the oven for the muffins to be ready.

Chocolate Overload

Talk about Chocolate both Reyon and me can't resists it. We have all kind of chocolate stuffs in the kitchen pantry and fridge, ranging from cookies to ice-cream and cakes.....So when I come across this recipe, I told myself that this is a must try list on our baking list. I show Rey the picture of this Chocolate muffin and at once he told me that he wants to make for me, Grandma and Grandaunt on Mother's Day.

So immediately after the washing up from our Salmon Bento lunch. We started our Mother's Day baking project. I help Reyon to measure all the ingredients and put them into separate bowl while he will follow my instructions to make the muffins. This as usual is suitable to be handle by kids as it require only, WHISK, STIR, POUR and BAKE. So do give your kids a chance to whisk up this simple and yet irresistible chocolate muffin.

So this is what we come out with after sourcing for all the ingredients we have in our kitchen pantry....... Finally we decided to make Blueberry Yoghurt & Jam Muffins for afternoon tea.

Mango Jam Cake

What about having some freshly baked Mango Jam Cake for Morning Tea using some Homemade Mango Jam and serve with a cup of tea. This little Mango gem is soft and cotton like for the cake texture, juice and fragrant for the mango jam and as well, topped with some almond flake which give it a nutty flavour when they combined together.

Corn Muffins

Blueberry Cream Cheese Muffins

Em.... After seeing Evan making all sorts of muffins, I also having this mood of making some with reyon. So this morning, we made this for our breakfast. These mini muffins include some cream cheese, blueberry jam as a stuffing inside. So you can taste some extra cheesy and it's moist in texture because of some extra jam fillings.

It's really very easy to prepare muffins, but for this cream cheese muffin you need to do abit more of the wash-up. This recipe stated below can make 12 mini size muffins.

Ingredients:
145g Self-Raising Flour, sifted
50g Caster Sugar
50g Butter, melted and cooled
85ml Fresh Milk
1 Egg, lightly whisked
1/2 Teaspoon Vanilla Essence
75g Fresh/Frozen Blueberries
30g Cream Cheese, cut into small cubes
Some Blueberry Jam

Methods:
1. Preheat the oven to 200 degree, grease mini muffin pan or use disposable muffin cups.
2. Combine flour and sugar in a bowl, make a well in the center.
3. Whisk butter, milk, egg and vanilla essence in a jar or bowl.
4. Pour butter mixture into flour mixture, add blueberries and gently fold until just combined.(Do not over-mixed and there should be no trace of any dried ingredients)
5. Half fill muffin holes with mixture, top with cream cheese, 1/2 teaspoon jam, cover with some batter about slightly more than 3/4 full.
6. Bake for about 20 minutes, remove from oven and let it rest on tray for 5 minutes.
7. Remove and serve warm. Posted by Picasa
